Chinese Chicken Crock Pot Recipes

With just 10-15 minutes in the morning, these recipes will give you a delicious healthy Chinese meal with little preparation right before dinner; just cook some instant rice, spoon and serve.

Cashew Chicken

Ingredients:

2 medium chopped onions

1 can drained mushrooms

1 can drained bamboo shoots

1 can drained sliced water chestnuts

2 pounds boneless skinless chicken breasts, cut into 1 inch cubes

1 ½ cups stir fry sauce

¼ tsp ground ginger

1- 16 ounce package frozen stir fry vegetables

1 cup cashews

Spray crock pot with non-stick cooking spray. Combine all ingredients except cashews in crock pot, stir well to mix. Cover and cook on low 7-8 hours or high 3-4 hours. Just before serving, stir in cashews. Serve over rice.

Sweet and Sour Chicken

Although you could use bottled sweet and sour sauce, I wanted to make it from scratch, and still found it easy!

Ingredients:

1 medium chopped onion

1 medium chopped green pepper

1 medium chopped red pepper

4 stalks chopped celery

2 pounds boneless skinless chicken breasts, cut into 1-inch cubes

1- 20 ounce can pineapple chunks

2 tbsp quick cooking tapioca

2 tbsp brown sugar

2 tbsp soy sauce

1 tsp ground ginger

2 cloves minced garlic

1 tbsp balsamic vinegar

½ cup water

2 tsp lemon juice

Spray crock pot with non-stick cooking spray. Place vegetables in crock pot, place cubed chicken on top. Pour pineapple chunks, with juice, over chicken. In a small bowl combine tapioca, brown sugar, soy sauce, ginger, garlic, vinegar, water and lemon juice. Pour into crock pot. Cover and cook on low 8 hours or high 4 hours. Serve over rice.

Crockpot Drinks - How To Make Them

You probably already know that you can make breakfast, lunch, dinner, side dishes, and desserts in a slow cooker but what about crockpot drink recipes? It is possible to make delicious beverages in your crockpot.

When you slow cook food the flavors really blend well together and the same can be said about drinks. You can make all kinds of beverages in your slow cooker from mulled wine to hot fruit punch recipes.

For this delicious drink, you will need to add a cup of light corn syrup, a cup of water and two bottles of dry red wine to the slow cooker. Something meaty like Cabernet Sauvignon would be good for this recipe.

You might like to garnish each glass or mug with a thin slice of orange. This is a great recipe if you are having an outdoor party and the evening is chilly. Your house will smell amazing if you make this crockpot drink recipe. The mulled cider is spiced with cloves, ginger, and cinnamon and you can add a shot of brandy to each serving mug before ladling in the cider if you want to give it more of a kick.

Put two quarts of apple cider, a pinch of ground ginger, an unpeeled orange and quarter of a cup of brown sugar in the slow cooker. Tie a teaspoon of cloves and two cinnamon sticks in a cheesecloth bag and add this. Cover the crockpot and cook for about three hours on low. Take the bag of spices out and serve the hot cider. This makes enough to serve about ten people.

Hot Spiced Apricot and Orange Drink

Add three cups of orange juice, a forty six ounce can of apricot nectar, two tablespoons of lemon juice and half a cup of brown sugar to your slow cooker. Tie two cloves and three sticks of cinnamon in a cheesecloth bag and add this. Cover and cook for four hours on low, then serve. This recipe serves eight people.

Warm Tomato Cocktail

This healthy savory drink recipe is easy to make and it is really warming. You need to put ten ounces of condensed beef broth, half a teaspoon of dried marjoram, a tablespoon of lemon juice and a forty six ounce can of vegetable juice cocktail in the slow cooker. Cover and cook for two and a half hours. This makes enough to serve eight people.

Crockpot Beef Stroganoff

Beef stroganoff is a Russian mixture of sauteed beef in a sour cream sauce. It dates back to the 1800s and is popular in many countries, including Australia, South Africa, Brazil, Lebanon, Iran, Europe and North America, although the exact ingredients tend to vary from place to place.

The name possibly came from a member of a big family, like Count Pavel Stroganov, a diplomat, or Alexander Grigorievich Stroganoff. The first known recipe for this dish involves lightly floured cubes of beef, bouillon, mustard, and sour cream.

There are no mushrooms or onions in the traditional dish and the beef is in cubes not strips. Tomato paste and onions feature in a 1912 version of stroganoff and this is served with potato straws, which are a traditional Russian side dish.

The recipe was popular in Chinese restaurants and hotels after Imperial Russia fell, before World War II. This recipe was introduced to the United States by Chinese and Russian immigrants, and also US servicemen in China. This is probably why beef stroganoff was so popular in the 1950s. Next, the recipe made its way to Hong Kong and from there to the UK, Australia and other countries.

Modern Stroganoff Recipes

The modern way to make this meal involves using strips of beef, as well as mushrooms, onion and a sour cream sauce. The dish is served with noodles or rice. Red wine features in some recipes and white wine in others. This recipe is found in Nordic countries and there is a dish called sausage stroganoff in Sweden, which is made using locally produced sausages. Beef stroganoff is also served there and this is a basic food service dish because it is easy to make lots of it at once.

Portuguese and Brazilians also enjoy this meal and heavy whipping cream is used there instead of sour cream. You can also get chicken stroganoff in Brazil, which is served with potato straws and white rice. It is also served sometimes as a topping for baked potatoes, on pizzas or as a crepe filling. There are actually fast food chains dedicated to this food in Brazilian shopping malls. There are a lot of variations and optional ingredients including ketchup, canned corn, wine and more.

The following recipe makes enough to serve four people and you can serve it hot over buttered noodles or fluffy white rice. This is so easy to make and the flavor is amazing.

What You Will Need:

1 1/2 lbs top round steak, in strips
1/4 cup wine
1 cube beef bouillon
1/2 chopped onion
3/4 cup sour cream
1/4 cup water
10 3/4 oz can condensed cream of mushroom soup
1 minced clove garlic
8 oz canned mushrooms
1 teaspoon Worcestershire sauce
1/2 cup chopped fresh parsley or 1/2 teaspoon dried parsley
1 tablespoon all purpose flour
Salt and black pepper

How To Make It:

Add the beef to the crockpot and season it with salt and pepper. Add the soup, mushrooms, onion, and bouillon. Mix the flour with the wine and add the resulting paste to the crockpot. Add the garlic, Worcestershire sauce, and water. Cook for seven or eight hours on low. Stir in the parsley and sour cream an hour before serving.

How to Make It

Add the rest of the potatoes followed by the remainder of the soup mixture spreading the ingredients evenly in the crockpot.

Buttermilk Ranch and Cheese Potatoes

What You Need

2 pounds small red potatoes, scrubbed and cut into quarters 8 ounce package cream cheese, softened 1 package buttermilk ranch dry salad dressing mix 10 ounces condensed cream of potato soup 8 ounces of the cheese of your choice

How to Make It

First, add the scrubbed and quartered pieces of potatoes to the crockpot. A 3 to 4 quart size crockpot should be large enough.

In a small mixing bowl, combine the cream cheese and the package of dry salad mix blending well together. Next, add the cream of potato soup to the cream cheese mixture and combine thoroughly. Pour the mixture over the potatoes and cover the crockpot.

Cook on the low setting for 5 to 6 hours or until all of the potatoes are tender.

Sprinkle the cheese on top of the potato dish and replace the lid for a few minutes until it melts. Stir before serving and enjoy. Biscuits, rolls, or homemade bread are perfect for eating with this dish.

Shredded Beef From My Crock-Pot to Yours

This is the easiest recipe ever and really quite versatile. Many of my simple recipes require a crock pot so make the investment now and you'll feel like you hired a personal chef. I love opening up my front door to the smell of a fresh cooked meal at the end of the day. This one takes less than 5 minutes before you head out in the morning and then a moment or two of shredding before serving.

My kids are picky eaters and they love this one. My husband is fine with left-overs but for those who aren't so lucky, the multiple uses for this meat will please even the biggest leftover snob!

Here's the recipe:

1 lb. stew beef (also fine with any kind of beef but the stew beef shreds easier)

1 can cream of celery (or really cream of anything!)

1 can crushed green chilis

(you can double or triple the recipe as long as it doesn't fill the crock pot. optimum is between 50-75% full)

Crock pot on high 6 - 8 hours (or more - just add some water to compensate for extra time). Shred apart with a couple forks.

TIP: you can even put the meat in the crock pot when it's frozen. Crock pots are just so darned accommodating to your circumstances!

Great on rice or noodles. I strongly suggest the new 90 minute rice from Uncle Bens. It's done in a flash and is perfectly sized for one dinner.

Also good on taco salad or in tacos. Make a double batch and freeze the rest for next time. Thaws perfectly.

This is a great recipe if you want to make stuffing for a crowd. Using the slow cooker is space saving and leaves your oven free for other dishes. This moist recipe is full-flavored and easy to prepare. You can use turkey broth instead of chicken broth if you want to. Use slightly stale bread cubes for the best result.

What You Will Need:

1 cup butter 1/4 cup parsley 2 cups chopped celery 2 cups chopped onions 1 teaspoon thyme 1 1/2 teaspoons sage 1 1/2 teaspoons salt 1 teaspoon poultry seasoning 12 oz sliced mushrooms 2 beaten eggs 4 1/2 cups chicken broth 13 cups bread cubes 1/2 teaspoon marjoram 1/2 teaspoon black pepper

How To Make It:

Melt the butter in a skillet, and then saute the mushrooms, celery, onions, and parsley. Put the bread cubes in a big bowl and spoon the sauteed vegetables over the top. Add the seasonings and toss the mixture well.

Pour in enough of the broth to make the mixture moist. You might have some left over. Add the eggs and mix again. Pack the mixture into the crockpot and cover it. Cook on high for forty five minutes, and then low for about six hours. This recipe makes enough to serve eight people.

Crock Pot Dessert

So you use your crock pot almost everyday to cook the family meal but have you ever tried making desserts with your crock pot? Most people think of meat and vegetable dishes when they think of crock pot cooking but the fact is this handy cooking gadget is also great for making a wide variety of delightful desserts.

If you've never tried making a dessert in your crock pot, here are a few easy recipes to get you started. These recipes require a 3 ½ qt. crock pot.

Crock Pot... Cheesecake?

First, you will need a cheesecake pan - a heat resistant pan that is oval or round and fits into your crock pot.

To Make the Crust:

Crumble graham crackers until you have 1 cup of graham cracker crumbs. You can do this by putting graham crackers into a sealable bag and pounding them with the side of a meat hammer, or by "smooshing" the crumbs with your fingers. Pour into the cheesecake pan with 2 T brown sugar and 3T melted butter. Stir and press the mixture onto the bottom and sides of the pan.

Using a hand mixer, mix together:

16 oz. of cream cheese (rectangular package) - Make sure the cream cheese is soft by leaving it out of the refrigerator for a while before using.
¾ C of sugar
2 large eggs (room temperature)
¼ C of heavy cream
1T flour


Pour into the crust.
Add ½ cup to 1 full cup of water into the bottom of the Crock Pot (what matters here is that the water does not come up over the edge of the cheesecake pan).
Place the pan (with the cheesecake mixture in it) into the Crock Pot.
Cover and cook for approximately 21/2 hours. Turn off the Crock Pot and let stand for one hour, then put the cheesecake into the refrigerator for an additional 2 hours before serving.

8 skinless chicken drumsticks 2 minced cloves garlic 1 tablespoon fresh ginger 1 chopped sweet onion 4 teaspoons curry powder 2 bell peppers, in 1 inch pieces 3 tablespoons chopped fresh cilantro 12 oz Yukon Gold potatoes, in 1 inch cubes 3/4 cup coconut milk 2 tablespoons tomato paste 1/4 teaspoon black pepper 1/2 teaspoon salt

How to make it:

Add the tomato paste, coconut milk, salt, pepper, ginger, and garlic to a crockpot, and then stir in the bell peppers, onion, and potatoes. Mix until well combined. Rub the curry powder over the chicken and arrange it on top of the vegetables in the crockpot.

Cover and cook for four to five hours on high or six to eight hours on low, or until the vegetables are tender and the chicken is cooked through. Sprinkled the chopped cilantro over before serving.

A Very Easy Slow Cooked Curry Recipes

There are only eight ingredients in the following recipe. Chicken is teamed with potatoes, onion, and orange juice and the seasoning consists of garlic, curry powder, salt and pepper. Do not be fooled by the few ingredients and ease of preparation because this is a really nice recipe.

What you will need:

4 boneless, skinless chicken breasts 3 teaspoons curry powder 1 quartered onion 1 minced clove garlic 1/4 teaspoon black pepper 1 teaspoon salt 2/3 cup orange juice 2 peeled, chopped sweet potatoes

How to make it:

Cut the chicken breasts in half, crosswise, so they are like cutlets; it is easier to do this when they are a bit frozen. Then slice them into strips and arrange them in the bottom of the crockpot. Add the onion and sweet potatoes.

Combine the remaining ingredients and pour the mixture over the chicken. Cook for five to six hours on low. Make some rice half an hour before the end of the cooking time. If you want to make coconut rice, you can replace half the rice-cooking water with coconut milk.

Crock Pot Cooking For Men

Men are notorious for not cooking. First, they have mom doing all the cooking. Then, if they dare live alone for a while, they cook for themselves, usually a small repertoire of meals that consists of ravioli in a can, Spaghettios, rice and/or ramen noodles.

Eventually, they meet that "special someone" and might do some cooking to impress said "special someone", at which point what they are actually doing is finding their favorite restaurant that isn't "John's Pizza". From this special restaurant, they order their favorite meal and serve it on their own plates. Finally, they marry that special someone and they no longer have to cook again, unless it involves charcoal briquettes and lots of starter fluid, and then they'll cook all day, every day, so long as there's fire.

Men are hunter/gatherers, not cooks or chefs. They bring the meat, the women in their lives cook the meat. This is their primary thought process and they cling tenaciously to the idea when the truth of the matter is this: if men really wish to impress those around them with their culinary skill, discover the crock-pot. Crock-pots are the single greatest innovation to hit the world in the 20th Century and their versatility and ease of use is what makes them so brilliant.

With a crock-pot, men can cook a great variety of meals, all designed to fill, be flavorful and please. Having a yen for barbecue chicken wings but don't have time at the end of a long, tiring day? Brisket in the Crockpot

One of my daughter's favorite meats is a brisket. She has loved brisket since she was a young child. When I was growing up, my mother used to make brisket in the oven, throwing a little bit of this and a little bit of that into the pot. While my daughter loved the end result it was near impossible for me to duplicate the recipe.

Today, when I make a brisket I almost always use my crockpot. A brisket is a cut of meat that needs to cook for several hours anyway, so why not cook it in the crockpot where it will stay moist and absorb all of the flavors I add in?

One of the sauces I create involves ketchup, Worchestshire sauce and onion soup mix. I mix them all together and then instead of adding water, I add either Coke or 7-Up, depending on what I have in the house. Adding the soda adds a bit of a sweet taste to the ketchup mixture. I place the meat on the bottom and then add the sauces on top. I then set the crockpot on low and cook up to eight hours.

Another recipe I love is a cranberry brisket. This recipe requires a little prep work before you can put the ingredients into the crockpot. Sautee two onions chopped, two stalks of celery chopped, two carrots chopped and four cloves of garlic minced. Once soft, add in one can of whole berry cranberry sauce. Mix and remove from heat. Depending on the size of my brisket, I'll sometimes brown the brisket before putting it into the crockpot. If the brisket is small in size, about 3 pounds or less, I'll skip the browning process. Place the brisket in the crockpot, add the sauce and then set on low for up to eight hours.

Both of these recipes are great when I'm working a full day. I plug in the crockpot before leaving and the meat is tender and ready when I get home from work. We serve the brisket with either rice or potatoes and a hot vegetable. This makes a great meal that is very simple to prepare.

Making Soup in Your Crockpot

Some winters tend to be colder than other winters. On these cold winter nights, there is nothing that warms you from the inside out like soup does.

There really is a taste difference between homemade soup and canned soup. For those who are gone during the day but want homemade soup, my answer is to use your crockpot. I often get it all ready the night before. I place everything in the crockpot, then put it in the refrigerator. In the morning I plug it in and when I get home at 5:00 p.m. it's ready to eat.

Crockpot

I happen to love corn chowder. It's very easy to make and I enjoy it with a warm slice of bread.

I start with cans of corn I buy at the dollar store. You'll need two of the sixteen ounce cans. Drain the liquid and pour the corn right into the crockpot. Add in two cups of chicken broth. I buy store brand as it's usually less expensive than name brands. If you have water from boiling the chicken, season the chicken water with a bit of salt and then use two cups of the strained chicken broth. Chop up two potatoes and one onion and add those in as well. If you use salt and pepper, add them in according to your tastes. I will sometimes add in about one half teaspoon of each. You'll cook this on low between seven and eight hours. After the seven or eight hours, remove the cover and add in two cups of milk and one quarter cup of butter. Stir, cover and cook an additional forty-five minutes on low. The milk you use will help determine the thickness of the soup. I use non-fat milk which makes my soup thin. If you use half and half, your soup will be thicker.

If you like chicken in your soup, cut up already cooked chicken and add the chicken in during that last forty-five minutes of cooking.

Speaking of chicken, my daughter loves chicken noodle soup. This is a very simple recipe to make. You throw everything in the crockpot, cover in water and cook. It doesn't get much easier than that.

You'll start with three to four cups of cut up chicken. This can be white meat or dark. My family prefers the white meat. Many people I know prefer the flavor of the dark meat. I buy skinless boneless chicken breasts so cutting them up is a breeze. Add in about three cups of vegetables. I often use baby carrots as we often have those in the house. Then I add in celery as I like the flavor celery gives soup. I usually remove the celery before serving as I don't enjoy eating the celery, I just enjoy the flavor. I also add in cut up potatoes and onion. As you add in the vegetables, cut them into a size that can easily be removed if you don't wish to serve the vegetable in the bowl of soup.

Your final ingredient is four cups of liquid. Most recipes call for water as the liquid. I actually prefer using chicken broth. The liquid gets poured over all of the other ingredients.

Cook on low about eight hours. An hour before serving, boil your noodles. Don't make them too soft as you'll be adding them to the crockpot for an hour. Drain the noodles and add to the crockpot. Cook for about an hour more on low.

Easy Crockpot BBQ

The Situation:

You've invited fifteen of your closest friends to your home for the big game this Saturday. You want something hearty, but easy to prepare. Traditional barbecue takes a long time to cook, so you're first inclination is toward the standard fare of hamburgers and hot dogs. The downside is it takes time to prep hamburgers and then someone has to stand over a hot, smokey grill during part of the game.

The Solution:

What I'm offering here is a tasty, easy-to-make crock pot BBQ that I guarantee will impress your guests. Make sure you allow 1/4 to 1/2 lb of pre-cooked meat per serving when you pick the size of your roast. An eight pound Boston Butt will yield enough meat for twenty-five to thirty sandwiches..

Ingredients:

1 - Boston Butt or Pork Roast
1/2 cup Red Wine Vinegar
1/4 cup Molasses
1 tsp Red Pepper Flakes
Garlic Powder

Directions:

Unwrap your roast and rinse it in cold water. If using a Boston Butt don't remove the fat layer. Put the meat in the crock pot fat side down. Pour in the red wine vinegar. Drizzle the molasses on top and then sprinkle on the red pepper flakes. Give the whole roast a good dusting of garlic powder.

Cook on the low setting of your pot for 6 - 8 hours. When it's done, the meat will fall away from the bone. Use tongs to serve right from the pot. The pot liquor may be used as au jus or you may use a tomato based barbecue sauce, just don't use too much. Serve with potato chips, cole slaw or mustard slaw and baked beans. Enjoy the oohs and ahhs. You'll be asked to share the recipe, guaranteed.

Making homemade soup can take a long time, but with your magic crockpot, you can get a wonderful batch of chicken noodle soup while you are taking care of other tasks. While you are out and about, your soup will be happily simmering, creating a delectable bowl of comfort. This is a meal you can easily make whether you are an accomplished chef or if you only cook when absolutely necessary. Your chicken soup will turn out much better than any canned soup you can buy.

If You Use Only the Freshest Ingredients...

Crockpot

If you only use the freshest ingredients, the crockpot can still make your soup easier. Remove the skin from your chicken. You can use a whole chicken, parts or boneless breasts or thighs... whichever you have handy. Put the chicken in the crockpot with enough water to cover it. You can add a stalk of celery, an onion, a carrot, and some herbs if you wish. Let it simmer on high for three to four hours.

Once the chicken is cooked, remove it and let it cool off. Strain out the vegetables and herbs you may have put in with the chicken and toss them. Remove the cooled meat from the bones and cut it into small pieces before adding it back to the broth. Add some freshly chopped vegetables of your choice: perhaps some carrots, sweet potatoes, rutabagas, celery, or other favorites. Add a little garlic and some herbs if you wish.

Leave the crockpot on high and let it simmer a couple more hours before opening the lid. Taste the broth a little less than an hour before you want to serve dinner. Add any salt that is needed. Once it tastes the way you want, add your noodles. You can use egg noodles, linguine, curly noodles, or bowties. If you make homemade noodles, you can add them about 20 minutes before you serve.

Simply Easy Chicken Noodle Soup

If you prefer to keep it really simple, here is another method. This chicken noodle soup recipe is so easy a teenager could make it. You can use leftover chicken or one of those rotisserie chickens from the supermarket.

Put the chicken in the crockpot, bones, and all. Cover with a large can of chicken broth. Simmer the soup on high for three or four hours. This will add the chicken's flavor to the commercial broth. Remove the chicken and let it cool before deboning it. Cut up the meat before putting it back in the crockpot.

Add some vegetables. You can use fresh sliced carrots or other vegetables, or you can use frozen vegetables. To make it really easy, just put in some whole baby carrots from the market. No peeling, slicing or dicing! Let the soup cook for a couple more hours.

About half an hour to 45 minutes before you want to eat, add your favorite noodles. You can use any kind of noodles you like, from ruffly egg noodles to ramen. Large ribbon noodles are fun. This is also a great way to use up small amounts of noodles in your cupboard. Mix and match if you need to. Break up some spaghetti, put in a handful of macaroni. It is your soup, do what you want!

Crockpot Recipes - My Favorite Crockpot Recipes

Crockpots are such a wonderful invention! At last, a way to come home from a long day at work only to find a hot cooked meal ready and waiting for us! Crockpots save us money as well as time, and in these difficult economic times, any way to save money while not sacrificing flavor is an A+ in my book. Below are 10 of my favorite crockpot recipes. I hope you enjoy them as well.

16 BEAN SOUP
1 package 16 Bean Soup
3 bay leaves
1 tablespoon crushed oregano
2 cans no-fat chicken stock
Additional water to cover
3 stalks celery chopped
3 carrots diced
1 large onion chopped
3 cloves garlic sliced
1 pound turkey Italian sausage sliced
2 cans stewed (or diced) tomatoes

Combine first 5 ingredients (liquid should cover mixture by 1"-2") in Crock Pot Cook on high for 2 hours Add remaining ingredients and shift cooker to low and cook for additional 3 hours For more zing, add cayenne or crushed red pepper when adding second set of ingredients. Serve as complete meal or over rice. Freezes well.

BAYOU GUMBO
* 3 tablespoons Pillsbury Best All Purpose Flour
* 3 tablespoons oil
* 1/2 pound smoked sausage, cut into 1/2 inch slices
* 2 cups frozen cut okra
* 1 large onion, chopped
* 1 large green bell pepper, chopped
* 3 garlic cloves, minced
* 1/4 teaspoon ground red pepper (cayenne)
* 1/4 teaspoon pepper
* 1 (14.5 ounce) can diced tomatoes, undrained
* 1 (12-ounce) package frozen shelled deveined cooked medium shrimp, rinsed
* 1 1/2 cups uncooked regular long-grain white rice
* 3 cups water

In small saucepan, combine flour and oil; mix well. Cook, stirring constantly, over medium-high heat for 5 minutes. Reduce heat to medium; cook, stirring constantly, about 10 minutes or until mixture turns reddish brown. Place flour-oil mixture in 3 1/2 to 4 quart Slow Cooker. Stir in all remaining ingredients except shrimp, rice and water. Cover; cook on low setting for 7-9 hours. When ready to serve, cook rice in water as directed on package. Meanwhile, add shrimp to gumbo mixture in slow cooker/Crock Pot; mix well. Cover; cook on low setting for additional 20 minutes. Serve gumbo over rice.

CHEESE AND POTATO CASSEROLE
2 lb. pkg. frozen hash brown potatoes (partially thawed)
2 (10 oz.) cans cheddar cheese soup
1 (13 oz.) can evaporated milk
1 can French fried onion rings, divided
Salt and pepper to taste

Combine potatoes, soup, milk, and half the can of onion rings; pour into greased slow
cooker/Crock Pot and add salt and pepper. Cover and cook on low for 8 to 9 hours or high for 4 hours. Sprinkle the rest of the onion rings of top before serving. Makes 6 servings.

CHICKEN CHILI
2 whole chicken breasts, skinned, deboned, cut in 1/2" chunks
Celery heart
1 med. onion
2 cans stewed tomatoes, sliced
16 oz. med. salsa or picante sauce
1 can chick peas (or 1 pkg. pkg.
white kidney beans)
6 oz. mushrooms
Olive oil

Brown chicken in 1 tablespoon olive oil. Chop celery, onion and mushrooms. Combine all ingredients in large slow cooker/Crock Pot, stir and simmer on low heat for 6-8 hours. Serve with bread or taco chips. *If you like it spicy, use hot salsa or picante sauce.

CHILI
2 lbs. ground beef
1 lg. onion
1 lg. green pepper
1 lg. jalapeno pepper
Chili powder to taste
Garlic salt to taste
Salt to taste
Pepper to taste
Sugar to taste
2 cans crushed tomatoes
1 can tomato puree
1 can kidney beans
2 cans chili hot beans

Brown beef. Saute chopped onion and green pepper in grease. Mix beef, onion and green pepper. Add spices; let stand 1 hour. Add tomatoes, tomato puree, beans; cook in Crock Pot all day. Best if refrigerated and warmed the next day.

CREAMY SPINACH DIP
* 8 ounces Cream cheese, cubed
* 5 ounces Frozen chopped spinach
* 2 tablespoons Pimento, diced
* 1 teaspoon Worcestershire sauce
* 1/4 teaspoon Garlic salt
* 1/4 cup Whipping ceram
* 2 tablespoons Parmesan cheese, grated
* 2 teaspoons Onion, finely chopped
* 1/2 teaspoon Thyme

Combine cream cheese and cream in Crock Pot. Cover and heat until cheese is melted, 30 to 60 minutes. Add remaining ingredients. Cover and heat 30 minutes. Serve with raw vegetables, crackers, or bread pieces.

CROCKPOT BROCCOLI SOUP
4 c. water
4 chicken bouillon cubes
1/4 c. chopped onion
2 c. diced potatoes
1 bag frozen, chopped broccoli
2 cans cream of chicken soup
1/2-1 lb. Velveeta cheese, cubed

Mix water, bouillon cubes, onions, potatoes and broccoli in a crock pot. Cook on high until broccoli is thawed. Add cream of chicken soup and cheese, to taste, to mixture. Turn crock pot on low and cook for 2 hours.

CROCKPOT CHEESY BACON DIP
2 pkgs (8 oz) cream cheese, softened, cut into cubes
4 cups shredded Colby-Jack Cheese
1 cup half-and-half
2 T mustard
1 T chopped onion
2 tsp Worcestershire sauce
1/2 tsp salt
1/4 tsp hot pepper sauce
1 lb bacon, cooked and crumbled

Place cream cheese, Colby-Jack cheese, half-and-half, mustard, onion, Worcestershire sauce, salt and pepper sauce in crock pot. Cover and cook, stirring occasionally, on low 1 hour or until cheese melts. Stir in bacon; adjust seasonings. Serve with crusty bread or crackers.

CROCKPOT CORN CHOWDER I
6 slices bacon, diced
1/2 c. chopped onion
2 c. diced peeled potatoes
2 pkgs. (10 oz each) frozen whole-kernel corn, broken apart
1 can (16 oz) cream-style corn
1 Tbs. sugar
1 tsp. Worcestershire sauce
1 tsp. seasoned salt
1/4 tsp. pepper
1 c. water

In skillet, fry bacon until crisp; remove and reserve. Add onion and potatoes to bacon drippings and saute for about 5 minutes; drain well. Combine all ingredients in CP; stir well. Cover and cook on Low setting for 4 to 7 hours. Makes about 1 1/2 quarts.

Place the applesauce, apple cider and honey in the crockpot. Mix in the cinnamon, cloves, and allspice.

Pulled Pork Crockpot Recipes - How to Make a True Southern Style Sandwich

Take a drive through the South and you will find any number of restaurants that will hotly debate that they, and they alone, have the original, authentic Southern-style pulled pork sandwich recipe. How can each state, region, and locality claim to have the one, true, original recipe? It's hard to argue with Southern cooking aficionados, so let's just take a look at what makes this sandwich unique, as well as debatable.

We have to consider a wide range of regions. Classics like Memphis style, Southern style, North Carolina style, and South Carolina style, are only the beginning. You will also hear from folks in Texas, Georgia, Alabama, Mississippi, Louisiana, and Florida about what makes their sandwich traditional. It seems most Southern folks claim to have the original, official, and the very best recipes for these sandwiches. What most everyone can agree on is that no one agrees which style of sandwich truly belongs to which region. For as many variations of sauce and seasonings you can find, there are that many and more variations of methods for cooking and serving pulled pork sandwiches.

I won't attempt to figure out which ingredients for sauces and dry rubs definitely belong to which region. Nor will I try to firmly establish which cooking method belongs to which region. What I will do is lay out a few common methods for cooking and serving this popular sandwich, and suggest where these methods are most typically found. If a method sounds like your hometown original, it probably is; just like it might belong to someone else. In other words, the debate lives on. Let's look at some of the cooking methods and ingredients that make a pulled pork sandwich what it is:

Cooking Methods

It's not easy to pin down a cooking method to any one state or region. Grilling, smoking, roasting, and braising are common in many regions. Deep pits for smoking and slow roasting would have been the preferred method by many settlers in the South, and now their ancestors may still use those exact same methods. Your family's cooking method depends on how you learned to cook pork. If you're walking down Beale Street in Memphis, you'll most likely see lots of smoky grills going, but you'll see those same scenes in other regions, as well. Any one region would find it difficult to claim that a certain style of cooking is their own and no one else's. Of course, using a crockpot wasn't passed down through hundreds of years by our ancestors, so the origin of this method is obviously widespread.

Vinegar

You may use white vinegar, apple cider vinegar, red wine vinegar, or any of a wide variety of vinegars available. The idea in using vinegar, no matter what kind, is the same. Mixing sour vinegar with some sort of sweet ingredient is essential for any good barbecue sauce. Many recipes claim to be official Memphis style pulled pork specifically because they use vinegar in their sauce. However, several regions and states claim this ingredient as the quintessential ingredient that differentiates their pulled pork sandwich from any other.

Brown Sugar

Both barbecue sauces and dry rubs may contain brown sugar which gives the sweet flavor to the whole sweet-and-sour balance that a pulled pork sandwich should have. A simple concoction of brown sugar, vinegar, and a pinch of any hot sauce or spicy seasoning is often found in barbecue places in Florida and Alabama. Whether this simple recipe originated in those states is something we'll never know. I can't say I've ever seen a pulled pork sandwich seasoned like this in Memphis, but that doesn't mean it doesn't exist there.

Dry Rubs

Even though dry rubs have been around forever, and used in all regions of the country, a dry rub used for pulled pork sandwiches contains certain standard ingredients. You'll basically find cayenne pepper, black pepper, salt, and paprika in a dry rub for pulled pork. Anything added after that is an individual cook's unique take on this basic recipe. Different regions of the country can lay claim to using only dry rubs, never liquid barbecue sauce, but this method is so widespread that it seems impossible to pin down the original creator. Crockpot Lamb Stew - Two Easy and Flavorful Recipes

Lamb is a wonderful meat for slow cooking because it comes out so tender and flavorful. If you enjoy the taste and texture of this ingredient, you will love the following recipes for stew because they are simple to make and the results are spectacular.

Recipe for Leg of Lamb Stew with Vegetables

This flavorful dish is rich in fresh vegetables and the garlic, bay leaves, and oregano add plenty of flavor as well. Leg of lamb is very healthy and it is nineteen percent leaner than the shoulder meat.

This stew is nice served with warm pita bread or rice and it makes enough to serve eight people. If you like, you can make this ahead and refrigerate it for up to two days. Reheat it in the oven, in a microwave or on the stove.

What you will need:


1 1/2 lbs lean boneless lamb leg
3 tablespoons chopped fresh parsley
2 thinly sliced onions
6 bay leaves
1/2 lb trimmed green beans
1/2 teaspoon dried oregano
4 minced cloves garlic
14 oz can diced tomatoes
1 1/4 teaspoons salt
Black pepper
1 1/2 tablespoons olive oil
1 zucchini, in 1/2 inch slices
1 eggplant, in 1/2 inch slices
1 big potato, in 1/2 inch slices

How to make it:

Trim the meat and cut it in to 1 1/4 inch pieces. Season it with quarter of a teaspoon of salt and some black pepper. Heat half a tablespoon of oil in a skillet and add half the lamb. Sear it for a few minutes, until it is browned. Put it in a slow cooker and repeat with the remaining meat.

Add the rest of the oil and saute the onions for five minutes. Add the oregano and garlic and saute for another minute. Add the tomatoes and bring the mixture to a simmer, mashing it with a fork or masher. Spoon half the mixture into the slow cooker.

Arrange the sliced potatoes over the top and season with some salt and pepper. Add the green beans and then the zucchini and eggplant. Season each layer with salt and pepper.

Spread the rest of the tomato mixture over the top and arrange the bay leaves on there. Cover and cook on high for four hours or until the vegetables and meat are tender. Discard the bay leaves and serve garnished with parsley.

Another Simple Recipe for Lamb Stew

What you will need:


1 1/2 lbs boneless lean lamb stew meat, in 1 inch cubes
1 thinly sliced onion
1/4 cup all purpose flour
1 teaspoon salt
1 cup baby carrots
1/2 teaspoon black pepper
2 cups diced rutabaga
1 cup peas
2 cups water
2 tablespoons vegetable oil

How to make it:

Sprinkle half the salt over the meat and some of the pepper, and then coat it with flour. Heat the oil in a pot over a moderately high heat and brown the meat in batches. Transfer it to the crockpot. Add the onion to the pot on the stove and cook it for four minutes or until browned.

Stir in the water and scrape any burnt bits off the bottom. Transfer the cooked onion mixture to the slow cooker and add the rutabaga and carrots. Cover and cook for eight to ten hours on low, adding the peas during the final half an hour.

Sloppy Joes For a Backyard Picnic - Crockpot Style

You may think of sloppy Joes as a "kid" food but I still love to eat them and I serve them to my family on a regular basis. I recently held a picnic style gathering at my house for my family and friends. I didn't  want to spend a lot of time in the kitchen so I have decided that I would use my crockpot and make my famous Large Crowd Pleasing Sloppy Joes. This recipe has been a favorite at many covered dish events.  It is so simple to prepare and it will serve 24 hungry diners.

Ingredients

Crockpot

3 pounds ground beef
1 cup coarsely chopped onion 
3/4 cup celery
1 cup barbeque sauce
1 can (261/2 ounces) sloppy Joe sauce
24 hamburger buns

Directions

* Cook beef and onion in a large skillet over medium heat for about 10 minutes. Stir occasionally until beef is brown.
* Drain.
* Transfer beef mixture to 31/2 to 6 quart crockpot.
* To beef mixture, add chopped celery, barbecue sauce, and sloppy joe sauce. Mix thoroughly.
* Cover and cook on low heat setting for 7 to 9 hours (or cook on high heat setting for 3 to 4 hours) or until vegetables are tender.

Quick Tips

1. Spray crockpot with cooking spray for easier cleaning.
2. Buy onions and celery already chopped.
3. Sloppy Joes will stay warm for about 2 hours. Stir occasionally to prevent mixture from getting too brown around the edges.

You can serve any side dish with the sloppy Joes.  To keep preparation simple I usually serve potato chips.

This recipe only takes about 15 minutes to prepare but your guests will think that you spent all day in the kitchen. Be prepared for compliments!

Easy Crock Pot Chicken Recipes

With the temptation of fast food, processed meals, and eating out, it's difficult to spend time to prepare good, healthy, home-cooked meals. If you're like many, the last thing you want to do after coming home from work is prepare a gourmet dinner. Salsa Chicken

Ingredients:

6 boneless skinless chicken breasts

1 ½ cups salsa

1 tsp ground cumin

3 tbsp lime juice

Spray crock pot with non-stick cooking spray. Place chicken in slow cooker, pour salsa over chicken. Cover and cook on low 6-7 hours or high 3 hours, until chicken is tender and no longer pink. Stir in cumin and lime juice, cover and cook an additional 15 minutes.

Note: For an extra spicy kick, add a pinch of ground red chili powder with the cumin and lime juice.

Lemon Chicken

Ingredients:

4 boneless skinless chicken breasts

¼ lemon juice

1/3 cup water

2 cloves minced garlic

1 tsp thyme

Spray crock pot with non-stick cooking spray. Place chicken in crock pot. Combine juice, water, garlic, and thyme in a small bowl, pour over chicken. Cover and cook on low 8 hours or high 4 hours.

Ranch Chicken

Ingredients:

6 boneless skinless chicken breasts

1 can condensed cream of chicken soup

1 envelope ranch dressing mix

½ cup water

½ cup sour cream

2 tbsp ranch dressing

2 tbsp flour

Spray crock pot with non-stick cooking spray. Place chicken breasts in crock pot. In a small bowl, combine soup, ranch dressing mix, and water; pour over chicken. Cover and cook on low 8 hours or high 4 hours. Remove chicken from crock pot. Stir in sour cream, ranch dressing, and flour; replace chicken. Cover and cook on high 20 minutes.

Note: Ranch chicken leftovers are perfect for sandwiches, chicken tortilla wraps, or a tasty chicken casserole.
