How to Cook Goat in a Crockpot

Goat might not be as common as beef or chicken but it is equally great for making crockpot recipes. Goats have been used for their meat, milk, skins, and hair all over the world for centuries and there are more than three hundred goat breeds.

This animal is closely related to the sheep. The meat tastes like spring lamb meat and the word "mutton" is used to describe both sheep and goat meat in India, Pakistan and on some Caribbean islands. The flavor can also be reminiscent of venison or veal, depending on the condition and age of the goat.

The meat can be barbecued, stewed, curried, grilled, baked, canned, minced, or made into sausages. The New Zealand Kiko, which originated in Tennessee, is a popular breed of goat for eating, as is the South African Boer, which was introduced to North America in the early 1990s.

What you will need:

1 goat leg, de-boned or folded
3 red potatoes
3 cloves garlic
3 carrots
1 cup water
1 cup white wine or chicken stock
8 oz tomato paste
8 shallots
Salt and black pepper

How to make it:

Put the water, wine, goat and tomato paste in your crockpot and stir the mixture. Cook it for four hours on low. Peel and chop the carrots, potatoes, garlic, and shallots and add these to the pot as well as the salt and black pepper. Cook for another three hours or until the meat is falling off the bone. Serve with couscous or rice.

Recipe for Goat in Red Wine

You can adapt this recipe if you have other vegetables to use up. Carrots, mushrooms, zucchini, eggplant, and squash are all good. The goat will come out very tender and moist and you can serve this taste recipe with mashed potatoes or rice. If you want the gravy to be thicker, you can stir a teaspoon of cornstarch into the beef stock before you add it to the crockpot.

What you will need:

1 lb goat stew meat
1/2 bottle red wine
3 bay leaves
6 oz tomato paste
6 peeled, chopped carrots
1 chopped onion
1 teaspoon chopped fresh thyme
14 oz beef stock
1/2 teaspoon salt
1/4 teaspoon black pepper

How to make it:

Put the vegetables and herbs in the bottom of the crockpot, then pour in the liquids and tomato paste and stir the mixture well. Add the goat and make sure it is covered in liquid.

Add the salt and pepper, cover the crockpot and cook the stew on high for three hours, then low for two hours. Alternatively, you can cook it on low for eight hours or nine if you are using frozen meat.

The Easiest Crock Pot Roast Recipe

Brisket in the Crockpot

One of my daughter's favorite meats is a brisket. She has loved brisket since she was a young child. When I was growing up, my mother used to make brisket in the oven, throwing a little bit of this and a little bit of that into the pot. While my daughter loved the end result it was near impossible for me to duplicate the recipe.

Today, when I make a brisket I almost always use my crockpot. A brisket is a cut of meat that needs to cook for several hours anyway, so why not cook it in the crockpot where it will stay moist and absorb all of the flavors I add in?

One of the sauces I create involves ketchup, Worchestshire sauce and onion soup mix. I mix them all together and then instead of adding water, I add either Coke or 7-Up, depending on what I have in the house. Adding the soda adds a bit of a sweet taste to the ketchup mixture. I place the meat on the bottom and then add the sauces on top. I then set the crockpot on low and cook up to eight hours.

Another recipe I love is a cranberry brisket. This recipe requires a little prep work before you can put the ingredients into the crockpot. Sautee two onions chopped, two stalks of celery chopped, two carrots chopped and four cloves of garlic minced. Once soft, add in one can of whole berry cranberry sauce. Mix and remove from heat. Depending on the size of my brisket, I'll sometimes brown the brisket before putting it into the crockpot. If the brisket is small in size, about 3 pounds or less, I'll skip the browning process. Place the brisket in the crockpot, add the sauce and then set on low for up to eight hours.

Both of these recipes are great when I'm working a full day. I plug in the crockpot before leaving and the meat is tender and ready when I get home from work. We serve the brisket with either rice or potatoes and a hot vegetable. This makes a great meal that is very simple to prepare.

Taco Casserole in the Crockpot

I happen to be a Mexican food lover. When I was a kid, my mom used to make taco casserole in the oven. Being a crockpot lover, I wanted to create this childhood recipe for the crockpot.

All of the recipes I found called for ground beef. I really prefer ground turkey so that's what I use. Start with one to one and a half pounds of ground meat. You can also try a combination of ground meats. The smaller the crockpot, the less meat you'll need. Grab a skillet large enough for the meat and some onions, pepper and garlic.

Crockpot

Brown the ground beef or turkey with one medium onion, chopped, one clove of garlic minced and a half cup of chopped green pepper. If you want to add a bit of red or yellow peppers for coloring, chop up a little bit of those too. Once the vegetables become transparent and the meat is cooked, drain the grease from the meat.

You can turn the heat off, but use your skillet as a mixing bowl. Add in one fifteen ounce can of tomato sauce, one teaspoon of chili powder and about 3 drops of Tabasco sauce. Depending on your taste, you can add more or less Tabasco sauce. I prefer my food a bit milder, so I use just enough for some flavor. Mix this all together.

Now it's time to begin putting it together in the crockpot. You'll be creating layers. Depending on the size of your crockpot, you'll have four to six layers. Start with a layer of meat mixture on the bottom. Next spread some frozen corn on top of the meat. If you only have canned corn, you can use that though I prefer the frozen variety. You'll use about one quarter cup of corn per layer. Your next layer will be canned chili with beans. You'll use a total of about two cans. But remember, you're using only a little bit on each layer. My daughter is not fond of beans, so we mix one can of chili with beans and one can of chili without beans. This makes the overall bean count less per serving. On top of this layer, you'll put nacho cheese tortilla strips. Finally, on top of that sprinkle grated cheese. I like both Mexican blend cheese and also grated cheddar. Place cover on crockpot and cook on low between six and eight hours. The larger crockpots will use more time than the smaller crockpots.

Once you serve this up, consider placing sliced olives, chives or slices of avocado on top.

Ten Tips For Using Your Crockpot

In today's busy world, more and more people are using crockpots to prepare the families evening meal. I know some folks who have two crockpots. They use the large one to prepare meats or poultry and they use the small one to prepare side dishes and desserts.

There are many tips to make using your crockpot even easier:

1. Don't lift the lid to take a peak. I have read over and over that if you do lift the lid, you need to add 20 minutes cooking time.

2. Vegetables and potatoes take longer to cook in a crockpot. It's always suggested that you place potatoes and vegetables on the bottom, layering the meat and sauces on the top.

3. Regular milk can curdle in the crockpot due to long cooking times. Consider using either canned milk, or adding the milk during the last 30 minutes of cooking. Since you'll be lifting the lid, add a bit of cooking time to the recipe directions.

4. For recipes that call for ground beef, brown the meat before adding it to the crockpot. It will have a better texture. To confirm you discard all of the grease, pour the meat through a strainer first. Of course making a meat loaf would be the exception to this rule.

5. Trim as much fat off of meats and chicken as you can. Due to long cooking times, the fat melts right into the sauces and adds a bitter taste to the finished product. If cooking poultry remove the skin to avoid the melting fat.

6. Make sure to defrost all meats and poultry prior to putting them in the crockpot. Cooking times are based on defrosted meats.

7. Very little liquid boils away in a crockpot. You can thicken your sauce by removing the cover during the last 30 minutes of cooking. If you still find the sauce is too thin, pour the sauce into a sauce pan and add a bit of cornstarch.

8. Make sure your crockpot is filled at least half way. This prevents both undercooking and over cooking. Do not overfill the crockpot, remembering that very little liquid boils out.

9. Spray your crockpot with non stick cooking spray before adding the ingredients. This will help prevent sticking.

10. If you are using less expensive cuts of meat, consider cooking them in the crockpot as the longer cooking times help make even the toughest pull apart tender.

Making Chicken Enchiladas With White Sauce in the Crockpot

We are a family who loves chicken enchiladas. We also enjoy using our crockpot a few times per week.

I decided to try our family recipe in the crockpot and it came out wonderfully!! I began with five chicken breasts. Since the meat is boiled I buy chicken breasts with skin and bones. I find if I buy the skinless breasts it comes out too dry.

Crockpot

Bring the water to a boil and then cook about 45 minutes. Chicken should be cooked through. I allow the chicken to cool about fifteen minutes and then shred it. Many recipes suggest cutting it into chunks, we prefer the chicken shredded.

Now it's time to create the sauce. The sauce needs two cans cream of chicken soup. I look for the lower sodium soup when I buy it. If you buy regular cream of chicken, that's fine, but the sauce will be a bit saltier to taste. If your taste buds are used to salt, then you may find the lower sodium a bit too bland for your tastes. Next comes eight ounces of sour cream. I use the non fat sour cream. There is a definite taste difference between regular sour cream, low fat sour cream and non fat sour cream. Find the right taste combinations for your family in choosing soup and sour cream. Finally, you'll need a four ounce can of diced chilis. Try adding more or less chilis depending on how hot your family likes the dish.

If you want a sauce that is bit thinner, add in some milk. Since we only drink non fat milk, I tend to not add it in. If you're a family that drinks low fat or regular milk, you can add in one third of a soup can of milk and it will help thin out the sauce just a bit.

Mix the sauce ingredients together in a bowl. Dip one or two tortillas in the sauce to moisten them. These are the tortillas you'll use on the top of your casserole.

Next, add in the chicken and mix well. It's now time to put everything in your crockpot. I buy whole wheat Mission tortillas. My crockpot that I use for this casserole is six quarts. To line the bottom of the crockpot I needed one and a half tortillas. Cover the bottom of your crockpot with the tortillas. Now add one third of your chicken. Lightly cover the chicken with a handful of shredded cheese. You can use cheddar or a combination of jack and cheddar cheeses. Repeat your layers two more times. I end with those dipped tortillas on the top. I put one more layer of cheese on top and it's ready to turn on. I put the crockpot on low for four hours.

Another alteration you can make is to tear the tortillas into strips, making it easier to cut when it's time to serve up the enchiladas.

When you serve the enchiladas, put a small spoon of sour cream, olives and/or a slice of avocado on top.

This is a dish that my entire family enjoys.

Crockpot Recipes For Your Fire Pit Party

If you have a home fire pit, you should put it to good use. Not only is a fire pit great for cooking and pretending you're on a camping trip, but it's a great thing to have for a bonfire party in the fall just before it starts to get too cold to stay outside for long periods of time. And there's nothing like warm, comforting crockpot recipes to make your guests feel welcome. Here are some ideas:

Crockpot Pulled Pork
The key to making great pulled pork is to get large meaty cuts of pork. It's not at all a difficult dish to make, especially in a crockpot. So try to find the meatiest cuts you can. If you can get the more tender cuts, that's great, but it's not necessary because of the long slow cooking. Before you place it in the crock-pot, cut off the fat and chop it into smaller chunks. Add minced onion and your favorite barbecue sauce, turn on the crock-pot on low and let it cook for several hours (about six to eight).

Beef stew is great to make in a crockpot and you can add whatever vegetables you'd like. Most traditional recipes call for onions, carrots, and potatoes, but you could also combine parsnips, rutabagas, turnips, and tomatoes. To make the basic beef stew, you'll need about three pounds of trimmed and chopped stew meat. Place this in the crockpot with water, salt, and pepper. Then add your prepared and chopped vegetables. Add seasonings and condiments to your taste-Worcestershire sauce, vegetable or tomato juice, tomato or mushroom soup, or soy sauce. Turn your crockpot to the low setting and let the mixture cook for about ten hours.

Crockpots are not as celebrated for their dessert-making capabilities, but they do just as well as an oven in making delicious desserts. To close out your party, a wonderful bread pudding is a great idea. The best bread to use for bread pudding is the stale French type. Break it up into cubes. Combine your flavorings like chocolate, fresh or dried fruit, vanilla, fruit peels, or brandy, and layer these on top of the bread cubes inside the crock pot. Mix sugar with eggs, milk, and butter, and pour over the mixture at the bottom and cook for about an hour and a half or slightly longer.

Easy Crockpot BBQ

The Situation:

You've invited fifteen of your closest friends to your home for the big game this Saturday. You want something hearty, but easy to prepare. Traditional barbecue takes a long time to cook, so you're first inclination is toward the standard fare of hamburgers and hot dogs. The downside is it takes time to prep hamburgers and then someone has to stand over a hot, smokey grill during part of the game.

The Solution:

What I'm offering here is a tasty, easy-to-make crock pot BBQ that I guarantee will impress your guests. Make sure you allow 1/4 to 1/2 lb of pre-cooked meat per serving when you pick the size of your roast. An eight pound Boston Butt will yield enough meat for twenty-five to thirty sandwiches..

Ingredients:
1 - Boston Butt or Pork Roast 1/2 cup Red Wine Vinegar 1/4 cup Molasses 1 tsp Red Pepper Flakes Garlic Powder

Directions:

Unwrap your roast and rinse it in cold water. If using a Boston Butt don't remove the fat layer. Put the meat in the crock pot fat side down. Pour in the red wine vinegar. Drizzle the molasses on top and then sprinkle on the red pepper flakes. Give the whole roast a good dusting of garlic powder.

Cook on the low setting of your pot for 6 - 8 hours. When it's done, the meat will fall away from the bone. Use tongs to serve right from the pot. The pot liquor may be used as au jus or you may use a tomato based barbecue sauce, just don't use too much. Serve with potato chips, cole slaw or mustard slaw and baked beans. Add any or all of the following ingredients to the beer - spicy tomato juice, mustard, horseradish, Worcestershire sauce, garlic, onion, hot sauce, red pepper flakes, or anything that sounds good to you. Pour this sauce over the meatballs in the crockpot, turn the heat to low, and let it cook for about 2 hours or a little more until you're sure the meatballs are cooked thoroughly. You won't find these meatballs on just any buffet!

Nutty Snacks - I always think some pretty bowls of assorted nuts placed on tables around the room is a nice touch. But, instead of just dumping some mixed nuts in a bowl, why not cook up a batch to surprise your holiday guests? Because pecans are often associated with sweet snacks and desserts, these Cajun Style Pecans will be quite the surprise, indeed!

Choose the spices that you would normally associate with a good Cajun dish. You'll probably want ground onion and garlic, of course, and cayenne pepper, chili powder, oregano, basil, and thyme. Mix these together, then add to some melted butter and pecans in your crockpot. Cover your crockpot and turn it to high for about 10 minutes, then uncover and turn to low. Continue cooking on low, uncovered, for about 2 hours. Stir the contents a few times to keep the pecans coated and toasting evenly. After they're done cooking, just cool the pecans by spreading them on a baking sheet, rack, or paper towels.

I love Mexican food and love using my crockpot, so combining the two makes perfect sense.  Here's a list of some Mexican Crockpot Recipes.

Crockpot Enchiladas

A fabulous dish my whole family loved!
 
Ingredients:

2 cans shredded chicken breasts
1 cup salsa
1 can enchilada sauce
24 oz can diced green chiles
4 cups shredded cheddar cheese
1 can cream of chicken soup
14 oz can sliced black olives
2 thinly sliced green onions
10 corn and flour tortillas

Spray crock pot with cooking spray. Mix chicken, salsa, enchilada sauce, green chilis, and soup in a bowl. Cut corn and flour tortillas into 1 inch pieces, mix pieces together. Place a layer of sauce mixture on the bottom of the crockpot. Place a layer of tortillas, then a layer of cheese. Repeat until all the sauce mixture has been used. Top with cheese, olives, and green onions. Cover and cook on low 6 hours. If desired, serve with sour cream, salsa, guacamole, and tortilla chips.

Chicken Tortilla Soup
Easily one of my favorite recipes - a fabulous "throw it in and let it cook" soup. See the notes below for and extra flavorful twist.
 
Ingredients:

1 ½ pounds shredded cooked chicken
1 drained 14.5 oz can diced tomatoes
1 - 10 oz can enchilada sauce
2 medium chopped onions
14 oz can chopped green chiles
2 cloves minced garlic
2 cups water
1 - 14 ½ oz can chicken broth
1 tsp cumin
1 tsp chili powder
½ tsp black pepper
1 large bay leaf
1 tbsp cilantro
1 ½ tsp southwest seasoning mix
1 - 10 oz pkg frozen corn

Spray slow cooker with cooking spray. Mix all ingredients in crockpot. Cover and cook on low for 6-8 hours or high for 3-4 hours. If desired, serve with sour cream and baked tortilla strips. For baked tortilla strips, preheat oven to 400*. Lightly brush both sides of tortillas with vegetable oil, cut into strips. Spread on ungreased cookie sheet and bake for 10-15 minutes.
 
Notes: For extra flavor, I make this in two steps. First, I put 1-1 ½ pounds of boneless skinless chicken breasts in a crockpot with 1 ½ cups water (or 1 can chicken broth) and Mexican seasonings. (A package of taco or fajita seasoning or southwest seasoning mix works well.) Cover and cook on high 3-4 hours. Remove chicken and shred for soup. Often, I will make 2-3 pounds of chicken to make soup along with shredded chicken tacos or fajitas.
 
Crockpot Taco Appetizer
Although I serve with chips, this could be a main meal by using hard or soft shelled tacos instead!
 
Ingredients:
2 pounds ground beef
½ cup water
1 envelope taco seasoning
18 ounce can tomato sauce
1 undrained 14.5 oz can diced tomatoes
2 cups shredded cheddar cheese
1 cup sour cream
3 chopped green onions
1 cup sliced black olives
1 bag tortilla chips
 
Spray crock pot with cooking spray. In a skillet, brown meat over a medium flame. Drain and add to crockpot. Add water, taco seasoning, tomato sauce, and diced tomatoes. Cover and cook on low 6 hours. Serve with toppings such as cheddar cheese, sour cream, green onions, black olives, and other desired toppings.
 
Notes: As mentioned, this could easily be a main meal by serving with hard or soft shelled tacos rather than tortilla chips.

Crock Pot Cooking For Kids

Most parents, when it comes to kids and cooking, cringe with dreadful anticipation at the thought of their progeny creating anything but a mess in the kitchen. However, it doesn't have to be that way, when it comes to slow cookers, kids and delicious meals.

Kids love to help in the kitchen, particularly teens and young teens. Finding foods they can prepare and cook can be a challenge but when a crock-pot is part of the equation, it's not impossible. Given the versatility and relative ease of cooking with crock-pots, also called slow cookers, there are hundreds of ways to include the kids when planning your next meal.

When cooking with kids, the fewer ingredients the better, as their attention span is shorter than that of adults. In addition, if you have gadgets to help in the preparation, such as a vegetable chopper or slicer, kids will love getting involved in the process of cooking with crock-pots. Finally, since there are no flames involved, you can rest assured no one will be burned in the process.

Some suggestions for meals involving slow cookers and kids might be spaghetti and meatballs, Sloppy Joes, barbecue chicken wings, Shepherd Pie, Beanie Weenies, chili and the ever popular Macaroni and Cheese. Adding some ham chunks to the Mac and Cheese brings a little more flavor to an already delicious meal!

When preparing one dish meals, as you would with a slow cooker, clean up is a breeze as well, whether you have a dishwasher or not. Hand the kids a scrubber and some dish soap and walk away, at least until you have the time to come behind them and finish cleaning the liner to your crock-pot.

Kids can gain a great sense of accomplishment when you include them in your meal planning, preparation and cooking. Sit down with the kids and let them pick some recipes they'd like to try and have them make a grocery list. When the time comes to go to the grocery store, use this trip as a lesson in frugal and careful shopping, having them check labels and prices when selecting ingredients for their meals.

Teaching your kids to follow recipes and use a crock-pot is a skill that will stay with them for the rest of their life whether it's your daughter or your son. While cooking with a slow cooker might not be considered "real" cooking, it IS cooking and some extremely tasty meals can come from them. And remember, when you are touting to your friends the wonderful meal your kids made for you with the crock-pot, you are realizing every parents' dream: you didn't do the cooking.

Mom's Crockpot Mac and Cheese - Caution! Super Duper Cheesey!

My mom makes her famous crockpot macaroni and cheese at Christmas every year and it is to die for! It always steals the show from the turkey and ham. Her recipe makes a huge amount but there are never any left overs. Like all of my dear mother's recipes, this one is super easy, but super delicious. Everyone will be asking for the recipe! My mother actually gave this recipe to her mother in law, my grandmother, and she makes it for Sunday dinner every week. How backwards is that?

Ingredients

Crockpot

7 ounce package of Elbow Macaroni

2 tablespoons oil

1 large can of condensed milk

2 large eggs

1.5 cups of milk

3 cups grated extra sharp cheddar cheese

1 teaspoon of salt

Pepper to taste

1 stick of melted butter

Pam Cooking Spray

Directions

1. Spray the inside of your crockpot with Pam cooking spray.

2. Cook macaroni and toss with oil.

3. Beat the eggs and milk together.

4. Mix all ingredients, while reserving approximately 3/4 cup of cheese.

5. Put mixture in crockpot.

6. Top with cheese.

7. Cook on low 3 to 4 hours.

8. Enjoy!

My mother usually makes the macaroni ahead of time and turns the crockpot on on Christmas Day while preparing the rest of the meal. Substitutions can be made, such as whole wheat pasta, reduced fat cheese, margirine, etc. however, I prefer to prepare the macaroni per the recipe, and let it be my guilty pleasure. Try this recipe to highlight any meal.

Crockpot Chicken Recipes - Amazingly Delicious!

These crockpot chicken recipes are delicious. Just check these out and I'm sure you'll be amazingly surprised.

So here we go for some crockpot chicken recipes:

>>Crockpot Chicken Basic

~3 lb Chicken Salt and pepper

~2 Cloves garlic, minced

~1/4 ts Powdered marjoram

~1/4 ts Powdered thyme

~1 Bay leaf

~1/2 c Dry white wine (optional)

~1 c Dairy sour cream

~1 c Packaged biscuit mix

~1 tb Chopped parsley

~6 tb Milk

~10 Small white onions

Sprinkle chicken with salt and pepper, place in crockpot. Insert cloves in one onion. Put all onions into pot. Add garlic, marjoram, thyme, bay leaf and wine. Cover and cook on low 5 to 6 hours. Remove bay leaf and cloves. Stir in sour cream.

Increase heat to high and combine biscuit mix with parsley. Stir milk into biscuit mix until well moistened. Drop dumplings from teaspoon around edge of pot. Cover and cook on high for 30 minutes.

~1/2 lb Mushrooms, fresh

~1/2 c Onions, chopped

~2 lb Chicken, raw

~1 ts Chicken bouillon

~1 ts Poultry seasoning

~1/4 ts Salt

~2 c Water

~3/4 c Rice, uncooked

Slice mushrooms. Remove skin from chicken. Spray skillet with nonstick spray coating. Brown mushrooms, onion, and chicken pieces on all sides over medium heat about 15 minutes.

Stir in seasonings and transfer to crockpot. Can be refrigerated overnight. Start crockpot on LOW. When ingredients are heated, add rice. Cook until done.

>>Crockpot Lemon Chicken

~ 4 pounds Chicken Pieces

~ 1/4 cup All-Purpose Flour

~ 2 tablespoons Cooking Oil

~ 6 ounces Lemonade -- Frozen Concentrate, Thawed

~ 3 tablespoons Brown Sugar

~ 3 tablespoons Catsup

~ 2 tablespoons Water

~ 2 tablespoons Cornstarch

~ 3 cups Cooked Rice

~ 1 1/4 teaspoons salt

1. Combine flour with salt; coat chicken thoroughly. 2. Brown chicken pieces in oil and drain. 3. Stir together lemonade, sugar, catsup and vinegar. 4. Place chicken in crockpot and pour lemonade mixture over it. (the chicken, not the crockpot) 5. Cook on high 3 to 4 hours. 6. Drain liquid into saucepan; add corns tarch and boil till reduced. 7. Pour gravy back over chicken; serve over rice.

Slow Cooker Tips - Hints to Better Crockpot Recipes

The crockpot - or slow cooker - is the perfect cooking appliance for a new cook. This handy kitchen appliance is a staple in many American kitchens. Cooking is easy with a crockpot; simply add all the ingredients and turn it on. Let the slow cooker do the rest! It is quite difficult to mess up a crockpot recipe, but here a few tips to make your slow cooker experience flawless.

First off, make sure you buy a crockpot that has a removable crock, or liner. The crockpots that have the built in liners are very difficult to clean and you will find slow cooking much more enjoyable with an appliance that is easy to care for. There are many inexpensive models of crockpots available now. Try to buy a crockpot that holds what you feel will be little too much food. While this sounds silly now, in the long run you will have a slow cooker that will suit all your needs - and all your unexpected needs.

When preparing your favorite crockpot recipe, try to not over-fill the pot. While some say to keep the crock no more than half-way full, we have found it fine to keep it no more than two-thirds full. This will promote more even cooking and will also help avoid any excess mess when stirring or in the case of bubble-overs.

Many crockpot recipes call for some sort of meat. Some of the best pot roasts and chicken dishes I've had have come from a crockpot! Just remember when slow cooking meat to trim off extra fat. For best results, trim as much of the extra fat off the pieces of meat prior to cooking. Due to the prolonged cooking in a slow cooker, that excess fat can really get cooked in giving your dish an odd taste. Also, healthy crockpot recipes mean less fat, anyway, so trim that fat!

It is tempting to open the lid of your crockpot through out the cooking process, but try to resist it. Each time you open the lid of that slow cooker, heat escapes, and the cooker will take longer to finish your meal. Crockpots cook fairly evenly. The ingredients at the bottom will cook faster than those on top, but it is not necessary to stir as often as you would a stove-top recipe. Keep that lid on except when it is absolutely necessary to stir your recipe.

As for cooking time as directed by recipes - keep in mind that one hour on high in a crockpot is equal to about 2 hours on low. If your slow cooker recipe calls for a four-hour cook time on high, but you want to eat in eight hours, cook your dish on low.

With these few basic tips, crockpot cooking will be a breeze. You will be a slow cooker master in no time!

If you have bought a crockpot recently, you probably have one of the newer models. A lot of these have a saute feature, which means you can saute meat or vegetables in the crockpot itself.

This is obviously preferable to sauteing on the stove, then having to transfer the sauteed ingredient, plus everything else, to the crockpot. A crockpot is a great investment because you can cook everything from beef stew to French onion soup in it.

Converting Stove Top Recipes to Crockpot Recipes

A lot of people wonder how to make their favorite stovetop recipes in the crockpot. A low crockpot heat is about 200 degrees F and a high crockpot heat is about 300 degrees F. Fifteen minutes on the stove equals about an hour and a half in the crockpot on a high heat or four hours in the crockpot on a low heat.

Thirty minutes on the stove is about three hours in a crockpot on a high heat or six hours in a crockpot on a low heat. An hour on the stove is about four hours in the crockpot on a high heat or eight hours in a crockpot on a high heat.

These figures are approximate. It depends very much what you are cooking. You should also only use half as much liquid when converting a stovetop recipe to a crockpot recipe because water cannot evaporate from a crockpot like it does from a pot on the stove. The exception to this rule is when you are cooking pasta, beans or rice, because these soak up lots of water, whichever cooking method you use.

How to Make Crockpot French Asparagus Soup

If you like French onion soup recipes, perhaps you would like to try the following French asparagus soup recipe. Asparagus has a unique flavor and the following recipe combines it with onions, potatoes, chicken broth, and seasoning, for a healthy and delicious crockpot soup recipe. You will have enough French asparagus soup to feed four people and it is nice served with warm bread for dunking.

What you will need:

2 pounds fresh asparagus 2 big potatoes 5 cups chicken broth 6 green onions A pinch each of salt and black pepper Sour cream and chopped fresh parsley, for garnish
How to make it:

Snap or cut the ends off the asparagus, then cut the spears into one-inch lengths. Finely chop the green onions. Peel the potatoes and cut them into half-inch cubes.

Put the broth, potatoes, asparagus and green onions into a crockpot, cover it and cook for about six hours on low, or until the potatoes are tender.

Puree the vegetables using a hand blender or transfer them to a blender or food processor with some of the liquid, then put the puree back in the crockpot.

Stir in some salt and pepper, put the lid back on, and cook on high for about thirty minutes. Serve the French asparagus soup garnished with a swirl of sour cream and some fresh parsley. Bon appetit!

Crockpot Philly Cheesesteak - Easy Comfort Food

There are a thousand versions of what makes a good Philly Cheesesteak. Finding that perfect combination of meat, peppers and cheese is the key for the best tasting cheesesteak. While the oven is preheating place some tin foil on a cookie sheet, lay out your rolls open and spoon your meat mixture onto the open rolls. Now is the time to pile on your favorite melting cheese and watch your Crockpot Philly cheesesteak come to life. Place this masterpiece in the oven for about 15 minutes or until you see the cheese get nice and bubbly on top. The bread should be just crusty enough to give you a light crunch when you bite into them. For a real treat you can brush the top of the bun or roll with a bit of butter and place it in the pan face up so it gets nice and crispy and brown.

Crockpot Philly cheesesteak is a terrific meal to set up before you go to work, finish off in minutes when you come home and make everyone's night. That's when they usually start scratching their heads and looking even more perplexed. Let's take a look at some of the variables to be considered when cooking a whole chicken in a crockpot:

The Term Itself - How do you interpret the term "whole chicken?" Believe it or not, that simple term can be confusing. A chicken may be considered whole if it remains in one piece. Or, you may use the term "whole chicken" to refer to an "entire chicken." See the difference? An entire chicken can be cut into halves, quarters, or pieces. That definitely affects cooking time.

If you do, your chicken has begun to cook, so it won't need as long to cook in the crockpot. And, what about those times you put stuffing in your bird? That will always add more time in order to get the inside cooked all the way through.

The Bird Itself - Don't forget the size of the chicken. If your chicken is around three pounds, it won't have to cook as long as a big six pound chicken. And the room around the bird, inside of the crockpot, also will make a difference. If you're trying to cook a chicken that doesn't have enough air space around it, you'll need to readjust your thinking.

The Crockpot - The simple design and features of the crockpot play a role, too. Is your chicken able to lay down in a nice big six quart oval crock? Will you be starting your dish on high heat and finishing on low heat? Do you have a brand new super-insulated model or an old model that sits on top of a burner with little or no insulation? How tight does the lid fit?

Five Reasons to Own a Crockpot

I was on the phone with my mom this afternoon. I told her that I had a roast in the crockpot. My mom has never owned a crockpot. Every time I cook a meal in my crockpot my mom asks many questions, with me always feeling like I'm trying to sell her a crockpot.

I thought I'd share my reasons for owning a crockpot:

Crockpot

1. This is a perfect item for a busy family. It doesn't matter if you work full time, drive carpool all afternoon or are a student taking classes, a crockpot allows you to turn it on in the morning and have a hot meal by early evening. My mom actually plays mah jong three afternoons per week. She doesn't get home until 5:00 or 5:30 p.m. Often, she and my dad don't eat until 7:00 p.m. because it takes her that long to prepare and cook their meal.

2. You can cook just about anything in a crockpot. I've made chicken dishes and beef dishes. I've made pasta dishes and I've made rice dishes. I've made vegetable casseroles and vegetable soup. I've made cobbler and I've made cake. There are even recipes for bread.

3. The cleanup is a breeze. Many people use crockpot liners. Crockpot liners are a one time use item. Take them out and throw them away. I personally don't use the liners. I soak the crockpot overnight, rinse it and stick it in the dishwasher. When the dishwasher is done, it's ready to be used again. So instead of lots of cookware to make a meal, I have one crockpot to wash.

4. You can save money by using a crockpot. I buy very inexpensive cuts of beef. Once they're done cooking, they are as tender as a filet mignon but at a fraction of the cost. I buy steaks on sale. Cooked under a broiler they come out tough, hard to cut and near impossible to chew. I put that same cut of beef in the crockpot and it comes out so tender you can cut it with a fork.

5. If you have a small kitchen, a crockpot can be a lifesaver. For example, it's thanksgiving and you have a turkey to cook, a green bean casserole to cook and stuffing to make. By using a crockpot, you can make any of the three items in the crockpot, leaving the oven for the other two items.

We use our crockpot at least three or four times per week. We rotate between beef dishes, chicken dishes and vegetarian dishes. On nights I make fish, I use the oven for the fish and use the crockpot to make wonderful veggie casseroles.

After our conversation today, I believe my mother will be buying a crockpot in the near future.

Crockpot Pork Roast With Onions and Potatoes Meal Suitable For Diabetics, Too!

For all the busy cooks out there, here are a couple of recipes to help you put dinner on the table quickly, easily, and economically. With a crockpot entree of meat and potatoes, add a make-ahead green bean salad and you are ready to feed your family a nutritious dinner in no time at all.

PORK ROAST WITH ONIONS AND POTATOES

This recipe requires a 4-quart slowcooker for best results.

Approximately 3 lb boneless pork loin roast, trim off fat

1 large garlic clove, sliced
5 medium potatoes, washed, cubed, unpeeled
1 large onion, sliced
3/4 cup water (or tomato juice, if desired)
1 tbsp low-sodium soy sauce
1 tbsp cornstarch
1 tbsp cold water

Make slits in roast in insert slices of garlic. Place roast under broiler to brown. Put potatoes in slow cooker. Add 1/2 the onion slices. Place roast atop vegetables and cover with remaining onions. Combine water or juice with soy sauce and pour over roast. Place lid on slowcooker and cook on low about 8 hours. When ready to serve, remove roast and vegetables from cooker. Combine cornstarch and cold water. Add to the liquid in the slow cooker. Turn cooker to high until liquid is thickened. Slice meat and serve thickened liquid over the meat and vegetables.

This recipe has a few more protein grams than carbs so it is excellent for diabetics who want to enjoy some good old "meat and potatoes".

GREEN BEAN SALAD

2 cans French-style green beans, drained
1 small can of peas, drained
4 celery sticks, diced
1/2 medium bell pepper, diced
1 onion, diced
1small jar pimento

Dressing:

1 1/2 cup Splenda
1 cup cider vinegar
1 tsp salt
1/2 cup olive oil
1 tbsp water

In a medium mixing bowl, combine all the vegetables together.

To make the dressing, in a separate mixing bowl combine, all the dressing ingredients together. Pour dressing over vegetables, toss to mix well and refrigerate for several hours or overnight. One and a half hour before serving, drain vegetables. Note: This is a great dish to make ahead for convenience later.

Crockpot Recipes For Summer Entertaining

These crockpot recipes will keep your kitchen cool in the summer heat. Bring any of these delights to your summer parties, and your friends will be delighted, drooling, and lining up for the recipe, - and seconds...

Appetizer:

Crockpot

PIZZA DIP

1 large cream cheese softened

1 jar pizza sauce

1 small can chopped olives

1 medium onion chopped

1 pkg. sliced pepperoni

(and what ever else your pizza loving heart desires!)

1 pkg. grated cheese for pizza

Spread cream cheese in the bottom of slow cooker/Crock Pot. Then mix up the pizza sauce, onion, olives and pepperoni and spread on top of the cream cheese. Sprinkle with the pizza cheese and cook on low until the cheese on top melts. Serve with tortilla chips.

Entree

CHICKEN WINGS IN TERIYAKI SAUCE

* 3 pounds chicken wings (16 wings)

* 1 large onion, chopped

* 1 cup soy sauce

* 1 cup brown sugar

* 2 teaspoons ground ginger

* 2 cloves garlic, minced

* 1/4 cup dry cooking sherry

Rinse chicken and pat dry. Cut off and discard wing tips. Cut each wing at joint to make two sections. Place wing parts on broiler pan. Broil 4-5 inches from the heat for 20 minutes, 10 minutes for each side or until chicken is brown. Transfer chicken to slow cooker/Crock Pot. Mix together onion, soy sauce, brown sugar, ginger, garlic and cooking sherry in bowl. Pour over chicken wings. Cover and cook on Low 5-6 hours or on HIGH 2-3 hours. Stir chicken wings once to ensure wings are evenly coated with sauce. Serve from Slow Cooker. Makes about 32 pieces.

Dessert:

DECADENT CHOCOLATE DELIGHT

1 (18.25 ounce) box chocolate cake mix

8 ounces sour cream

1 cup chocolate chips

1 cup water

4 eggs

3/4 cup vegetable oil

1 small box chocolate flavor instant pudding and pie filling mix

Lightly grease inside of crockpot. Combine all ingredients in large bowl. Pour into crockpot. Cover and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours.

Serve hot or warm with ice cream.

This is a very easy dish to make and you can serve it over hot cooked pasta, couscous, or rice. This recipe makes enough to serve six people. Use French or Russian salad dressing. Honey mustard dressing is also nice but might be too sweet for some palates. Use thyme instead of the basil if you like. Also, jam is fine instead of the preserves; just use whichever you happen to have.

What you will need:


2 tablespoons apple cider vinegar
1/2 cup salad dressing
1 cup apricot preserves
6 frozen skinless, boneless chicken breasts
1 teaspoon dried basil
1/8 teaspoon black pepper
1 package dry onion soup mix

How to make it:

Arrange the meat in a three or four quart crockpot. Combine the vinegar, dressing, preserves, basil, black pepper, and soup mix and pour this mixture over the top. Cover the slow cooker and cook the mixture on low for about seven hours or until the chicken is cooked through.

You can either serve it now or thicken it. To thicken it, mix two tablespoons of cornstarch with three tablespoons of chicken broth or water until smooth, then add this to the slow cooker and cook it on high for fifteen minutes.

Next, while using a large mixing bowl you will add the 15 ounces of pumpkin, the entire can of evaporated milk, the 2 ½ teaspoons of pumpkin spice, and the 2 teaspoons of vanilla flavoring. Before blending, you will also add the ¾ cup of sugar, the 2 beaten eggs, the ½ cup of baking mix or biscuit mix, and the 2 Tablespoons of melted margarine or butter.

Mix thoroughly and then pour the batter into the crockpot you have prepared by coating it with the non-stick spray.

After pouring the mixture into the crockpot, replace the lid and then cook the recipe on low for about 3 to 3½ hours. You can check the temperature while using a thermometer, since some crockpots may vary in temperature. You want the dish to reach a temperature of 160 degrees Fahrenheit.

A Roast Rival Crock Pot Recipe For an Amazing Dinner

Then just place roast in slow cooker. Add remaining ingredients and enough water to cover beef. Cook on low 8 to 10 hours, or until beef is very tender. Shred beef, serve on split sandwich buns or garlic bread.

Take a drive through the South and you will find any number of restaurants that will hotly debate that they, and they alone, have the original, authentic Southern-style pulled pork sandwich recipe. How can each state, region, and locality claim to have the one, true, original recipe? It's hard to argue with Southern cooking aficionados, so let's just take a look at what makes this sandwich unique, as well as debatable.

We have to consider a wide range of regions. Classics like Memphis style, Southern style, North Carolina style, and South Carolina style, are only the beginning. You will also hear from folks in Texas, Georgia, Alabama, Mississippi, Louisiana, and Florida about what makes their sandwich traditional. Cooking Methods

It's not easy to pin down a cooking method to any one state or region. Grilling, smoking, roasting, and braising are common in many regions. Deep pits for smoking and slow roasting would have been the preferred method by many settlers in the South, and now their ancestors may still use those exact same methods. Your family's cooking method depends on how you learned to cook pork. If you're walking down Beale Street in Memphis, you'll most likely see lots of smoky grills going, but you'll see those same scenes in other regions, as well. Any one region would find it difficult to claim that a certain style of cooking is their own and no one else's. Of course, using a crockpot wasn't passed down through hundreds of years by our ancestors, so the origin of this method is obviously widespread.

Vinegar

You may use white vinegar, apple cider vinegar, red wine vinegar, or any of a wide variety of vinegars available. The idea in using vinegar, no matter what kind, is the same. Mixing sour vinegar with some sort of sweet ingredient is essential for any good barbecue sauce. Many recipes claim to be official Memphis style pulled pork specifically because they use vinegar in their sauce. However, several regions and states claim this ingredient as the quintessential ingredient that differentiates their pulled pork sandwich from any other.

Brown Sugar

Both barbecue sauces and dry rubs may contain brown sugar which gives the sweet flavor to the whole sweet-and-sour balance that a pulled pork sandwich should have. A simple concoction of brown sugar, vinegar, and a pinch of any hot sauce or spicy seasoning is often found in barbecue places in Florida and Alabama. Whether this simple recipe originated in those states is something we'll never know. I can't say I've ever seen a pulled pork sandwich seasoned like this in Memphis, but that doesn't mean it doesn't exist there.

Dry Rubs

Even though dry rubs have been around forever, and used in all regions of the country, a dry rub used for pulled pork sandwiches contains certain standard ingredients. You'll basically find cayenne pepper, black pepper, salt, and paprika in a dry rub for pulled pork. Anything added after that is an individual cook's unique take on this basic recipe. Different regions of the country can lay claim to using only dry rubs, never liquid barbecue sauce, but this method is so widespread that it seems impossible to pin down the original creator. Then, of course, you can use both a dry rub and barbecue sauce together in the same recipe, so it just gets more confusing.

Condiments

Then there is the question of what to serve with the pulled pork sandwich. Barbecue sauce as a condiment is widely regarded as a standard in every region. Even when the pulled pork never gets a dose of barbecue sauce mixed in with it, there is usually a bottle on the table. You'll also usually find pepper vinegar, mustard, and even a little Tabasco in most regions. What you'll hopefully never find is ketchup on the table. That would not go over well in any region. Most folks believe adding coleslaw on top of a pulled pork sandwich is most decidedly a Memphis touch.

As I searched the vast array of pulled pork crockpot recipes on the Internet, in cookbooks, and with my Southern friends, I got more and more confused about which recipe belongs to which region. What I have decided is if your Grandpa and Grandma have been making the same recipe for pulled pork sandwiches since you can remember, then that recipe belongs to your family and to your region. Go ahead and stake your claim and enjoy this great Southern classic.

Mexican Crockpot Recipes

I love Mexican food and love using my crockpot, so combining the two makes perfect sense.  Here's a list of some Mexican Crockpot Recipes.

Crockpot Enchiladas

A fabulous dish my whole family loved!
 
Ingredients:

2 cans shredded chicken breasts
1 cup salsa
1 can enchilada sauce
24 oz can diced green chiles
4 cups shredded cheddar cheese
1 can cream of chicken soup
14 oz can sliced black olives
2 thinly sliced green onions
10 corn and flour tortillas

Spray crock pot with cooking spray. Mix chicken, salsa, enchilada sauce, green chilis, and soup in a bowl. Cut corn and flour tortillas into 1 inch pieces, mix pieces together. Place a layer of sauce mixture on the bottom of the crockpot. Place a layer of tortillas, then a layer of cheese. Repeat until all the sauce mixture has been used. Top with cheese, olives, and green onions. Cover and cook on low 6 hours. If desired, serve with sour cream, salsa, guacamole, and tortilla chips.

Chicken Tortilla Soup
Easily one of my favorite recipes - a fabulous "throw it in and let it cook" soup. See the notes below for and extra flavorful twist.
 
Ingredients:

1 ½ pounds shredded cooked chicken
1 drained 14.5 oz can diced tomatoes
1 - 10 oz can enchilada sauce
2 medium chopped onions
14 oz can chopped green chiles
2 cloves minced garlic
2 cups water
1 - 14 ½ oz can chicken broth
1 tsp cumin
1 tsp chili powder
½ tsp black pepper
1 large bay leaf
1 tbsp cilantro
1 ½ tsp southwest seasoning mix
1 - 10 oz pkg frozen corn

Spray slow cooker with cooking spray. Mix all ingredients in crockpot. Cover and cook on low for 6-8 hours or high for 3-4 hours. If desired, serve with sour cream and baked tortilla strips. For baked tortilla strips, preheat oven to 400*. Lightly brush both sides of tortillas with vegetable oil, cut into strips. Spread on ungreased cookie sheet and bake for 10-15 minutes.
 
Notes: For extra flavor, I make this in two steps. First, I put 1-1 ½ pounds of boneless skinless chicken breasts in a crockpot with 1 ½ cups water (or 1 can chicken broth) and Mexican seasonings. (A package of taco or fajita seasoning or southwest seasoning mix works well.) Cover and cook on high 3-4 hours. Remove chicken and shred for soup. Often, I will make 2-3 pounds of chicken to make soup along with shredded chicken tacos or fajitas.
 
Crockpot Taco Appetizer

Ingredients:
2 pounds ground beef
½ cup water
1 envelope taco seasoning
18 ounce can tomato sauce
1 undrained 14.5 oz can diced tomatoes
2 cups shredded cheddar cheese
1 cup sour cream
3 chopped green onions
1 cup sliced black olives
1 bag tortilla chips
 
Spray crock pot with cooking spray. In a skillet, brown meat over a medium flame. Drain and add to crockpot. Add water, taco seasoning, tomato sauce, and diced tomatoes. Cover and cook on low 6 hours. Serve with toppings such as cheddar cheese, sour cream, green onions, black olives, and other desired toppings.
