Cover and cook for about 1 to 1 ½ hours on a high setting. Stir occasionally to prevent sticking.

Using a food processor you will add the remaining flour, the brown sugar, baking powder, salt and nutmeg. Continue processing to blend well. Add the butter or margarine and continue processing until the mixture reaches a crumbly texture or consistency.

Add the heavy whipping cream and vanilla flavoring. Process until the mixture holds together well and then forms a soft ball of dough.

Spoon small amounts of the dough mixture evenly over the top of the assorted fruits in the crockpot, and then Dust the top of this dough mixture by lightly covering it with the cinnamon sugar spices.

Cover with lid and allow the dessert to cook for about 1 ½ hours on a high heat setting or until the dough is completely cooked. After cooking turn off the heat and allow the dessert to cool for about 30 minutes before serving to family, friends, or dinner guests. You can serve this dessert with ice cream or whipped topping.

What You Need

How to Make It

In a large mixing bowl, sift together the flour, baking powder, baking soda, and salt and then set to the side until needed.

Using an electric mixer, cream the shortening until it is light and fluffy. Gradually add the sugar, beating until creamy. Add beaten egg and continue creaming the mixture.

Add approximately a third of the flour and mix. Beat in approximately half the mashed bananas and then another third of the flour. Once you have this creamed with the mixer add the last third of flour and the other half of the mashed bananas and mix until well blended and then fold the nuts into the mixture.

Pour the banana bread dough into a pre-greased and pre-floured 2 pound metal coffee container and cover or use a prepared 2 ½ quart mold and cover. Add rack to the bottom of the crockpot and then the coffee can or mold into the rack.

Place crockpot lid to cover, but twist a bit of foil up to make a prop to place under one side of the crockpot lid to allow for the release of any excess steam.

Cook in crockpot set on high for approximately 4 to 6 hours. Cool on a wire rack for approximately 10 to 12 minutes before serving 4 to 6 people.

Converting Recipes for Your Crockpot

Crockpots vary but the low setting is typically around 100
degrees and its high setting is around 300 degrees.

Knowing this, it is fairly easy to convert most recipes for
use in your slow cooker. Some adjusments to cooking times
will be a judgement call on your part, but some simple
guidelines should help. Just follow a few simple rules
and you're on your way.

Crockpot

You should decrease the liquid since it does not boil away
in a crockpot.

Add cheeses and other milk product towards the end of your
cooking since they tend to break down if they are cooked
for too long.

Brown any ground beef before adding to the crockpot. It
will taste better and have better texture this way.

Add rice and noodles at the end of your cooking as well.
They will turn mushy if they are cooked too long. You can
cook these separately and then combine them when it's time
to serve.

Add your spices at the end.

If a stovetop recipe calls for 15-30 minutes, the crockpot
should cook it for 1 1/2 - 2 1/2 hrs at a high temperature
and 4 - 8 hours at its low temperature setting.

If a stovetop recipe calls for 35-45 minutes, the crockpot
should cook it for 3-4 hrs at a high temperature setting
and 6 - 10 hours at its low temperature setting.

If a stovetop recipe calls for 50 min to 3 hours, the crockpot
should cook it for 4 - 6 hrs at a high temperature setting
and 8 - 16 hours at its low temperature setting.

Following these guidelines will allow you to be
able to convert a stovetop recipe to its delicious
slow cooking counterpart!

Crockpot Pork Roast With Onions and Potatoes Meal Suitable For Diabetics, Too!

For all the busy cooks out there, here are a couple of recipes to help you put dinner on the table quickly, easily, and economically. With a crockpot entree of meat and potatoes, add a make-ahead green bean salad and you are ready to feed your family a nutritious dinner in no time at all.

PORK ROAST WITH ONIONS AND POTATOES

Crockpot

This recipe requires a 4-quart slowcooker for best results.

Approximately 3 lb boneless pork loin roast, trim off fat

1 large garlic clove, sliced
5 medium potatoes, washed, cubed, unpeeled
1 large onion, sliced
3/4 cup water (or tomato juice, if desired)
1 tbsp low-sodium soy sauce
1 tbsp cornstarch
1 tbsp cold water

Make slits in roast in insert slices of garlic. Place roast under broiler to brown. Put potatoes in slow cooker. Add 1/2 the onion slices. Place roast atop vegetables and cover with remaining onions. Combine water or juice with soy sauce and pour over roast. Place lid on slowcooker and cook on low about 8 hours. When ready to serve, remove roast and vegetables from cooker. Combine cornstarch and cold water. Add to the liquid in the slow cooker. Turn cooker to high until liquid is thickened. Slice meat and serve thickened liquid over the meat and vegetables.

This recipe has a few more protein grams than carbs so it is excellent for diabetics who want to enjoy some good old "meat and potatoes".

GREEN BEAN SALAD

2 cans French-style green beans, drained
1 small can of peas, drained
4 celery sticks, diced
1/2 medium bell pepper, diced
1 onion, diced
1small jar pimento

Dressing:

1 1/2 cup Splenda
1 cup cider vinegar
1 tsp salt
1/2 cup olive oil
1 tbsp water

In a medium mixing bowl, combine all the vegetables together.

To make the dressing, in a separate mixing bowl combine, all the dressing ingredients together. Pour dressing over vegetables, toss to mix well and refrigerate for several hours or overnight. One and a half hour before serving, drain vegetables. Note: This is a great dish to make ahead for convenience later.

Homemade Chili Crockpot Recipe

Have you been searching for the perfect Chili Recipe for your family? Don't have the ability to watch over it as it cooks? Use your crockpot for this scrumptious recipe. This recipe is not intended to be hot and spicy. If you like it hot, by all means, add more chili powder, chili pepper flakes or some hot sauce. You can also substitute the mild salsa for medium or hot as well. This recipe is great all year round but especially on a chilly winter day.

Ingredients:

Crockpot

1-1.5 lbs of 90% Lean ground beef

15 oz. can diced tomatoes

½ cup-3/4 cup Pace Mild Salsa or your own brand

15 oz. can kidney beans rinsed and drained

1 onion diced

1 green pepper diced

1 celery stalk diced

1 tbsp chili powder

1 tsp cinnamon

2 cups of water

¼ tsp of salt (if other spices have it, don't use it)

1 tsp of garlic powder

1 tsp black pepper

1 tbsp of minced garlic from jar or one clove minced

¼ tsp oregano

¼ tsp thyme

¼ tsp basil

2 tbsp of fresh minced parsley/cilantro (put in 30 minutes before completely cooked)

Topping:

¼ cup Grated cheddar cheese (2 tbsp for each bowl)

4 tbsp Plain yogurt or sour cream (2 tbsp for each bowl)

2 tbsp cilantro (for topping each bowl)

* If you like black olives, you could use 2 cut up olives for each

Recipe Serves 4

Instructions:

Brown the lean ground beef and drain the fat. Add a dash of garlic powder as you cook it. Then add in the green pepper and onion after meat is done to sauté. When lightly brown add to the crockpot with all other ingredients. Cook on low for 8hrs or cook on high for 4hrs.

Serve into large bowls and sprinkle some cheddar cheese (2 tbsp)for each one then add the plain yogurt. Top with cilantro and a dash of ground black pepper.

***Double the recipe and it fits into a 5 quart Crockpot***

Crockpot Yankee Pot Roast With Strawberry Pretzel Salad - Both Diabetic Friendly

Today's busy families require all the help they can get to have sit-down family meals. Here is a menu to help you out. This meal starts with an easy crockpot Yankee pot roast. Add Strawberry-Pretzel salad which serves as both a salad and dessert. And the best part is that it can be made ahead and kept in the refrigerator until serving time. This is a simple meal but is much better for your family than fast food.

YANKEE POT ROAST

Crockpot

2 1/2 - 3 lbs beef chuck roast
1 lb med baking potatoes, scrubbed, quartered
2 large carrots, cut into inch-size pieces
1 medium onion, quarted
2 bay leaves
1 tsp dried rosemary
1/2 tsp dried thyme
1/2 cup reduced-sodium beef broth

Trim excess fat from beef and discard. Cut into serving size pieces; sprinkle with salt and pepper. Combine vegetables and spices in slow cooker. Place beef pieces over vegetables. Pour the broth over beef. Cover and cook on low 8 to 9 hours or until beef is fork tender. Discard bay leaves before serving.

Note: 1 large parsnip, cut into bite size pieces may be added for more flavor.

Serves six. Per serving with parsnip: 494 calories, 48 g protein, 35 g carbs

STRAWBERRY-PRETZEL SALAD

2 cups coarsely ground unsalted pretzels
1/4 cup Splenda Brown Sugar Blend
1/2 cup melted butter
8 oz cream cheese
3/4 cup Splenda
1 small tub sugar-free whipped topping
2 small boxes sugar-free strawberry gelatin
2 cups hot water
2 pkgs (10-oz each) sugar-free frozen strawberries

Preheat oven to 350 degrees.

Mix pretzels, brown sugar blend, and butter; press into the bottom of a 9 x 13-inch pan. Bake 8 minutes. Allow crust to cool.

Blend cream cheese with Splenda; beat. Fold whipped topping into cream cheese mixture; spread over crust. Dissolve gelatin in hot water; add frozen berries. When gelatin begins to thicken, pour over the cream cheese mixture. Refrigerate until serving time.

Note: Graham crackers may be substituted for the pretzels.

How to Cook Juicy Lamb Shanks in a Crockpot

Lamb shanks are cut from the shoulder and arm of a sheep and they contain part of the round shoulder bone and some leg bone. Lamb shanks are covered in a thin fat layer and they do well when braised or cooked slowly in liquid, making them perfect for crockpot cooking.

Lamb is richly flavored and red in color. It is a good source of protein and vitamin B. If you prefer a mild flavor choose foreleg shanks. If you prefer a stronger flavor opt for rear leg shanks. Lamb can be braised or slow cooked in wine, broth or water. You can braise them in the oven if you do not have a slow cooker.

How to Choose and Store Fresh Lamb

Dark red lamb is likely to be less tender and less fresh than dark pink lamb, which is handy to know. Choose lamb shanks which have marbled white fat all over and deeply colored pink meat for the best results.

USDA-graded lamb graded "choice" or "prime" is recommended because these are superior cuts which will be flavorful and tender. If you are going to take longer than an hour to get the lamb from the butcher or store to your home, pack it on ice to keep it fresh.

Keep lamb in a plastic bag or container, away from other items in the refrigerator. You can refrigerate fresh lamb for up to five days in its original packaging. Alternatively you can freeze lamb shanks for up to nine months in freezer bags. If you want to do this, freeze it within three or four days of buying it.

Recipe for Slow Cooked Lamb Shanks with Wine and Herbs

This delicious lamb shanks recipe serves four to six people and it is really flavorful. The lamb is so tender and juicy. This is a simple crockpot recipe but it does have quite a long cooking time so you will need to start it first thing in the morning.

What you will need:

6 lbs lamb shanks 1 1/2 teaspoons salt 1 cup dry red wine 2 tablespoons olive oil 2 onions, cut into wedges 1 diced carrot 1 lb sliced mushrooms 1 tablespoon chopped fresh parsley 4 minced garlic cloves 1 tablespoon fresh chopped rosemary 1/2 teaspoon black pepper 1 teaspoon balsamic vinegar 3 tablespoons Dijon wholegrain mustard

How to make it:

Saute the lamb shanks in the oil in a skillet over a moderate to high heat. Turn them often, cooking them until they are browned all over. Transfer the lamb to a crockpot. Add the onions.

Mix together the mustard, salt, pepper, wine, vinegar, garlic, rosemary and parsley. Add the carrots and mushrooms to the skillet and cook, stirring constantly, for five minutes.

Transfer the vegetable mixture to the crockpot, then pour the wine mixture into the skillet and scrape up any stuck-on bits, bringing the mixture to a simmer. Pour it into the crockpot. Cover and cook for two hours on high, then six to eight hours on low.

Shredded Beef From My Crock-Pot to Yours

This is the easiest recipe ever and really quite versatile. Many of my simple recipes require a crock pot so make the investment now and you'll feel like you hired a personal chef. I love opening up my front door to the smell of a fresh cooked meal at the end of the day. This one takes less than 5 minutes before you head out in the morning and then a moment or two of shredding before serving.

My kids are picky eaters and they love this one. My husband is fine with left-overs but for those who aren't so lucky, the multiple uses for this meat will please even the biggest leftover snob!

Crockpot

Here's the recipe:

1 lb. stew beef (also fine with any kind of beef but the stew beef shreds easier)

1 can cream of celery (or really cream of anything!)

1 can crushed green chilis

(you can double or triple the recipe as long as it doesn't fill the crock pot. optimum is between 50-75% full)

Crock pot on high 6 - 8 hours (or more - just add some water to compensate for extra time). Shred apart with a couple forks.

TIP: you can even put the meat in the crock pot when it's frozen. Crock pots are just so darned accommodating to your circumstances!

Great on rice or noodles. I strongly suggest the new 90 minute rice from Uncle Bens. It's done in a flash and is perfectly sized for one dinner.

Also good on taco salad or in tacos. Make a double batch and freeze the rest for next time. Thaws perfectly.

Easy Crockpot Recipes With Turkey Breast

Chicken stew recipes and beef casseroles are very nice to come home to at the end of a busy day, but what about the times when you fancy something a bit different? Turkey breast makes a welcome change from the more common meats and it is very nutritious.

Unless you are cooking a thanksgiving dinner for the whole family you will probably not want to buy a whole turkey, so choose a turkey breast instead. Turkey breast can be fried, baked or poached, but crockpot cooking makes it really juicy and flavorful.

Tips for Making Slow Cooked Turkey

A small or medium sized breast is preferable to anything too thick because it will cook better and more evenly. A frozen turkey breast can take four days to thaw so you might want to plan your easy crockpot recipes with turkey breast well in advance. The turkey needs to be defrosted before you start cooking it.

Sometimes when you buy turkey breast, there will be a package of gravy inside, which you will need to remove before adding the meat to the slow cooker. Rub butter all over the turkey breast before you add it to the crockpot, and then add vegetables and some kind of liquid. A can of chicken or turkey broth would work well, or some turkey stock with herbs.

Turkey takes about nine hours to cook in the crockpot so as well as planning several days for it to thaw out, you will need to plan a whole day to let it cook. The size and weight of the turkey breast affects the exact cooking time. Cooking turkey is similar to cooking chicken. When the turkey breast is white all the way through with no pink juices, it is done.

Other ingredients which go especially well with turkey include cranberries, bacon, pineapple and all kinds of vegetables. You can use turkey in lots of different easy crockpot recipes, whether you want to make something hot and satisfying, something exotic and international or a traditional family favorite meal. Turkey is not expensive and it is lean and healthy. Most people very much enjoy the flavor.

The crockpot home cooker hit the market in 1970 and sales have been going strong ever since. This product has singlehandedly changed the way people prepare meals. Current models allow the cooking time, and even recipes, to be pre-programmed. A crockpot represents the ultimate in convenience when cooking entrees, vegetables, and other types of food.

Cooking vegetables in the crockpot enables the chef to whip up dishes like cheesy broccoli and cauliflower, candied sweet potatoes, and asparagus casserole. There are hundreds of vegetable recipes available online and in cook books for slow cooking methods. Quick and Easy Part 11 - Delicious Chicken Drumstick Crock Pot Stew

The Crock Pot is not only a wonderful time saver but some slow cooked dishes are very tasty when compared with the same dish made other ways. This recipe makes a delicious chicken stew using only the drumsticks. You could use chicken thighs or leg quarters, or even the whole chicken if desired. The recipe would make a delicious vegetarian dish if you leave out the chicken and perhaps add some spices to give it more flavor. The preparation time for this crock pot is short It requires only cutting up the vegetables and doing a fast skillet browning on the drumsticks (for added flavor).

Ingredients
3 large chicken drumsticks (about 1 1/2 lbs)
2 tablespoons olive oil
2 stalks of celery, chopped
2 medium carrots, sliced on the bias
1 bell pepper, seeded and cut into strips
2 medium potatoes, peeled and cubed
2 medium onions, peeled and cut into quarters
1 clove of garlic, sliced
1 can of cream of mushroom soup
1/2 teaspoon salt
1/8 tsp pepper

Crockpot

Instructions

1. - Brown the chicken drumsticks on all sides in the olive oil in a skillet.
2. - Remove from the skillet and scrape all of the browned bits from the skillet bottom and
put both into the crock pot.
3 - Add the other ingredients and stir to distribute the cream of mushroom soup as evenly as possible.
4 - Set on high for 4 - 5 hours. Although I haven't tried this recipe on low, I'm sure 6-8m hours would work out fine.
This recipe was served over rice and it was scrumptious! Yous could use any kind of pasta but because the liquid is thin cooked rice is probably best. Hope you like it!

Crockpot Cooking's 10 Essential Tips

If you're new to crockpot cooking and have decided you want to give it a try -- whether it's to save time, money, or just to add some variety to your cooking methods -- then you may want to read up on the essential crockpot cooking tips.

For meat dishes, defrost meat completely -- especially if you're using roasts. Why? The center of the meat may encourage bacterial growth if it remains cool long enough. You can thaw food overnight in the refrigerator or use the microwave just before adding to the crockpot. You may need to cut and trim the meat before you place it into the crock. It's best that roasts and other large cuts fit into the crockpot, but if not, trimming is better than stuffing! If taste and health are important, get rid of extra fat and skin also. This will decrease the fat content and take away any oily flavor. If veggies are part of the recipe, cutting meats and vegetables the same size will ensure even cooking. Before adding anything, spray your crockpot with cooking oil as it will make cleaning much easier. If your recipe is a mixture of meat and root vegetables -- such as potatoes, carrots and onions -- put vegetables in the bottom of the pot and then place the meat on top of the vegetables. This will enable more even cooking as these root vegetables usually cook more slowly than meat. Now if you use vegetables to garnish and to add some color to your dish -- such as red or green peppers, herbs or tomatoes -- then these would be added on top when the cooking is almost complete. Now that you've decided how to layer and if to layer, you're ready to fill the crock. Most crockpots are about 1/2 to 2/3rds full for all recipes. Check the guidelines that come with your crockpot as it will give you a recommended capacity level. If you're adapting one of your recipes from the oven to the crock, you may have to reduce the amount of liquid in a recipe. Crockpots retain their moisture much better than other cooking methods. Crockpot recipes usually take about 7-9 hours on the low setting. So plan accordingly. Temperatures can range from about 170-300 degrees. Do not remove the lid while the food is cooking, unless it's specifically required -- such as adding garnish or dairy products at the end. If you do, the heat will escape which will reduce the temperature and add about another 20 minutes to the cooking time. General rule: One peek and add 20 more minutes to wait, two peeks and 40 more minutes to wait etc... Add any dairy products -- creams, cheeses -- during the last hour of cooking. And if these are used to thicken sauces at the end of cooking, you may want to turn up the heat setting. Buy a crockpot cooking book! This may be the best tip as you'll be given recipes with step by step guides. The more you follow the specific crock recipes, the easier it will be to adapt your own.

Ten Tips For Using Your Crockpot

In today's busy world, more and more people are using crockpots to prepare the families evening meal. I know some folks who have two crockpots. They use the large one to prepare meats or poultry and they use the small one to prepare side dishes and desserts.

There are many tips to make using your crockpot even easier:

Crockpot

1. Don't lift the lid to take a peak. I have read over and over that if you do lift the lid, you need to add 20 minutes cooking time.

2. Vegetables and potatoes take longer to cook in a crockpot. It's always suggested that you place potatoes and vegetables on the bottom, layering the meat and sauces on the top.

3. Regular milk can curdle in the crockpot due to long cooking times. Consider using either canned milk, or adding the milk during the last 30 minutes of cooking. Since you'll be lifting the lid, add a bit of cooking time to the recipe directions.

4. For recipes that call for ground beef, brown the meat before adding it to the crockpot. It will have a better texture. To confirm you discard all of the grease, pour the meat through a strainer first. Of course making a meat loaf would be the exception to this rule.

5. Trim as much fat off of meats and chicken as you can. Due to long cooking times, the fat melts right into the sauces and adds a bitter taste to the finished product. If cooking poultry remove the skin to avoid the melting fat.

6. Make sure to defrost all meats and poultry prior to putting them in the crockpot. Cooking times are based on defrosted meats.

7. Very little liquid boils away in a crockpot. You can thicken your sauce by removing the cover during the last 30 minutes of cooking. If you still find the sauce is too thin, pour the sauce into a sauce pan and add a bit of cornstarch.

8. Make sure your crockpot is filled at least half way. This prevents both undercooking and over cooking. Do not overfill the crockpot, remembering that very little liquid boils out.

9. Spray your crockpot with non stick cooking spray before adding the ingredients. This will help prevent sticking.

10. If you are using less expensive cuts of meat, consider cooking them in the crockpot as the longer cooking times help make even the toughest pull apart tender.

This is a steamed pudding recipe. It has a consistency that falls close to being a pudding and a cake, so then it is a pudding cake. Recipe for Spicy Pudding Cake

What You Need

6 cups water for the crockpot to steam 1 cup butter or margarine 1 cup sugar 4 beaten eggs 1 cup un-sulfured molasses ½ teaspoon ginger ½ teaspoon cinnamon 1/8 teaspoon nutmeg 2 ½ cups flour 1 teaspoon baking soda 1 cup buttermilk

How to Make It

Add the 6 cups of water to the crockpot and then place on a medium setting and cover with lid to hold heat and steam.

Prepare a crockpot cake pan, or a pudding mold or even a metal coffee can by greasing and flouring it. Remember to seal it tightly with a lid or cover it with some aluminum foil after pouring in the pudding cake batter.

Using a large mixing bowl and an electric mixer add the butter or margarine and the sugar and cream together.

Next, you will add the beaten eggs slowly and continue creaming this mixture.

To this mixture, stir in the molasses, ginger, cinnamon, nutmeg, flour, and buttermilk. Blend well.

Using 1 teaspoon of hot water, dissolve the baking soda and combine well with the pudding cake batter.

Pour batter into your crockpot cake pan, or a pudding mold or even a metal coffee can and cover tightly before placing it into the rack in the crockpot. Allow it to steam for 4 to 5 hours or until you can insert a knife and have it come out clean.

What You Need

1 cup sugar ½ cup butter or margarine 1 ½ cup water 3 ½ Tablespoons flour 1 teaspoon lemon, orange or vanilla flavoring

How to Make It

Using a small mixing bowl, you will cream together the butter or margarine, and the sugar.

Using a small saucepan add the water and bring to a boil. Slowly add the flour and mix until it reaches a creamy consistency. You may add a bit more flour if needed but no more than about a ½ teaspoon.

Remove from heat and then stir this mixture into the sugar mixture. Add the flavoring and mix well.

After completing simply spoon some sauce onto the pudding cake for a tasty treat. You can serve it cold or hot and everyone will be coming back for seconds.

Recipe for Creamy Orange Crockpot Cheesecake

What You Need

3/4 cup cookie or graham cracker crumbs 2 Tablespoons sugar 3 Tablespoons butter, melted 16 ounces cream cheese 2/3 cup sugar 2 eggs 1 egg yolk 1/4 cup frozen orange juice concentrate, thawed 1 teaspoon orange or lemon zest 1 Tablespoon flour 1/2 teaspoon vanilla

How to Make It

Mix the crumbs with the 2 tablespoons of sugar, and then add in the melted butter. Mix until the crumbs are moistened evenly. Pat the crumbs into the bottom of a 7 inch springform pan.

In a mixing bowl, cream the 2/3 cup sugar and cream cheese together until it is smooth. Add the whole eggs and the yolk. Beat for approximately 3 minutes on medium with a hand held mixer. Beat in the vanilla, flour, zest, and orange juice. Beat for 2 more minutes.

Pour the batter into the prepared crust. Set an aluminum foil ring or a rack on the bottom of your crockpot. Set the springform pan on top of this so it does not sit right on the bottom of your cooker.

Cover the crockpot and cook the cheesecake on high for 2-1/2 to 3 hours. Turn the crockpot off and let the cheesecake rest inside the closed pot for another hour or two until it is cool enough to remove.

Let the cheesecake finish cooling before removing the springform pan sides. Chill before serving.

Slow Cooker Beef Short Ribs and Vegetables in Red Wine

Beef short ribs were a bargain meal during my graduate school days. How things have changed. My local butcher shop stopped carrying beef short ribs because they had gotten so expensive. "Most of the short ribs are being shipped to the Orient and this drives the price up," he explained. "Now that the price has dropped a bit I'm carrying them again."

When the weather turns cold I crave "stick-to-the-ribs" meals like beef short ribs. The ribs, a combination of lean meat and fat, are cut from the end of a standing rib roast, and this is what makes them so tasty. Many cultures have recipes for beef short ribs.

The Polish fix beef short ribs in a sauce made with bacon, onions, and caraway seeds. Texas short ribs are a different thing all together. "The Complete Round the World Meat Cook Book" by Myra Waldo contains a recipe for Texas short ribs made with bottled chili sauce. The book also has a recipe for deviled short ribs.

But I didn't want caraway seeds, or chili sauce, or lots of spices in my short ribs, so I braised them in red wine. For a more complete meal I added onions, tomatoes, and carrots to the sauce. You may bake the covered short ribs in a 325 degree oven for two hours if you don't have a slow cooker.

INGREDIENTS

3 1/2 pounds beef short ribs

2 tablespoons extra light olive oil (more if you need it)

3/4 cup regular flour

14 1/2-ounce can of no salt diced tomatoes and juice

2 cups red wine (cabernet or hearty burgundy)

3 inch-wide pieces of orange zest

1 teaspoon dried thyme leaves

1/2 teaspoon freshly ground pepper

1 teaspoon prepared chopped garlic

1 cup frozen pearl onions

3 carrots, peeled and cut into one-inch chunks

3 tablespoons gravy flour

METHOD

Ask the butcher to cut the short ribs in half. Remove extra fat from ribs with a boning knife. Dredge the short ribs in flour. Pour olive oil into a cast iron skillet. Brown the short ribs, front and back, and them set aside. Add the red wine to the skillet. Cook over high heat for two minutes to evaporate the alcohol.

Pour canned tomatoes and juice into the slow cooker. Add orange zest, thyme, pepper, and garlic.
Transfer short ribs to the slow cooker. Pour the red wine over the ribs and stir with a rubber scraper. Sprinkle pearl onions and carrots over the short ribs. Cover and cook on low for four hours. Using a slotted spoon, remove ribs from cooker and set on a large plate. Remove and discard orange zest.

Pour the sauce into a large pan and carefully skim fat with a spoon. Put gravy flour into a cup and, stirring constantly, add a little cold water. Pour this mixture into the sauce, stirring constantly. Cook over medium heat until sauce thickens. Return the short ribs to the sauce, cover, and cook over low heat for five minutes. Serve immediately with ciabatta bread and a green salad. Makes 6 generous servings.

Best Ever Weight Watcher Classic Crockpot Beef Chili and Skillet Cornbread

I am a real fan of chili and cornbread and I can eat this meal any of the year. Here is a Weight Watcher version of this spicy and delicious meal.

Weight Watcher Classic Crockpot Beef Chili

Ingredients

1 lb. lean ground beef (10% or less)

2 garlic cloves, finely chopped

2 tbsp. chili powder

1 tsp. ground cumin

1 can (28 oz.) crushed tomatoes

1 can (15 oz.) red kidney beans, rinsed and drained

1 sweet onion, chopped

1/4 cup canned diced chilies

2 tbsp. tomato paste

Oregano sprigs for garnish

Instructions

1. In a large nonstick skillet brown beef and garlic over medium heat, stirring occasionally to break up meat. Drain excess fat. Add chili powder and cumin and stir to combine.

2. Combine tomatoes, beans, onion, chilies, and tomato paste in crockpot. Stir in beef mixture. Cover and cook on High until flavors are blended, 4 - 5 hours. Serve garnished with oregano.

Best Ever Weight Watcher Skillet Cornbread

Ingredients

1 cup whole wheat flour

4 tsp. baking powder

1 tsp. salt

1/2 cup yellow cornmeal

1/2 cup white cornmeal

1/4 cup unsweetened applesauce

2 tbsp. vegetable oil

1 cup buttermilk

1/4 cup honey

1/3 cup egg whites

2 tbs. fat free egg substitute

Instructions

Sift flour, baking powder, and salt.

Add cornmeal and stir until blended.

Add remaining ingredients and stir until just mixed.

Pour into 9 inch cast iron skillet prepared with cooking spray.

Bake at 350 degrees for approximately 30 minutes or until golden brown.

Quick Tips 

Spray crockpot with cooking spray for easier cleanup.

This meal is very filling but if you aren't quite satisfied you can add a garden salad.
