Save Time and Eat Healthy With the Crockpot

The crockpot can be the perfect tool to use for saving time in the kitchen while still eating healthy, delicious meals. Simply add the ingredients of your choice, turn on the crockpot, leave the house for the whole day if necessary, and then return to a home filled with the most delectable aromas.

Salsa crockpot chicken is one incredibly easy recipe to make and uses only two inexpensive ingredients; the chicken and the salsa. Use three pounds of boneless, skinless chicken thighs and a 16-ounce jar of the salsa of your choice. Combine both together in your crockpot and cook on the low setting for six to eight hours or until the chicken is tender and cooked thoroughly.

Alternatively, if you want to use boneless chicken breasts instead of thighs, adjust the cooking time to five to six hours on the low setting or until the meat is cooked completely.

If you want a thicker salsa chicken dish, take the lid off the crockpot and turn the setting to high for the last half hour or so. Adding in a few tablespoons of cornstarch and a quarter cup of water to the mixture will also help to thicken the dish.

For a low fat and low sodium dish, try combining chicken, apples, chicken broth, and seasonings in the crockpot for a delicious creation.

How to Make Chicken and Apples in the Crockpot

What You Need

6 ounce can frozen apple juice concentrate, thawed
2 teaspoons curry powder
1/8 teaspoon ground nutmeg
2 tablespoons butter
1 onion, finely chopped
2 garlic cloves, minced
Salt and pepper to taste
6 boneless, skinless chicken breasts
3 Granny Smith apples, peeled, cored, and thickly sliced
1/3 cup chicken broth
2 tablespoons cornstarch

How to Make It

Combine the thawed apple juice, the curry powder, and the nutmeg in a small bowl.

In a small saucepan, melt the butter, onions, and garlic and heat until the onions are soft and nearly translucent. Put the onion mixture in the bottom of the crockpot.

Add each piece of chicken to the juice mixture, coating each piece thoroughly before adding to the crockpot. Next, add a few pinches of salt and pepper to taste.

Put your crockpot on the low setting and cook the chicken for five to six hours, or until almost cooked through.

Add the apples and cook all ingredients on low for another 45 minutes to an hour or until the chicken is thoroughly cooked and the apples are nice and tender.

In another small bowl, mix the chicken broth and cornstarch together and stir the mixture into the ingredients in the crockpot. Cover the crockpot and cook on the high setting until the sauce is thicker, usually about 10 to 15 minutes. You will have to stir the mixture occasionally so do not worry about removing the crockpot's lid.
