Planning Meals Ahead Of Time Is Like Adding Hours To Your Day

Meal planning and bulk cooking are both wonderful techniques you can utilize and modify to fit your families needs. The idea behind this is simple. The principle is that you cook and or prepare your meals ahead of time and then preserve them by either freezing or fridgerating them. Also, meal planning you can cook one large meal and get 2-3 other meals out of it! The key here is to make every meal you cook count!
When you are going to prepare a family favorite, double, triple, even quadruple the recipe if it will keep in the freezer. Sound wonderful doesn't it? Why not give yourself a much-needed break -- cook ahead today so you can relax tomorrow!
The first step in meal planning is always the most challenging. To make it less challenging I suggest that you grab the following supplies: Pen, paper, your personal recipe collection or your favorite cookbook and a comfortable chair.
Start by writing down a list of your favorite meals and plan on preparing a grocery list that will coincide with your list. Now, since we are talking bulk cooking here - if you normally would serve up one pot of spaghetti - plan to serve 2 (that would mean that you will have to double the recipe - so be sure to alter your shopping list accordingly) - It will take the same amount of time to cook - just a little extra planning is needed.
Next you can use a blank calendar and simply write the meals down on the day you will serve them. I personally post my meal plan up on my refrigerator for the entire house to see. This also helps to prompt me for the next day of meals that will be served.
The most important tool in meal planning and bulk cooking is your freezer. If you have a small freezer, don't fret; you can fit many meals in that small freezer space - it will just call for a little more creativity on your part. With the use of freezer bags, that you can stack flat and the use of some freezer proof containers you will be surprised at how many meals your freezer can hold.
Here are a few essential and widely used meal planning techniques and tips:
Multi-recipes ~ Using this strategy requires you to cook many main course meals in one day. For instance, on a Sunday morning you could prepare a roast in your Crock pot, some spaghetti on top of the stove, a baked Chicken in the oven and perhaps a nice salad. You also could quarter and boil some potatoes, cook some rice and some veggies (either fresh or canned). What you now have is 5 different meals that you can use throughout the entire week. You can eat one of the meals that very evening and you could Freeze or refrigerate the rest. This technique works very well for some people and it provides a wide variety of dishes that you can use. I personally use this technique from time to time. I usually do my multi-recipe cooking on a Sunday and it can take up to 5 hrs to complete but what you are left with is 2 weeks worth of food that you can enjoy. And notice that the meals that I use in my Multi-recipe list are easy to prepare.
One Cook Wonder ~ With this strategy you would cook one main course recipe that can be used for different meals. For Instance, let's say you just baked a large turkey. You could slice some of the turkey off and serve the breast with gravy, dice some of the turkey and prepare a turkey gumbo and use the rest for either a soup or turkey salad. Mind you, you do not have to prepare all of those meals on one day. After the Turkey has been cooked and cooled, you can freeze and refrigerate the turkey that you cut off the carcass and prepare your other Turkey related meals at a different time.
Quick and Easy meals ~  Be sure to incorporate those quick and easy meals into your planning process. If your family loves Sloppy Joes - cook up the sloppy joe meat in bulk and freeze it - then all you need to do is defrost the meat, grab some buns and viola.
What about Hamburger Helper? Why not cook 2-3 boxes of it, separate it into 3 separate large containers and freeze them. That idea alone allows you to prepare 3 meals in just 30-minutes.
Designate a meal for a particular night ~  Every Friday night in my house is either Pizza or burger night. The idea here is to choose any night of the week and just designate a meal to go with that night. I always make sure that I have plenty of Frozen Pizza's with a variety of toppings on hand in my freezer. The same goes for those Turkey burger patties (my family doesn't eat much ground beef). The idea behind this process is that you now have one night's meal already planned. You can also stock up on that meal when the products are on sale. If you see Frozen pizza's being sold in bulk, grab them up!
Love your leftovers ~  This is one of my favorite parts of meal planning as it allows you to use your imagination. At least every other week or so be sure to go through your refrigerator and take inventory of what you have in there. When you combine 2-3 leftovers, you may find that you have a meal right there. You can use left over pasta from spaghetti to prepare a pasta salad, leftover spaghetti sauce and just a few pieces of chicken can be a wonderful dish to top with cheese and place in the oven. Again, with a little imagination - you can make your leftovers work for you!
Use the sales paper ~ everyone loves a good sale and I use the sales paper to help me in my meal planning. When I see our Family favorites on sale - instead of buying one, I will purchase 3-4 of the same items and simply come home and prepare the meals or freeze the food that I purchased. My family and I love Chicken. When I spot whole chickens on sale I've been known to purchase up to 5-6 at a time. Keep in mind that I have a family of 6 and in my family of six; there are 3 teenagers (and you know how much they can consume). By shopping like this, I actually save hundreds and hundreds of dollars a year in food alone!
Helpful supplies
Labels/freezer bags/Freezer-proof containers: Be sure that you have all of your freezing and refrigerating needs on hand. When storing food in freezer safe containers be sure to place a label on the container with the name of the meal and the date the meal was prepared.
Crockpot: This handy appliance is my best friend in the kitchen. When using a crockpot you literally prepare the meal, place it in the crockpot, Set it & Forget it. It is a hands free cooking experience. I cook whole chickens in my crock pot and then slice the chicken up to freeze and use for sandwiches, enchilada's, chicken salads, chicken soup, chicken stew.. as you can see - the possibilities are endless.
As you can see, meal planning is a money, sanity and time saver - what else could a busy mom ask for?

How to Make Baby Food in a Crockpot

Commercial baby food seems to be the baby food of selection but it contains varied preservatives and costs more than the homemade equivalent. If you have a slow cooker and a blender, you can make your own. Buy good capability ingredients for production baby purees, especially if you are going to freeze them.

A lot of population make crockpot recipes commonly but still buy canned products for their baby. However, homemade recipes beat store-bought food hands-down every time, either that is baby food or food for the grownups.

If you have never thought about using the slow cooker to make purees for your tiny one, it is a great time to start experimenting. All you need is a slow cooker, some vegetables, some water, and a blender. You can use any vegetables you like and freezing ones work as well as fresh ones. You will already know which vegetables your baby seems to prefer.

Easy Carrot Puree

Most babies like carrots and you can get organic ones. This is a good formula to make a lot of, because it freezes well and slow cooks well too. Wash your carrots and peel them to remove the skin as well as any traces of pesticide residue and bacteria, which might be lurking on it.

Put the peeled carrots in your slow cooker and add adequate water to come halfway up them. Cook on high for three or four hours, or until you can pierce the biggest carrot with a fork.

Process them in a food processor or blender and do not worry if you get some of the water in with them. When then blender is three quarters full with carrots, add some of the cooking water and process them until the texture is smooth.

For older babies, you might want a chunkier consistency. This aggregate will keep in the refrigerator for a integrate of days or you can freeze it in tightly sealed, freezer-safe containers. Thaw the carrot puree by retention the box under warm running water or leave one in the refrigerator overnight.

Other Vegetable Baby Foods

You can make baby purees with other vegetables too. For a turn to the carrot puree, wash some sweet potatoes and yellow squash. Cut them into chunks and add them to the crockpot with some freezing green beans.

You can blend the puree with an immersion blender, a food processor, or a conventional blender. You might need to add some water and, if so, add it slowly so you do not accidentally add too much. You can freeze the resulting puree in ice cube trays. When the cubes are set, you can empty them into freezer bags. Alternatively, use tightly sealed, freezer-safe plastic containers.

What You Need

How to Make It

Measure out the 2 tablespoons of butter or margarine to soften to room temperature about 20 minutes before preparing time. Lightly coat your crockpot with cooking spray and then set aside until needed.

Peel and slice the apples and then place them in a medium to large size mixing bowl. If you prefer you can also dice the apples into smaller pieces and then place them in the mixing bowl. Cutting smaller pieces are beneficial while feeding small children and older adults.

Sprinkle in the cinnamon, nutmeg, and allspice and toss with the apples until well combined. Place this blend into the prepared crockpot and set aside until needed.

Using the same mixing bowl you will couple the milk, the two tablespoons softened butter or margarine and sugar. Beat well to couple and then add the eggs one at a time while beating thoroughly to combine. Stir in the vanilla flavoring and a ½ cup biscuit mix. Blend to mix well and then spoon this blend over the spiced apple blend in the slow cooker.

Using a clean dry mixing bowl you will add the remaining cup of biscuit mix and the brown sugar and combine. Cut in the cold 3 tablespoons butter or margarine until the blend reaches the consistency of crumbs. Sprinkle this sweet topping over the spiced apple layer evenly.

Cover with the lid and then cook for 6 to 8 hours on low or until the apples are soft.

1 Celery - chop

1 Green pepper - chop

1 Med Onion - quartered

4 tablespoons Tapioca quick-cooking

4 Chicken breasts- boned - cut

8 ounces Pineapple chunks unsweetened

1/3 cup Dark brown sugar - packed

1/3 cup Red wine vinegar

1 tablespoon Soy sauce

1/4 teaspoon Garlic powder

1/4 teaspoon Ginger - ground Rice -- hot cooked

Crockpot: Put vegs.in lowest of crackpot. Sprinkle tapioca over vegetables. Place chicken atop vegs. Merge all other ingreds. Except rice in a small bowl. Pour over chicken. Cover crackpot and turn to low and cook for 8-10 hours. Before serving make rice. Serve over rice. Leftovers can be reheated in microwave.

Oven: Put vegetables in lowest of a greased pan. Sprinkle
vegs with tapioca. Add chicken to pan. Merge all other ingreds. Except rice in a small bowl. Pour over chicken. Cover pan tightly with foil. Bake in 300 deg. Oven for 2 hours. Before serving make rice. Serve over rice.

2 Med Onions; peeled, sliced

3 lb Chicken; cut up

2 c Garlic; minced

1 c Tomatoes; 16 oz

1 c Tomato sauce; 8 oz

1 ts Salt

1/4 ts Pepper

1/2 ts Dried basil; crushed

1 Bay leaf

1/4 c Dry white wine

Spaghetti; cooked

Place onions in slow cooker. On top of onions place chicken pieces,
garlic, tomatoes, tomato sauce, salt, pepper, herbs and wine. Cover
pot.

Cook on low 6 to 8 hours, or high 3 to 4 hours. Serve chicken

If you're new to crockpot cooking and have decided you want to give it a try -- either it's to save time, money, or just to add some range to your cooking methods -- then you may want to read up on the principal crockpot cooking tips.

Now that you've decided how to layer and if to layer, you're ready to fill the crock. Most crockpots are about 1/2 to 2/3rds full for all recipes. Check the guidelines that come with your crockpot as it will give you a recommended capacity level. If you're adapting one of your recipes from the oven to the crock, you may have to sacrifice the number of liquid in a recipe. Crockpots preserve their moisture much best than other cooking methods. Crockpot recipes ordinarily take about 7-9 hours on the low setting. So plan accordingly. Temperatures can range from about 170-300 degrees. Do not take off the lid while the food is cooking, unless it's specifically required -- such as adding embellishment or dairy products at the end. If you do, the heat will flee which will sacrifice the temperature and add about someone else 20 minutes to the cooking time. Normal rule: One peek and add 20 more minutes to wait, two peeks and 40 more minutes to wait etc... Add any dairy products -- creams, cheeses -- during the last hour of cooking. And if these are used to thicken sauces at the end of cooking, you may want to turn up the heat setting. Buy a crockpot cooking book! This may be the best tip as you'll be given recipes with step by step guides. The more you succeed the specific crock recipes, the easier it will be to adapt your own.

Fried Chili Chicken: Recipes to Die For!

When it comes to delicious meals, you can have healthy too! Today more than ever, delicious foods are geared at providing healthy benefits in a scrumptious dish that will be a favorite for years to come. Fried chili chicken is a delicious blend of healthy chicken spiced to perfect without the unnecessary additions of added fat or sugar.

Instead of depending on additives that enhance the flavor of the meal, this is one meal that takes simple ingredients and makes them into one dish easy to fix and enjoyed by everyone. Take a closer look at why this is a favorite in my house!

Fried Chili Chicken

Ingredients:

2 tbsp flour
¼ tsp cayenne
1 tsp chili powder
½ tsp ground cumin
½ tsp dried oregano
½ tsp garlic powder
½ tsp salt
4 chicken breasts, cubed
3 tbsp vegetable oil
1 onion, chopped
2 cups chicken broth
¼ cup chili powder
1 tbsp hot New Mexico chili powder
1 tsp ground cumin
1 tsp dried oregano
20oz can pinto beans, drained

Directions:

In a plastic bag: mix the flour, cayenne, chili powder, cumin, oregano, garlic powder, and salt and toss together. Add the chicken cubes and shake until evenly coated with the spice mixture.

Heat 2 tbsp of oil in a large skillet and cook the chicken, turning as needed until chicken is lightly browned, set aside. Heat the remaining oil in the same skillet and sauté for 5 minutes. Put the chicken & onion mixture in a large saucepan with the chicken broth.

Add all remaining ingredients - except pinto beans - bring to a boil, reduce heat and simmer for 1 hour (add water if needed). Add the beans, taste and adjust seasonings if needed.

Hamburger Meat in the Crockpot

I happen to be a ground meat lover. While today I use mostly ground turkey, I still love my ground meat recipes. I own a cookbook called 365 Ways to Cook Hamburger. I love that cookbook. When I began using my crockpot more often, I began to look for ways I could turn many of my beloved recipes to crockpot recipes.

Since I began using ground turkey, one of my beloved dishes is meatloaf. I rotate making it in the oven and making it in the crockpot.

Crockpot

I use in the middle of two and two and a half pounds of ground turkey. Many citizen mix ground meats. I just use the turkey. Your consistency will be different if you use ground lamb, ground pork or ground beef. All are fine to use, you'll just taste the difference. The ground turkey doesn't all the time hold together from the crockpot, but the taste is wonderful.

In a large bowl, mix the ground meat with all of the following:

1 egg
1/4 cup ketchup
1/4 cup water
1 tablespoon Worchester sauce
1 tablespoon brown sugar
1 cup breadcrumbs
Diced onion to taste - My daughter does not like real onion so I use a few spoons of onion flakes.

After mixing together, shape into a ball that will fit into your crockpot. As I mentioned above, this does tend to fall apart a bit, so line your crockpot with foil. Fit the ball into the foil and cover. Cook on low about eight hours.

We will often add a quarter cup to a half cup of Parmesan cheese to the mixture. We love the taste of the cheese in the meatloaf.

When I was a child growing up, my mom used to make sweet and sour meatballs that we all begged her to make often. It was the simplest of recipes. She combined grape jelly and chili sauce to make the sauce. Then she'd boil it down twice before serving. I found a way to turn this method to my crockpot.

Since I start with ground turkey, I add breadcrumbs to the meat to help hold it together. I use in the middle of one and two pounds of meat, usually closer to the two pound mark. In a bowl, I mix a sixteen ounce jar of grape jelly and a twelve ounce bottle of chili sauce. I form the meat balls and roll them in the mixture. Then I place the meatballs in to the crockpot. Once I've coated the last meatball, I pour the sauce into the crockpot, over the meatballs. Cover and cook on low six to eight hours. These are astounding over brown rice. The sauce soaks in the rice and it's just delicious.

Three Crockpot Chicken Recipes

My crockpot gets quite a bit of use. In the winter, it's fabulous to have a hot meal ready after we all get home in the evening. And in the summer, it's great to not have the oven going while the hot days. I'd like to share some of our beloved chicken crockpot recipes with you:

Chicken and Veggies in the Crockpot

Crockpot

4-6 pieces of chicken
16 ounces of frozen veggies
1 can cream of celery soup
8 ounces of shredded cheese

There are many combinations for this recipe. If you're using chicken breasts, use 3-4 of them. If you use thighs, use 4-6 of them. When I buy the frozen veggies, I look for the compound pack of broccoli, cauliflower and carrots. You can also use artichoke hearts or asparagus. It absolutely depends on the flavors you want. If you prefer fresh veggies, chop up celery, carrots, onion, broccoli, cauliflower and even onions.

I'm not a mushroom fan, so I don't use cream of mushroom. Play nearby with the many cream soups. Try cream of celery or cream of broccoli or any other house favorite. When it comes to the cheese, I try to use a compound of cheddar and Monterey jack. I think this provides a fabulous taste. Other citizen absolutely like the taste of swiss cheese or Italian blend cheese.

Place the chicken in the crockpot. Mix together the remaining ingredients and pour over chicken. Cook on low five to six hours. For a great finish, place a bit more cheese on top ten minutes before serving. Our other beloved crockpot chicken method is chicken and stuffing:

1 box of stuffing mix
4 -6 pieces of chicken
2 cans cream of chicken soup

Follow the container directions on the stuffing mix to moisten. Instead of putting the stuffing into a casserole dish, spread it into your crockpot. Place the chicken on top of the stuffing. Now pour the soup on top. Depending on the size of your crockpot, one can of soup might be enough. If you do use two cans of soup, consider using one can cream of chicken soup and one can cream of broccoli soup.

Cook six to eight hours on low.

The last method I'd like to share with you is chicken and fruit. I call it chicken and fruit because you can use whatever fruits you like:

4-6 pieces of chicken
1 can of fruit
1 onion, quartered
Plain chicken broth (optional)

We have tried this with peaches, with apricots and with pineapple. Each method came out great. Place the chicken in the bottom of the crockpot. Put the onions nearby the chicken. Place the fruit on top along with the liquid from the fruit. If you do not have enough liquid from the fruit add in plain chicken broth until you have the correct amount of liquid. Cook on low six to eight hours. I hope your house enjoys these dishes as much as my house does.

My grandmother was a baker - not by profession, but by habit. She was a country woman at heart and she baked a few pies every day either she needed to or not.

I all the time loved her pies, but I indeed miss her apple dumplings. To me, they were the ultimate comfort food, and a mighty good morning meal with some milk poured over them! In her later years, she began production her apple butter in a crockpot. All of the flavor, none of the hassle.

It takes two days in a crockpot, so plan it on a weekend if you work away from home during the week, but it doesn't want much effort. I freeze mine in canning jars, but you could freeze it in plastic containers or can it and store it on a shelf. It's not hard at all, so if you're finding for a good way to bring home the taste of fall and wow your friends with your domestic abilities, then try this apple butter recipe: 

Crockpot Apple Butter

4 c. Sugar ( I use brown sugar or succanat)

8 c. Cooked apples

1/2 c. Vinegar

2 tsp. Cinnamon

1/2 tsp. Cloves

1/2 tsp. Nutmeg
 
Wash, peel and slice apples thin. Pack into crockpot until full. Add only adequate water to keep from sticking to the bottom. Cook all day, covered on low; that night, add 4 cups of sugar to 8 cups of cooked apples (adjust sugar if less than 8 cups). Add 1/2 cup vinegar; stir well and cook all night, covered on low. The next morning, add spices. Cook, uncovered, on high for 3 hours. Fill jars and freeze them when cooled to room temperature, or fill jars and seal, if canning.

Using a small bowl you will add the raisins and the crushed pineapple and juice. Set aside until needed.

In your crockpot you will add about 2/3 of the French bread cubes. Sprinkle in half of the grated lemon zest and then spread about a cup of the pineapple raisin combination over the bread cubes.

Add the remaining French bread cubes evenly over the top of the combination in the crockpot. Add the remaining lemon zest and then someone else layer of the pineapple raisin mixture. Add the remaining puree mixture.

Cover with lid and then cook on low for about 6 hours or until done.

Garnish with fresh mint sprigs and serve hot.

Increase heat to high and combine biscuit mix with parsley. Stir milk into biscuit mix until well moistened. Drop dumplings from teaspoon around edge of pot. Cover and cook on high for 30 minutes.

~1/2 c Onions, chopped

~2 lb Chicken, raw

~1 ts Chicken bouillon

~1 ts Poultry seasoning

~1/4 ts Salt

~2 c Water

Slice mushrooms. Take off skin from chicken. Spray skillet with nonstick spray coating. Brown mushrooms, onion, and chicken pieces on all sides over medium heat about 15 minutes.

Stir in seasonings and exchange to crockpot. Can be refrigerated overnight. Start crockpot on Low. When ingredients are heated, add rice. Cook until done.

~ 4 pounds Chicken Pieces

~ 1/4 cup All-Purpose Flour

~ 2 tablespoons Cooking Oil

~ 6 ounces Lemonade -- freezing Concentrate, Thawed

~ 3 tablespoons Brown Sugar

~ 3 tablespoons Catsup

~ 2 tablespoons Water

~ 2 tablespoons Cornstarch

~ 3 cups Cooked Rice

~ 1 1/4 teaspoons salt

1. combine flour with salt; coat chicken thoroughly. 2. Brown chicken pieces in oil and drain. 3. Stir together lemonade, sugar, catsup and vinegar. 4. Place chicken in crockpot and pour lemonade composition over it. (the chicken, not the crockpot) 5. Cook on high 3 to 4 hours. 6. Drain liquid into saucepan; add corns tarch and boil till reduced. 7. Pour gravy back over chicken; serve over rice.

1 big onion cut to 1/2 inch rings
2 cloves garlic
lemon zest from 1 lemon
lemon juice from 1 lemon
1 cup of white wine or 1 cup water and 1 tablespoon white wine vinegar
1 tablespoon dry thyme
salt, pepper (amount varies agreeing to your preferences)

Melt the butter in a skillet, and then saute the mushrooms, celery, onions, and parsley. Put the bread cubes in a big bowl and spoon the sauteed vegetables over the top. Add the seasonings and toss the blend well.
