Three Simple Dessert Recipes For Your Crockpot

I love to surprise my family with a tasty dessert that tastes like it took hours to make but was actually done from the crockpot.

I'd like to share a few very simple to make recipes for desserts.

Crockpot

Apple Cranberry Crisp

3 apples
1 cup cranberries
3/4 cup brown sugar
1/3 cup rolled oats (quick cooking)
1/3 cup butter, softened
1 teaspoon cinnamon
1/4 teaspoon salt

Peel, core and slice the apples. Place the apple slices and cranberries in the bottom of the crockpot. Mix the remaining ingredients in a separate bowl and sprinkle over the top of the apple and cranberry mixture. Place 4 or 5 paper towels over the top of the uncovered crockpot. On top of the paper towels, place a wooden spoon. Place the lid of the crockpot on top of the spoon. This allows the steam to escape. Turn crockpot on high and cook for about 2 hours.

Corn Pudding

8 ounces cream cheese, softened
8 1/2 oz package corn bread mix
16 ounce can cream style corn
2 1/3 cups frozen sweet corn
1 cup milk
2 eggs, beaten
1/3 cup sugar
2 tablespoons butter, melted
1 teaspoon salt
1/4 teaspoon nutmeg

Lightly grease your crockpot. In a bowl, blend the cream cheese, eggs and sugar. Add remaining ingredients and mix well. Pour into crockpot. Cover and cook on high 3 to 4 hours.

Chocolate Brownie Cake

2 1/2 cups fudge brownie mix
1/2 cup brown sugar
1 cup water
2 tablespoons cocoa
1 egg
1/4 cup smooth peanut butter
1 tablespoon butter, softened
1 cup chocolate chips

In a saucepan, combine 3/4 cup water, brown sugar and cocoa. Bring to a boil.

In a separate bowl, combine remaining ingredients. Mix well. This creates your batter. Lightly butter the crockpot. Spread the batter on the bottom of the crockpot. Pour the boiling mixture on top of that. Cover and cook on high for 2 hours. Turn off crockpot and allow cake to sit in crockpot for 30 minutes before serving.

One of the reasons I love desserts in the crockpot is because you just throw it all in and it comes out wonderfully. Using your crockpot during holiday times for dessert frees up your oven for turkeys, hams or whatever else you might be preparing.
