Crockpot Side Dishes - A Few Ideas

A lot of people save time by cooking their entree in the crockpot and making side dishes on the stove or in the oven, but what about doing it the other way around? You can roast your entree or make it on the stove while you make a special side dish in the crockpot. If you have a couple of crockpots, you can even make two side dishes.

Apples With Cabbage

Apples with cabbage is a great side dish and the mustard, onion, and apple juice gives this recipe a real tang. Serve this with sausages and mashed potatoes for a hearty dinner. Use nonstick cooking spray to oil the crockpot, and then add a chopped cabbage, a couple of diced apples and two sliced onions. Add a teaspoon of salt and a pinch of pepper and stir.

Mix half a cup of chicken broth with a cup of apple juice and a few tablespoons of prepared mustard. Pour this liquid over the apples and cabbage. Cover the slow cooker and cook for about seven hours on low or until everything is tender, stirring the recipe every couple of hours. Transfer it to a bowl using a slotted spoon. This makes enough for six to eight portions.

Mexican Spiced Corn

This side dish serves six to eight and it combines wonderful Mexican flavors. Slow cooking usually brings out the flavor of ingredients really well so if you are roasting a chicken or some beef, why not make this unusual corn recipe to go alongside it?

Mix a cup of sour cream with two eggs, quarter of a cup of melted butter and a finely chopped onion. Add an eleven ounce can of Mexican corn, a couple of tablespoons of green jalapeno salsa, a fourteen ounce can of creamed corn and a package of cornbread mix.

You can also stir in some chopped green chilies if you like. Transfer the mixture into a greased three and a half quart crockpot and cover. Cook for two and a half hours on high.

Sweet Stuffed Squash

This mouthwatering crockpot side dish recipe serves four people and combines acorn squash with spices, fruit juice, nuts and more for a festive and delicious side dish recipe. You will need a pair of acorn squash for this. Cut them in half, scoop out the seeds, and put them skin side down in the crockpot.

Combine a third of a cup of cracker crumbs with quarter of a cup each of brown sugar and melted butter, half a cup of chopped walnuts or pecans, a couple of tablespoons of apple juice or orange juice, a pinch each of cinnamon and nutmeg and half a teaspoon of salt. You can use mace instead of nutmeg if you like. Spoon this mixture into the squash halves and cover the slow cooker. Cook on low for five hours or until the squash is tender. Depending on the size of the squash, this might take six hours.
