Mom's Crockpot Mac and Cheese - Caution! Super Duper Cheesey!

My mom makes her famous crockpot macaroni and cheese at Christmas every year and it is to die for! It always steals the show from the turkey and ham. Her recipe makes a huge amount but there are never any left overs. Like all of my dear mother's recipes, this one is super easy, but super delicious. Everyone will be asking for the recipe! My mother actually gave this recipe to her mother in law, my grandmother, and she makes it for Sunday dinner every week. How backwards is that?

Ingredients

Crockpot

7 ounce package of Elbow Macaroni

2 tablespoons oil

1 large can of condensed milk

2 large eggs

1.5 cups of milk

3 cups grated extra sharp cheddar cheese

1 teaspoon of salt

Pepper to taste

1 stick of melted butter

Pam Cooking Spray

Directions

1. Spray the inside of your crockpot with Pam cooking spray.

2. Cook macaroni and toss with oil.

3. Beat the eggs and milk together.

4. Mix all ingredients, while reserving approximately 3/4 cup of cheese.

5. Put mixture in crockpot.

6. Top with cheese.

7. Cook on low 3 to 4 hours.

8. Enjoy!

My mother usually makes the macaroni ahead of time and turns the crockpot on on Christmas Day while preparing the rest of the meal. Substitutions can be made, such as whole wheat pasta, reduced fat cheese, margirine, etc. however, I prefer to prepare the macaroni per the recipe, and let it be my guilty pleasure. Try this recipe to highlight any meal.
