Recipe for Creamy Orange Crockpot Cheesecake

What You Need

3/4 cup cookie or graham cracker crumbs 2 Tablespoons sugar 3 Tablespoons butter, melted 16 ounces cream cheese 2/3 cup sugar 2 eggs 1 egg yolk 1/4 cup frozen orange juice concentrate, thawed 1 teaspoon orange or lemon zest 1 Tablespoon flour 1/2 teaspoon vanilla

How to Make It

Mix the crumbs with the 2 tablespoons of sugar, and then add in the melted butter. Mix until the crumbs are moistened evenly. Pat the crumbs into the bottom of a 7 inch springform pan.

In a mixing bowl, cream the 2/3 cup sugar and cream cheese together until it is smooth. Add the whole eggs and the yolk. Beat for approximately 3 minutes on medium with a hand held mixer. Beat in the vanilla, flour, zest, and orange juice. Beat for 2 more minutes.

Pour the batter into the prepared crust. Set an aluminum foil ring or a rack on the bottom of your crockpot. Set the springform pan on top of this so it does not sit right on the bottom of your cooker.

Cover the crockpot and cook the cheesecake on high for 2-1/2 to 3 hours. Turn the crockpot off and let the cheesecake rest inside the closed pot for another hour or two until it is cool enough to remove.

Let the cheesecake finish cooling before removing the springform pan sides. Chill before serving.
