1 can of solid pack pumpkin 15 ounce
1 can of evaporated milk 12 ounce
2 1/2 teaspoons pumpkin pie spice
2 teaspoons vanilla flavoring
3/4 cup sugar
2 eggs, beaten
1/2 cup baking mix or biscuit mix
2 Tablespoons melted margarine or butter
Whipped topping
Non-stick cooking spray

How to Make It

Prepare your crockpot by applying a layer of the non-stick cooking spray.

Begin by melting your margarine or butter over a low heat in a small saucepan or even the microwave oven.

Using a small mixing bowl you will beat the 2 eggs and then set them aside.

Next, while using a large mixing bowl you will add the 15 ounces of pumpkin, the entire can of evaporated milk, the 2 ½ teaspoons of pumpkin spice, and the 2 teaspoons of vanilla flavoring. Before blending, you will also add the ¾ cup of sugar, the 2 beaten eggs, the ½ cup of baking mix or biscuit mix, and the 2 Tablespoons of melted margarine or butter.

Mix thoroughly and then pour the batter into the crockpot you have prepared by coating it with the non-stick spray.

After pouring the mixture into the crockpot, replace the lid and then cook the recipe on low for about 3 to 3½ hours. You can check the temperature while using a thermometer, since some crockpots may vary in temperature. You want the dish to reach a temperature of 160 degrees Fahrenheit.
