Chicken Stew and Corned Beef Slow Cooker Recipes

Ingredients include 2 large-sized onions; 2 lbs. skinless, boneless chicken breasts cut into 1 inch cubes; 2 large-sized carrots that are cut into 1 in. slices or 1 cup of baby carrots; 3 ½ cups of chicken broth, 3 medium-sized potatoes that are cut into 1 in. cubes and 1 tsp. celery seeds. Other ingredients are ½ tsp. seasoned pepper mix or black pepper, 1 tsp. dried thyme, salt, 1 cup thawed frozen corn, 8 oz. sliced mushrooms and 1 cup thawed frozen peas.

Procedure:

Mix all the ingredients in your slow cooker, excluding the peas. Stir it well.Cover it and cook it on low for 8 up to 8 hours. Cook it until the chicken is well done and the vegetables become tender. You can stir-in the peas during the final 30 minutes.

Mexican-Style Chicken Stew

Ingredients are 4 up to 5 medium-sized peeled potatoes that should be cut into very small cubes; 2 pounds boneless skinless chicken breasts that needs to be cut into 1 in. pieces; 1 16 ounce jar of mild salsa, 1 envelope taco seasoning mix, 1 can of diced green chili peppers and 1 can tomato sauce.

Procedure:

Mix all the ingredients in your slow cooker. Cover your slow cooker and set it on Low for about 7 up to 9 hours. You can serve this with warm flour tortillas.

Crockpot Corned Beef and Cabbage Recipe

Ingredients are 3 medium-sized thinly sliced carrots, 6 up to 8 medium-sized peeled tomatoes that should be cut into ½ in. slices, 2 thinly sliced ribs celery, 1 2-pound cabbage, 1 -pound corned beef brisket, 1 ½ cups water and ½ tsp. black pepper.

Procedure:

Lightly spray or butter a 5 up to 6 qrt. Slow cooker. Layer the potato slices at the bottom portion of the slow cooker as well as with carrots. Place the corned beef on the vegetables. Slice the cabbage into 8 wedges, arranging them around the meat. Sprinkle with pepper. Add some water. Cover ad cook it on low from about 7 up to 8 hour. Make sure the vegetables and meat becomes tender. Remove the meat and put it on a platter. Cover this with some foil and allow it to rest for about 10 up to 15 minutes. After 15 minutes, slice the meat and serve.

Corned Beef and Vegetables

Ingredients are 2 turnips or 1 medium-sized rutabaga cut into 2 inches chunks; 3 to 4 carrots cut crosswise, halved lengthwise, making 2 to 3 inch pieces; 3 to 4 lbs corned beef brisket which you can cut if necessary; 1 ½ cup water, 3 medium-sized quartered onions, salt and pepper as well as 1 small cabbage.

Procedure:

Using a 5- up to 6-quart crock pot or slow cooker, mix all the ingredients, excluding the cabbage. Cover the crock pot, cook on Low for 4 hours and cook on High for another 2 hours. Lightly sprinkle with salt and pepper. Cook again on Low for 7 up to 9 hours and on High for 4 up to 5 hours.

Crockpot meals are easy to prepare, can usually be cooked all day while you are at work and for the most part are "set it and forget it" meals. If you are anything like me, you will love coming home to the aroma of a crockpot meal. It always reminds me of the way the house smelled when I was a kid.
Everyone today is so busy, with two worker households and the kids involved in numerous extra-curricular activities, many people are turning to "slow cookers" or crockpots to prepare nutritious and delicious family dinners. I actually have four slow cookers but only one is actually a Crockpot. I should explain that a "Crockpot" is actually the name of a slow cooker that is sold by the Rival Company and made famous sometime in the 1970s. It was such a success that crockpot became a household word and is used interchangeably with slow cooker. Before you start to cook with a crockpot, there are quite a few tips that will make your experience easy and rewarding. Here are some of the more important ones:
Tip 1: Lightly greasing the inside of your crockpot or using a non-stick cooking spray will help to make cleanup a breeze and will keep food from sticking to the sides of your crockpot.
Tip 2: If you haven't already purchased your crockpot or received one as a gift, try to choose one that has a removable "crock" for easier cleanup and serving. Have faith in the recipe and leave that lid on. You may need to add up to 20 minutes of additional cooking time for each time you lift that lid and let the heat and steam out.
Tip 4: Follow the recipe exactly when it comes to layering instructions. Items such as potatoes and vegetables take more time to get tender in a crockpot and the recipes will instruct you to place these on the bottom with any meats and/or sauces layered on top.
Tip 5: I don't usually use regular milk in my crockpot recipes. I have found that due to the extremely long cooking time that regular milk tends to want to curdle. I will recommend that you use evaporated milk, scalded milk or half and half and that you only add milk during the last 30 minutes of cooking time. This rule is not chipped in stone and you are certainly welcome to experiment for yourself.
Tip 6: Remember, if you leave the lid on the crockpot, very little of the liquid will be able to boil away. This will help to prevent over-cooking or under-cooking and will give you room to stir and serve without fear of spilling.

Meal planning is a must if your goal is to provide healthy meals to your family. Everyone knows that healthy meal planning should be incorporated into every meal, but the reality is that we often don't have the time to organize and prepare the recipe plan.



The last thing you want to do is go grocery shopping with the healthy eating pyramid in mind and then prepare two or more menus for the same meal simply to accommodate the likes and dislikes of family members.



Also, serving unpopular, healthy meals is usually counterproductive because family members will later eat sweets, chips, soda, ice cream with topping and other junk food in order to satisfy their craving for sugary treats.

How to Make It

Prepare a two pound size coffee can by greasing and flouring the inside and then set aside until needed.

Cream the butter or margarine and sugar together. Add the eggs one at a time while beating to cream well after each.

Sift the flour, baking soda, cloves, and allspice together in a separate bowl. Gradually stir in the dry mixture into the sweet butter and egg mixture.

Alternate adding the butter milk and your choice of jam to the creamed mixture and blend well.

Add the vanilla flavoring, the chopped walnuts or pecan and the raisins. Stir well to combine all ingredients.

Pour this mixture into the prepared two pound size coffee can to fill the can until it is about ¾ of the way full.

Place the coffee can into the crockpot. Cover the coffee can with 5 or 6 paper towels. Cover with a lid, and then cook on high for about 3 ½ hours or until done.

After cooking allow the can to cool for several minutes before inverting the can onto a serving platter or plate to remove and serve.

1/2 c. dry white wine
2 fresh tomatoes, quartered
1/4 lb. fresh mushrooms
Place chicken parts in crock pot. Combine dry spaghetti mix with wine; pour over chicken. Cover and cook on low for 7 hours. Turn control to high; add tomatoes and mushrooms. Cover, cook on high for 40 additional minutes.
Zucchini Chicken
1 frying chicken, cut up
1 tsp. seasoned salt
1/4 c. flour
1/2 tsp. salt
1/8 tsp. pepper
2 tbsp. grated Parmesan cheese
1/2 tsp. paprika
1 lb. zucchini, cut into thin slices
1/2 c. chicken bouillon
1 (4 oz.) can mushrooms, drained
Sprinkle chicken with seasoned salt. Combine flour, salt, pepper, cheese and paprika; coat chicken with mixture. Place zucchini in bottom of crock pot. Pour bouillon over zucchini. Arrange coated chicken on top. Cover and cook on low for 5-6 hours or until tender. Turn to high and add mushrooms and cook for an addition 15-20 minutes.
Cheesy Chicken
6 boneless chicken breasts
1/4 tsp. salt
1/4 tsp. black pepper
1/4 tsp. garlic powder
2 (10.75-oz.) cans condensed cream of chicken soup
1 (10.75-oz.) can condensed cheddar cheese soup
Rub chicken breasts with salt, pepper and garlic powder. Place chicken in slow cooker and pour soups over the top. Cover and cook for 6 to 8 hours on low.

How to Make It

Quick and Easy - How Crock Pots Simplify Your Hectic Life

Imagine getting home from work to the tantalizing smell of dinner, ready to dish out, hot and delicious. For a busy working mom, corporate couple or live-alone single, that's a dream that doesn't seem likely, unless you can afford your own chef. But it's not unattainable. All you need is one handy-dandy little appliance that will simplify your life and have you dishing up your dinner before you even kick off your good shoes.





They're an old stand-by from the 70s, and they're making a huge comeback. Crock pots, also known as slow cookers, are one of the handiest tools for a busy working woman - or man, for that matter. With a crock pot, you can spend ten minutes of prep time before you leave for work in the morning, flip it on, and return home in the evening to a fully cooked meal - nutritious, delicious and far less expensive than takeout.





I grew up with a crock pot in the house, but it was seldom used. My grandmother was home full time, and it was far more common for her to slow cook on top of the stove. When I moved out on my own, those delicious slow-simmered dishes that were a staple of my diet were out of reach. I didn't have time to stay at home and stir the pot. I turned to convenience meals and microwave cookery, but I missed the wonderful meals I grew up with - coq au vin, slow simmered spaghetti sauce, beef stew, stewed chicken and baked beans.





That all changed when I discovered a recipe for ‘Mom's Busy Day Chicken' in a recipe book offered by, of all places, the La Leche League. The recipe was incredibly simple - just put one cut up chicken in a crock pot, add two cans of stewed tomatoes and an onion, and flip the crock pot to low, and then walk away for six to eight hours. I was skeptical, but I tried it - and the results quickly became a family favorite. The chicken was tender enough to fall off the bone, and flavored through and through with spices and tomato sauce. The sauce was thickened and perfect for spooning over rice or pasta and best of all, it was nutritious and healthy.





Why is crock pot cooking so great?





1.You don't have to watch the pot.


They say a watched pot never boils - neither does a crock pot. When you set the crock pot's temperature to low, you can be sure that the food inside will cook at temperatures low enough to avoid overcooking, and high enough to prevent the formation of harmful bacteria.





2.Ten minutes in the morning makes a home-cooked meal in the evening.


Prep time for crock pot cooking is almost none. Cut up your ingredients, add them to the pot, cover it and walk away. You will be amazed at the great taste derived from flank steak when it is combined with flavors of the East, and will be delighted to find all the many different recipes showing how beef can be prepared in the crockpot. A bit of ginger adds the right spice to this meal.

What You Need:

1 large can of pineapple rings 2 pounds flank steak 1 teaspoon ginger 2 tablespoons brown sugar 2 tablespoons oil 2 tablespoons soy sauce 1 tablespoon of any sweet fruit juice, such as apple or grape 1 teaspoon Worcestershire sauce Salt and pepper to taste

How To Make It:

Drain the pineapple, reserving 1/2 cup juice. Roll and tie the flank steak, and cut into 6 pieces. Warm the oil in a heavy skillet and brown the flank steak on all sides. Put the meat into a 4-Quart Crockpot and lay the pineapple rings over it. Mix the ginger, brown sugar, soy sauce, pineapple juice, other juice, and Worcestershire sauce in a small mixing bowl. Pour over the flank steaks. Cover the crockpot and cook on low for 8 hours.

Add salt and pepper as desired. Serve with steamed white rice and dish up a fortune cookie at the end of the meal.

Delicious Ham and Chicken Crock-Pot Chili

This very simple chili is made with chicken and ham but ground beef could be substituted for the chicken and or ham if desired. The recipe was based on a number of (edible) experiments in an attempt to match a particular commercial chili originating in Texas. This brand is so popular that I am told that some people who have moved out of the area ordered cases of cans of it shipped to their new residences. I believe the "magic" ingredient that makes this dish stand out is the use of refried beans in place of pinto beans. Because of the high starch content, the refried beans help thicken this dish and also hel spread the marvelous flavor. It's so easy to make, I don't see any reason to buy commercial canned chili, not that I have anything against it. Slow Cooker Chicken Stew and Dumplings

Your complete dinner in one pot! This meal has been a family favorite for years, it appeals to the meat and potato lovers and is also quite low fat. It is quick and easy to assemble in the morning and can be left to cook all day in your slow cooker. Add the dumpling batter to the pot ½ hour before dinner. Serves 6.

Stew:

Crockpot

3-4 medium potatoes, cut into small chunks

3-4 stalks of celery, sliced

2 cups of whole baby carrots

1 ½ cups frozen peas

1 ½ lb boneless, skinless chicken breasts, cut into chunks

1 can low fat cream of chicken soup

1 can low fat cream of celery soup

½ cup low fat milk

½ cup water

1-2 tsp poultry seasoning (according to taste)

½ tsp fresh ground pepper

Dumplings:

1 ½ cups all purpose flour

1 tsp salt

3 ½ tsp baking powder

2 tsp parsley

1 egg, beaten

3 tbsp melted butter or margarine

2/3-1 cup milk

Directions:

1. Put potatoes, celery, carrots and chicken into the slow cooker.

2. Mix soups, seasonings, milk and water together and pour over vegetables and chicken.

3. Cook on low for 7-8 hours or until chicken is cooked and vegetables are tender. (You can cook on high for 4-5 hours but results are better on low).

4. Add peas during the last ½ hour of cooking.

5. To make the dumpling batter: mix flour, salt, baking powder & parsley together; add egg, melted butter and milk to dry ingredients. Use enough milk to make a soft dough.

6. Turn heat on slow cooker to high and drop 6 spoonfuls of the batter on top of stew.

7. Cover and cook for approx. 30 minutes or until dumplings are well done. (The dumplings will expand to touch each other during the cooking, so separate them with a knife about half way through to make sure the dough on the sides gets cooked as well).

Hint: Check the stew before you add the dumpling batter to make sure there is plenty of liquid. You can add a can of chicken broth or water if necessary to make sure you have lots of gravy once the dumplings are cooked.

Set a day of the week for meal planning and grocery shopping. Younger kids would probably find being allowed to say what they want to eat on certain days as a treat. Planning ahead will not only allow you to save by buying only what you need, it will also allow you to organize your meal preparations, and you get things done in half the time.

Getting things done ahead will save you a lot of time. Check your work schedule and identify which days you have more free time. Use these days to prepare for multiple meals. You can cook some meals through and just store while others can be half-done then finished on the day the meal is to be had.

Preparing delicious and long lasting meals is easy when using a Crockpot. Apple butter, apple coconut crisp and apple cranberry compote recipes are 3 great Crockpot recipes. Here are the 3 recipes for you to prepare at home:

1. Apple Butter

Crockpot

This can be made in a slow cooker/Crock Pot or oven at 325 degrees for 3-4 hours.

Ingredients:

- 4 qts. unsweetened applesauce
- 7 C. granulated sugar
- 1-1/3 C. brown sugar
- 5-1/3 T. cider vinegar
- 5-1/3 T. lemon juice
- 2 teaspoon. cinnamon
- 2 teaspoon. allspice
- 1 teaspoon. ground cloves

Directions:

2. Apple Coconut Crisp

Ingredients:

- 4 large Granny Smith apples, peeled & coarsely sliced (about 4 cups)
- 1/2 cup sweetened flaked coconut
- 1 tablespoon flour
- 1/3 cup brown sugar
- 1/2 cup butterscotch or caramel ice cream topping (fat-free is fine)
- 1/2 teaspoon cinnamon
- 1/3 cup flour
- 1/2 cup quick rolled oats
- 2 tablespoons butter or margarine

Directions:

- In a casserole 1 1/2-quart baking dish that fits in the slow cooker/Crock Pot, combine apples with
coconut, 1 tablespoon flour, 1/3 cup brown sugar, and cinnamon.
- Drizzle with the ice cream topping.
- Combine remaining ingredients in a small bowl with a fork or pastry cutter and sprinkle over apple mixture.
- Cover and cook on high for 2 1/2 to 3 hours, until apples are tender.

Serve warm with vanilla ice cream or whipped topping.

3. Apple Cranberry Compote

Ingredients:

- 6 cooking apples, peeled, slice
- 1 cup fresh cranberries
- 1 cup sugar
- 1/2 teaspoons grated orange peel
- 1/2 cups water
- 1/4 cups port wine
- sour cream , (low fat)

Directions:

- Arrange apple slices and cranberries in slow cooker/Crock Pot.
- Sprinkle sugar over fruit.
- Add orange peel, water and wine. Stir to mix ingredients. Cover, cook on low 4-6 hours, until apples are tender.

Serve warm fruits with the juices, topped with a dab of sour cream. Serves 6.

Crock pots are a must-have these days, but after way too many beef stews and gumbos, what can be made that will get them running to the table rather than grumbling away from it?

There are literally hundreds of family favorite crock pot recipes that adults and kids alike love. Easy Ziti  Lasagna, Easy Pulled Pork and Tortilla Chicken are three easy and delicious crock pot recipes that families love and are quick to put together in the morning for a great family dinner later.

Crockpot

Easy Ziti  Lasagna

1 box ziti

2 - 28-oz jars pasta sauce

1 egg

1/2 lb ground beef

1/2 lb sausage

2 tbl olive oil

1 cup parmesan cheese

1/2 cup Italian breadcrumbs

1 bag Mozzarella cheese

16-20 oz. Ricotta cheese

2 eggs

1 cup Parmesan cheese

1 1/2 tsp. parsley flakes

dash salt & pepper

Grease crock-pot, or spray with non-stick cooking spray. Cook ziti according to package directions, drain. Brown and drain meat. Toss pasta with olive oil. Add pasta sauce to mixture, toss well. Stir together parmesan cheese, breadcrumbs, egg, 1/2 bag mozzarella cheese, and browned meat. Can sprinkle lightly with garlic powder. Beat together ricotta, 2 eggs, parmesan, parsley, salt & pepper. Pour half of pasta/sauce/meat mixture into crock-pot. Spread entire ricotta mixture over first layer of pasta. Cover ricotta layer with remaining pasta mixture, and cover with remaining cheese. Cover, and cook on low 4-6 hours.

Easy Pulled Pork Crock Pot Recipe

1 (5 pound) pork butt roast

salt and pepper to taste

1 (14 ounce) can beef broth

1/4 cup brewed coffee

Cut roast in half. Rub each half with salt and pepper, and place in the slow cooker. Pour broth and coffee over the meat. Turn the slow cooker to Low, and cover. Cook for 6 to 8 hours, or until the roast is fork tender. Carefully remove the roast to a cutting board. Pull the meat off the bone with a fork.

Crock Pot Tortilla Chicken

1 dozen corn tortillas

3 cans cream of mushroom soup or cream of celery soup

1 (8oz) pkg. Jack cheese, grated

1 (8oz) pkg. Cheddar cheese, grated

2 cans (4oz each) chopped chiles

1 boiled deboned chicken (3 to 4 cups chopped)

1/2 med. onion, diced

Layer in a crockpot: Soup, tortillas, cheese, chicken, chiles, onion, soup; repeat, etc. until ingredients are used up. Start on high for 1/2 hour. Reduce temperature to low and cook for 6 hours.

Serve garnished with a swirl of sour cream and the chopped parsley.

Crockpot Tips - Don't Forget the Slow Cooker!

Many of your favorite recipes can be successfully adapted to the crockpot or slow cooker if you follow a few simple rules. You'll find a basic time/temperature guide for converting recipes, some do's and don'ts for specific ingredients and a few tips for making your slow cooker dishes more flavorful.





Liquids





Generally, liquids may be decreased in slow cooking - a general rule of thumb is about half the recommended amount. Unless the dish contains rice or pasta, one cup of liquid is usually enough.





Pasta and Rice





When recipes call for cooked pasta to be added, cook it until just slightly tender before adding to the pot. Add 1/4 extra liquid per 1/4 cup uncooked rice, and use long grain converted rice for the best results. For long-cooking recipes, add cooked rice shortly before serving.





Beans





It is usually best to soak beans overnight before cooking them in the crockpot. Before adding sugar or acidic ingredients, the beans should be softened first, either in the slow cooker or on the stove top. If your recipe includes tomatoes, salt, or other acidic ingredients, the beans should be tender before beginning.





Herbs and Spices





Ground herbs and spices tend to dissipate over long cooking times, so it's best to add them near the end of cooking. Whole herbs release flavors over time, so are a good choice for crockpot cooking. You should taste and adjust seasonings, if necessary, before serving.





Milk/Cheese





Milk, sour cream, and cream break down over long periods of cooking, and should be added during the last hour. Condensed cream soups are good substitutions for milk and can be cooked for extended times. "Healthy," or reduced fat cream soups can be used in any recipe as a substitute.





Cheeses don't generally hold up over extended periods of cooking, so should be added near the end of cooking, or use processed cheeses and spreads.

Vegetables
