Crock Pot Macaroni And Cheese Makes an Easy Side Dish

One of the most beloved childhood foods is macaroni and cheese. Most of us can remember mom serving up a box of Kraft macaroni and cheese along with a hotdog or burger.
Since its beginnings in 1937, Kraft's version has been a mainstay in the pre-packaged foods section of the grocery store. Why not, it's easy and tastes good and kids love it. However, there is another easy and tasty way to go to get some delicious macaroni and cheese prepared for your family.
The earliest known mention of macaroni and cheese was in Italy, which makes sense given that macaroni is pasta after all. In the United States, history reports that one of the Founding Fathers, Thomas Jefferson, brought back the classic recipe from Italy, along with a pasta machine.
Naturally, many folks love the other classic macaroni and cheese that's baked in the oven. Of course that's a great dish, but creating it requires heating the oven. Using your slow cooker or crockpot saves energy and time. So you'll just need a good macaroni and cheese crock pot recipe. Slow cookers have been on the market for quite awhile now, but unfortunately not everyone has yet to get on board with the simplicity of preparing all the ingredients, putting them in the pot and leaving the house for the day. Hopefully, this easy recipe will get you going if you haven't yet started enjoying slowcooking.

Mom's Crockpot Mac and Cheese - Caution! Super Duper Cheesey!

My mom makes her paramount crockpot macaroni and cheese at Christmas every year and it is to die for! It always steals the show from the turkey and ham. Her recipe makes a huge estimate but there are never any left overs. Like all of my dear mother's recipes, this one is super easy, but super delicious. Everybody will be asking for the recipe! My mother undoubtedly gave this recipe to her mother in law, my grandmother, and she makes it for Sunday supper every week. How backwards is that?

Ingredients

Crockpot

7 ounce package of Elbow Macaroni

Mom's Crockpot Mac and Cheese - Caution! Super Duper Cheesey!

2 tablespoons oil

1 large can of condensed milk

2 large eggs

1.5 cups of milk

3 cups grated extra sharp cheddar cheese

1 teaspoon of salt

Pepper to taste

1 stick of melted butter

Pam Cooking Spray

Directions

1. Spray the inside of your crockpot with Pam cooking spray.

2. Cook macaroni and toss with oil.

3. Beat the eggs and milk together.

4. Mix all ingredients, while reserving approximately 3/4 cup of cheese.

5. Put composition in crockpot.

6. Top with cheese.

7. Cook on low 3 to 4 hours.

8. Enjoy!

My mother ordinarily makes the macaroni ahead of time and turns the crockpot on on Christmas Day while making ready the rest of the meal. Substitutions can be made, such as whole wheat pasta, reduced fat cheese, margirine, etc. However, I prefer to put in order the macaroni per the recipe, and let it be my guilty pleasure. Try this recipe to highlight any meal.

How To Make A Tasty Cheese Fondue

Fondue is one of the most delicious and fun ways to eat. A fondue (especially cheese fondue) can be a big hit at a party, a nice choice for a romantic dinner, or a perfect, fun meal with all the kids. It's different, exciting, and most of all delicious!

So are you ready to learn how to make a tasty cheese fondue? If so, this article will show you everything you need to know to get started.

This article assumes that you already own a fondue pot and forks. If you don't, you might be able to use a Crockpot and bamboo skewers as forks. A fondue set is definitely recommended, and will make your fondue experience much more pleasant.

We will be making a Swiss fondue, which is the most popular cheese fondue. And it's a favorite for good reason, the two Swiss cheeses used in this recipe combine to create the perfect flavor and texture for fondue.

Cheese Fondue Recipe

Ingredients

- 1/2 pound of finely grated Gruyere cheese
- 1/2 pound of finely grated Emmentaler cheese
- 1 clove of garlic
- 1 cup dry white wine (preferably high quality)
- 1 tbsp lemon juice
- 3 teaspoons cornstarch
- 1 tablespoon kirsch cherry brandy
- pepper and nutmeg

Directions

1. Cut the garlic clove in half and use it to rub the inside of a medium saucepan. Add the wine and lemon juice then bring to a simmer over medium heat.

2. Mix the finely grated Gruyere and Emmentaler cheese with the cornstarch in a large bowl. Toss it all together. Stir the cheese mixture into the wine one small handful at a time until creamy. Don't stir in a circle, use a zig-zag motion instead. If the fondue is too thick, add more wine. If it's too thin, add more cornstarch. Keep the heat just high enough to melt the cheese or it might start to get a bit stringy. When it reaches the desired texture (creamy) add the kirsch and a bit of pepper and nutmeg.

3. Transfer the mixture to the fondue pot and serve as soon as possible with the dipping ingredients.

Dipping Ingredients

-Cubes of French baguette
-Chunks of cooked chicken
-Sausage
-Asparagus
-Broccoli
-Chunks of green apple

Be sure to prepare the dipping ingredients before you start making the fondue. Good timing will make everything turn out better.

These dippers are just suggestions. You can probably think of all sorts of other things to dip into the fondue. If you think it will taste good dipped in melted cheese, you're probably right.

Eating fondue is simple and fun. Just skewer one of the dipping ingredients then dunk it into the melted cheese Allow the excess cheese to drip off. After it cools a bit, it's ready to eat. You can provide small plates if you want too, but they are not a necessity.

Traditional drinks that accompany fondue are hot tea and wine, but feel free to drink whatever you like. Fondue is supposed to be fun after all.

Making Macaroni and Cheese in the Crockpot

My daughter made the most delicious dinner last night. She is a macaroni and cheese lover. Her grandmother used to make macaroni and cheese from scratch, over the stove, while everyone else was buying boxes of Kraft. It was these memories that led her to want to try the macaroni and cheese in the crockpot.

This is a very cheesy, rich recipe.

Start with two cups of macaroni noodles - this can be made with either elbow macaroni or even penne pasta. Boil the pasta seven minutes. Pasta should be soft at this point. Drain the pasta but do not rinse.

While the macaroni is boiling, grab a sauce pan and combine four tablespoons of butter and two and a half cups of cheese. We like mild cheddar. The original recipe called for sharp cheddar. We also use a lower fat cheese, thus cutting out some of the calories. Stir the butter and cheese together over a low fire until the cheese melts.

Pour the melted cheese mixture into the crock pot and add in three scrambled eggs. We actually used one whole egg and two egg whites. I couldn't justify the extra yolks. Mix in one cup of sour cream. We used low fat sour cream. I've cooked with the non fat sour cream and the taste changes. If you can, stick with either low fat or regular sour cream.

Add in one can of cheese soup. Any brand is fine, we happened to use the popular national brand. We searched for a lower fat version of the soup and could not find one. Had we found it, we would have used it. Add in a half teaspoon of ground mustard and salt and pepper to taste. We are not salt users and the butter has salt in it, so we did not add any salt to our mac and cheese. We did add in pepper, probably a half teaspoon worth.

Stir everything together and then pour in drained noodles. Mix together to coat the noodles. We took off the lid three times to stir it. The more you remove the lid, the more cooking time you'll need.

The sauce thickened in between each stirring. The sides and bottom ended up being just a little browned and crunchy which I personally love.

Kids love cut up hot dogs in their macaroni and cheese. Add the hot dogs for the last 30 minutes of cooking.

As I read reviews on this recipe, I noted many people said theirs was overcooked. Make sure your crockpot is on low and make sure you stir it a few times while cooking.

We served this with a green salad and garlic bread and had a wonderful dinner that everyone enjoyed.

Audrey's mom always entertained when she was growing up. Audrey learned to prepare for large groups and has often entertained 15-30 people in her home at a time. You can find more great recipes at http://www.recipe-barn.com
