Lazy Day Beef Stew Slow Cooker Recipe

Even though this recipe basically consists of nothing but canned or frozen vegetables, it is surprisingly good. It's very easy to prepare and let cook in your slow cooker. The most complicated part of the whole process is chopping an onion. If you feel so inclined, you can substitute fresh vegetables for any of the canned or frozen ingredients listed.

Also, if you are a vegetarian, you can omit the stew beef and make a splendid soup. Just add more vegetables and spices to your taste. A little garlic is a great addition to this recipe when making a hearty soup.

Lazy Day Beef Stew Slow Cooker Recipe

Ingredients:

1 pound stew beef
2 cans diced tomatoes, with juice
2 cans peeled potatoes, drained
1 can green beans, drained (or 1 small package frozen beans)
1 can corn, drained (or 1 small package frozen corn)
1 can carrot slices, drained (or 1 small package frozen carrots)
1 can sweet peas, drained (or 1 small package frozen peas)
1 large onion, chopped
1 teaspoon salt
1 1/2 teaspoons ground black pepper

There is no need for the stew beef to be thawed before adding it to the slow cooker. Just place it in the cooker and add all other ingredients at once. Mix ingredients together. Place lid on slow cooker. Using low setting, let stew cook for 7 to 8 hours.

Tip: This is a versatile and forgiving stew recipe. You can add or substitute any vegetables that you like. I'm very fond of adding lima and kidney beans to this slow cooker dish.

Barbecue in Your Crockpot - Easy Shredded Barbecue Pork Recipe

Save money on dinner tonight by using your crockpot to make your own shredded barbecued pork. This recipe, along with my special homemade barbecue sauce, is not only delicious but easy to prepare.

Slow cookers are great for budgeting both time and money. Cooking in a crockpot will tenderize less expensive cuts of meat and energy use is low too because a crockpot takes less energy to create a tasty meal than baking it in your oven.

With a little planning ahead, crockpots can save you lots of time in answering that age-old question ; "What's for dinner?"

How to Make Shredded Barbecue Pork

Start with a four pound pork roast. Place it in your crockpot with a sliced onion and enough water to fill 2/3 of the slow cooker. Season with salt and pepper, Cover and cook pork on low for 8 to 10 hours.

While the pork roast is cooking, prepare this homemade barbecue sauce, a favorite recipe of my grandmother's.

Ingredients for Barbecue Sauce

2 tsp margarine
1 medium onion chopped
1 Tbs Worcheshire sauce
2 Tbs vinegar
4 Tbs brown sugar
4 Tbs lemon juice
1 tsp dry mustard
1 c catsup

Melt margarine or butter over low heat. Add other ingredients and blend.

Once you've made your barbecue sauce, refrigerate until the meat is done.

When your pork roast is finished cooking, take it out of the slow cooker and throw away the water and onions.

Let the pork cook and then, using a fork, pull the meat apart. Once you've shredded all the meat, return it to the crockpot. Add the homemade barbecue sauce and mix thoroughly with the shredded pork.

Cook on medium for 1-3 hours, or until the onions are soft.

Serve the shredded barbecued pork on a large, whole wheat bun with baked beans and a salad for a complete dinner idea.

What You Need

3 Tablespoons melted butter or margarine
2 Tablespoons brown sugar
1 cup crushed chocolate graham crackers
1 ½ cups softened cream cheese
2/3 cup brown sugar
2 eggs
1/3 cup creamy peanut butter
1 Tablespoon flour
½ teaspoon vanilla flavoring
½ cup melted chocolate chips

How to Make It

Place the cream cheese out onto the counter about 20 minutes before preparation time to allow it to become softened to room temperature.

Melt the butter or margarine and then sprinkle in the brown sugar. Stir to dissolve and combine together. While the butter is melting crush the chocolate graham crackers. You can substitute regular graham crackers if you prefer. Add the crusted graham crackers; stir to combine until the graham crackers are moist.

Pat this graham cracker mixture evenly into the bottom of a 7 inch spring form pan.

Using an electric mixer and a medium size mixing bowl you will add the softened cream cheese and beat until smooth and creamy. Add the brown sugar and continue to combine well.

Add the eggs one at a time and beat well on a medium speed setting for 2 more minutes. Reserve ½ cup of this mixture and then pour the remaining mixture over the graham cracker mixture.

Melt the chocolate chips and then combine them with the reserved mixture. Pour this mixture over the last layer in the bottom of a 7 inch spring form pan.

Using a butter knife, swirl the chocolate batter to create a decorative appearance. However, do not dig down into the crust layer below.

Place the bottom of a 7 inch spring form pan on top of a rack inside the crockpot or form a ring of aluminum foil to raise the pan up off the bottom of the crockpot and then place pan in the crockpot.

Cover with lid and then cook on the highest temperature for about 2 ½ hours. After cooking turn off the heat and allow the dessert to cool completely for about 1 ½ to 2 hours. Remove from pan. Place in the refrigerator to chill before serving.

Homemade Chili Crockpot recipe

This formula is not intended to be hot and spicy. If you like it hot, by all means, add more chili powder, chili pepper flakes or some hot sauce. You can also substitute the mild salsa for medium or hot as well. This formula is great all year round but especially on a chilly winter day.

Ingredients:

Crockpot

1-1.5 lbs of 90% Lean ground beef

Homemade Chili Crockpot recipe

15 oz. Can diced tomatoes

½ cup-3/4 cup Pace Mild Salsa or your own brand

15 oz. Can kidney beans rinsed and drained

1 onion diced

1 green pepper diced

1 celery stalk diced

1 tbsp chili powder

1 tsp cinnamon

2 cups of water

¼ tsp of salt (if other spices have it, don't use it)

1 tsp of garlic powder

1 tsp black pepper

1 tbsp of minced garlic from jar or one clove minced

¼ tsp oregano

¼ tsp thyme

¼ tsp basil

2 tbsp of fresh minced parsley/cilantro (put in 30 minutes before thoroughly cooked)

Topping:

¼ cup Grated cheddar cheese (2 tbsp for each bowl)

4 tbsp Plain yogurt or sour cream (2 tbsp for each bowl)

2 tbsp cilantro (for topping each bowl)

* If you like black olives, you could use 2 cut up olives for each

Recipe Serves 4

Instructions:

Brown the lean ground beef and drain the fat. Add a dash of garlic powder as you cook it. Then add in the green pepper and onion after meat is done to sauté. When lightly brown add to the crockpot with all other ingredients. Cook on low for 8hrs or cook on high for 4hrs.

Easy Apple Butter Recipe and 2 More Delicious Crockpot Recipes

Preparing delicious and long lasting meals is easy when using a Crockpot. Apple butter, apple coconut crisp and apple cranberry compote recipes are 3 great Crockpot recipes. Here are the 3 recipes for you to prepare at home:

1. Apple Butter

Crockpot

This can be made in a slow cooker/Crock Pot or oven at 325 degrees for 3-4 hours.

Ingredients:

- 4 qts. unsweetened applesauce
- 7 C. granulated sugar
- 1-1/3 C. brown sugar
- 5-1/3 T. cider vinegar
- 5-1/3 T. lemon juice
- 2 teaspoon. cinnamon
- 2 teaspoon. allspice
- 1 teaspoon. ground cloves

Directions:

- Combine all ingredients in a slow cooker/Crock Pot or roasting pan.
- Cover and cook 3 hours, stirring occasionally.
- Remove lid and continue cooking until excess liquid cooks away (turn to low as necessary) Slow Cooker 5-8 hours, oven 3-5 hours Seal mixture in hot jars and process in a hot water bath for 10 minutes.

Makes approximately 8-10 pints

2. Apple Coconut Crisp

Ingredients:

- 4 large Granny Smith apples, peeled & coarsely sliced (about 4 cups)
- 1/2 cup sweetened flaked coconut
- 1 tablespoon flour
- 1/3 cup brown sugar
- 1/2 cup butterscotch or caramel ice cream topping (fat-free is fine)
- 1/2 teaspoon cinnamon
- 1/3 cup flour
- 1/2 cup quick rolled oats
- 2 tablespoons butter or margarine

Directions:

- In a casserole 1 1/2-quart baking dish that fits in the slow cooker/Crock Pot, combine apples with
coconut, 1 tablespoon flour, 1/3 cup brown sugar, and cinnamon.
- Drizzle with the ice cream topping.
- Combine remaining ingredients in a small bowl with a fork or pastry cutter and sprinkle over apple mixture.
- Cover and cook on high for 2 1/2 to 3 hours, until apples are tender.

Serve warm with vanilla ice cream or whipped topping.

3. Apple Cranberry Compote

Ingredients:

- 6 cooking apples, peeled, slice
- 1 cup fresh cranberries
- 1 cup sugar
- 1/2 teaspoons grated orange peel
- 1/2 cups water
- 1/4 cups port wine
- sour cream , (low fat)

Directions:

- Arrange apple slices and cranberries in slow cooker/Crock Pot.
- Sprinkle sugar over fruit.
- Add orange peel, water and wine. Stir to mix ingredients. Cover, cook on low 4-6 hours, until apples are tender.

Serve warm fruits with the juices, topped with a dab of sour cream. Serves 6.

Crock Pot - Old Fashioned Beef Stew Recipe

During the fall and winter months, I enjoy making hearty soups and stews in my crock pot for my family. I love the fact that I can spend a few minutes in the morning preparing it, put it into the slow cooker and walk away...a few hours later, our dinner is hot and ready to enjoy.

The following recipe was given to me by my 83 year old great aunt about 25 years ago. To this day, I still enjoy making it for my family. If you don't like okra, you can certainly omit it from the recipe. At times, I have actually substituted the okra with some fresh green beans or green peas, and the stew was just as delicious.

Crockpot

Old-Fashioned Beef Stew Recipe

2 lbs. beef cubes

1/2 cup all-purpose flour

2 tablespoons vegetable oil

1 bay leaf

1 1/2 tablespoons Worcestershire sauce

1 onion, finely chopped

1 cup beef bouillon

1/2 teaspoon ground black pepper

2 teaspoons table salt

2 teaspoons granulated sugar

4 carrots, peeled and sliced in 1" sections

1 cup celery, chopped

4 potatoes, peeled and cut into cubes

4 medium-sized turnips, peeled and quartered

4 1/2 cups water

1 cup partially cooked okra

In a large frying pan, heat up the vegetable oil over medium heat. Brown beef cubes on all sides.

In your crock pot combine the browned beef cubes, bay leaf, Worcestershire sauce, onion, bouillon, pepper, salt, granulated sugar and the vegetables listed in the recipe. Pour in 4 1/2 cups of water and stir so that everything is combined.

Cover and set the dial to high heat and slow cook for 6 hours. Remove lid and stir in flour if it is needed to thicken the soup. Replace lid and turn the dial to low heat and simmer for 1-2 additional hours.

This recipe will make 6 hearty servings.

What You Need
1 ½ cups sliced strawberries 2 ½ cups sliced rhubarb ¾ cup sugar ½ cup water 2 teaspoons lemon juice 2 Tablespoons cornstarch Several drops of cold water 1 cup self rising flour 3 Tablespoons sugar ¼ teaspoon salt ¼ cup butter or margarine ½ cup milk

How to Make It

Place your crockpot on a low setting and then add the strawberries, rhubarb, sugar, ½ cup water, and the lemon juice. Stir to mix and then cover with lid. Allow this mixture to cook on a low setting for about 4 to 5 hours.

Mix several drops of cold water with the 2 tablespoons cornstarch and mix well to create a paste and then add this mixture to the crockpot. Stir well and then increase the temperature to a high setting. Cover with lid and cook.

Using a small mixing bowl you will add the self rising flour and sugar. Stir to combine. Cut in the cold butter or margarine until the mixture is grainy in texture. Gradually add the milk to moisten.

Spoon small amounts of this mixture over the fruit mixture in the crockpot, and then cover with lid and allow it to cook for another hour on a high setting.

After cooking turn of the heat and allow the strawberry rhubarb cobbler to cool before serving. You might consider serving this cobbler by itself or adding a dollop of whipped topping or even serving it with vanilla or strawberry ice cream.

Crock Pot Recipe for Creamy Seafood Chowder

I see myself as a fairly good cook. I can make something without a recipe, create my own recipes, and alter any recipes I have to fit my family's tastes. However, for some reason I never ventured to create a "clam chowder" type recipe. This is truly strange considering every time I go to a restaurant and they offer clam chowder, I order it. I love clam or creamy seafood chowder, and often when I love a recipe I am anxious to try it. But again, for some reason I would shy away from trying this. Perhaps part of the fear came from creating the cream base or cooking with clams. I'm not really sure, but I finally overcame the fear by cheating.

I know that we always teach our children not to cheat, but I have to admit that cheating in cooking is sometimes a wonderful thing. By cheating with this recipe, I've created the seafood chowder I love without a lot of preparation and hassle (and added a few extra twists). Enjoy!

Crockpot

2 cans cream of chicken soup

2 cans cream of potato soup

1 tsp garlic powder

2 tbsp minced onion

1 cup half and half

1 cup milk

¼ tsp black pepper

1 cup celery

2 10 ounce cans of clam, undrained

1 tsp creole seasoning

4 medium potatoes, peeled and chopped

1 16 oz package frozen corn

1 pound pre-cooked tail off shrimp

Spray crock pot with cooking spray. Combine all ingredients except shrimp, mix well. Cover and cook on low 7-8 hours or high 3-4 hours. Add shrimp, cover and cook on high an additional 30-45 minutes until shrimp is tender.

How to Make It

Place a low rack in the bottom of a 5 quart crockpot, such as a vegetable steamer. Add 4 cups of hot water to the crockpot and then set on high heat.

Using a large mixing bowl you will add the brownie mix, water, oil and egg. Beat with an electric mixer until well blended.

Stir in the chocolate chips and the chopped nuts of your choice and combine thoroughly.

Using a 2.5 quart baking dish that you will place inside the 5 quart crockpot, you will grease it with butter and then dust it generously with sugar.

Pour the brownie mixture into the baking dish evenly. Unwrap the caramel candies and then gently press them partially into the top of the brownie mix. Take care not to press the caramels completely down into the brownie mixture.

Using aluminum foil you will wrap the dish twice and then tie the top using string to assemble a foil package that you can easily lower into the crockpot for cooking and then remove the foil package from the crockpot after cooking is completed. Place this foil package onto the low rack that is in the crockpot.

Cover with the lid and then cook the brownies on high heat for about 4 ½ hours.

Remove foil covered dish from the crockpot. Uncover the dessert and allow it to cool for about 30 minutes. You can serve this delicious and mouthwatering turtle pudding dessert while it is still warm as it is. You can also add a dollop of whipped topping before serving or even consider serving it with ice cream.

Barbecue in Your Crockpot - Easy Shredded Barbecue Pork Recipe

How to Make Shredded Barbecue Pork

Start with a four pound pork roast. Place it in your crockpot with a sliced onion and enough water to fill 2/3 of the slow cooker. Season with salt and pepper, Cover and cook pork on low for 8 to 10 hours.

While the pork roast is cooking, prepare this homemade barbecue sauce, a favorite recipe of my grandmother's.

Ingredients for Barbecue Sauce

2 tsp margarine
1 medium onion chopped
1 Tbs Worcheshire sauce
2 Tbs vinegar
4 Tbs brown sugar
4 Tbs lemon juice
1 tsp dry mustard
1 c catsup

Melt margarine or butter over low heat. Add other ingredients and blend.

Once you've made your barbecue sauce, refrigerate until the meat is done.

When your pork roast is finished cooking, take it out of the slow cooker and throw away the water and onions.

Let the pork cook and then, using a fork, pull the meat apart. Once you've shredded all the meat, return it to the crockpot. Add the homemade barbecue sauce and mix thoroughly with the shredded pork.

Cook on medium for 1-3 hours, or until the onions are soft.

Serve the shredded barbecued pork on a large, whole wheat bun with baked beans and a salad for a complete dinner idea.

Chuck Roast With Vegetables Slow Cooker Recipe

This is an easy and delicious recipe for cooking a roast in your crockpot or slow cooker. The roast is tender and nearly falls to pieces. There's plenty of tasty gravy too.

The vegetables are added when there is approximately 2 1/2 to 3 hours cooking time left. If you won't be available to add the vegetables at that time, don't worry. You can use the gravy to serve with mashed potatoes or over cooked noodles. I like to cook my egg noodles just before I plan to remove the roast and vegetables. Once the roast and vegetables have been placed on a platter, I add the noodles to the gravy just to let them absorb extra flavor.

Chuck Roast with Vegetables Slow Cooker Recipe

Ingredients:

3-4 lbs. chuck roast
6 potatoes, quartered
4 carrots, cut into 1" pieces
3 stalks celery, cut into 1 1/2" pieces
2 large onions, quartered
1 can cream of mushroom soup or cream of celery soup
1/2 soup can water
1 teaspoon black pepper
1/2 teaspoon salt
Flour or cornstarch for thickening

Preparation:

Mix soup, water, pepper and salt together in the slow cooker.

In a large skillet, sear the roast on each side using a small amount of oil before adding to slow cooker, or place directly in soup mixture in slow cooker. Make sure both sides of roast have been coated with soup mixture. Set slow cooker to low and let cook for 4 hours.

After 4 hours, add potatoes, carrots, celery and onions to the cooker. Lift roast so vegetables are submerged in soup mixture. Continue cooking on low for another 2 1/2 to 3 hours, or until roast is tender and vegetables are done.

Remove roast and vegetables to a platter. Add small amounts of flour or cornstarch to soup mixture to thicken slightly. Serve gravy over roast and vegetables, or over mashed potatoes or cooked egg noodles.

Overall cooking time is 6 1/2 to 7 hours on low setting.
