Healthy Meals Without the Fuss

Most of us cannot afford to have personal chefs who do nothing else but plan and prepare our meals. Most of the time, we have to think of meals in addition to the million and one other things we have to do each day. And if you are a mom, you probably need to take all that and multiply it by three.

No Need To Do It Alone

Sometimes it can be tempting to just call the nearest pizza place and order in. While this is good for a movie night once a month, it is unhealthy to let this become a habit. If you are a working mom, turn meal planning into something interactive and fun. This way, you are actually hitting two birds with one stone. You get help with the menu and you do away with the frustration of scrunched up faces when you serve something your family doesn't like.

Set a day of the week for meal planning and grocery shopping. Younger kids would probably find being allowed to say what they want to eat on certain days as a treat. Planning ahead will not only allow you to save by buying only what you need, it will also allow you to organize your meal preparations, and you get things done in half the time.

Prepare, Prepare, Prepare

Getting things done ahead will save you a lot of time. Check your work schedule and identify which days you have more free time. Use these days to prepare for multiple meals. You can cook some meals through and just store while others can be half-done then finished on the day the meal is to be had.

Still, you can use this time to do all the chopping and the slicing you need for the other dishes you have planned for the week. Do you need chopped carrots for a stew and grated ones for carrot soup? Prepare them all at one time, storing the chopped ones in the refrigerator for later. If you take this route, make sure that you have plastic containers in a variety of sizes on hand to use for storing your food or prepared ingredients.

Make Technology Work for You

On days when you simply do not have the time or the energy to get it all done, make your kitchen equipment work for you. Your best bet would be to have a Crock Pot on hand. When used correctly, a Crock Pot can be a safe and convenient way to prepare healthy, wholesome, home-cooked meals that will stay warm and be ready for you and your family when it is time to eat.

Since Crock Pots use slow cooking technology at lower temperatures, it will allow you to simply prepare the food in the morning and leave it in the Crock Pot, ready for you by dinner time. Once the cooking is done, it will automatically reset itself to just keep your food warm until you are ready to eat.

There are recipes for chicken, beef and vegetable dishes and even desserts that can be cooked in a Crock Pot. You can incorporate 'Crock Pot' days in your meal planning and let your family choose their 'Crock Pot' meal for the day. Eating healthy never sounded so easy!

Vital Vegetables: Why Eating Your Greens is an Important Part of a Healthy Meal Plan

We've all heard our mothers or grandmothers tell us to eat our vegetables, or perhaps we have even scolded our own children for snubbing the broccoli on their dinner plates, but the truth is that getting enough "greens" is vital for a healthy meal plan in order to lose weight. In fact, getting enough veggies is one of the key components in an overall healthy lifestyle that will lead to optimal weight, longevity, and a higher quality of life.
So how much is enough? If you are looking to get enough servings of vegetables a day, then you should be aiming for two to three servings of vegetables a day. In an era of convenience, it can seem daunting to add another side to an already prepared meal plan, but steaming some broccoli or spinach, or adding some kale or squash to any meal is not labor intensive and so great for your digestive system and your waistline.
Not all Vegetables are Created Equal: Hidden Sugars that Can Derail a Healthy Eating Plan
I know, you would never think that sugar would be in vegetables, but actually there are certain veggies that are high on the Glycemic Index, which means they are loaded with starch, simple sugar, and not high in fiber. These are the types of "veggies" that can spike your blood sugar.
So since you have your choice when it comes to choosing vegetables, stay away from the most common ones like carrots or peas and corn (which aren't actually vegetables at all, but belong to the legume and grain family) and try your hand at some alternatives.
Here is a quick list:

Healthy Crockpot Roast

This recipe for cooking roast in a crockpot is easy, simple and healthy. Leave the skins on the vegetables to retain the vitamins. Research indicates that in most vegetables the nutrients are just right under the skin. There are no mixes or packets of gravy in this recipe, which contain toxic MSG and excess salt. This recipe does call for a can of mushroom soup, but you can get a low-salt variety or make your own to pour over the roast.

Here's what you need:

Crockpot

3-5 lb roast
5-6 carrots, cut in chunks
4-5 potatoes, cut in chunks
1 large onion, sliced
1 package mushrooms, sliced
1 can mushroom soup
Worcestershire sauce
1 cup water

In the bottom of the crockpot, layer the cut up carrots, potatoes, onion and half of the mushrooms. Place the roast over the top of the vegetables. Sprinkle the Worcestershire sauce all over the roast.

Mix the can of mushroom soup with 1 cup of water and pour over the roast. Top with remaining mushrooms. Set the crockpot on low for about 8 hours, or until the meat falls apart. Serve with brown rice or quinoa.

If you have leftovers the next day, put it in a pot and add the following ingredients to make a good stew or soup: tomatoes, corn, celery, pinto beans, greens, seaweed, lima beans, peeled sweet potato chunks, parsnips or any of your other favorite vegetables. The seaweed and greens are delicious in a soup and they add loads of magnesium and natural iodine into your diet.

Eat Healthy With Crockpot Chicken Recipes

There are a number of delicious Crockpot chicken recipes that you can choose from. These dishes are flavorful and can give standard beef recipes a run for their money. The difference is they are created with a delicious cut of poultry and designed to keep the flavors in each dish satisfying and bursting with flavors that will leave even the pickiest eater looking for seconds of the dishes you create. This of course also goes beyond stews and chilies that are often cooked in a slow cooker. Instead, these are meals that might even be found in the oven.

In fact, one the more common Crockpot chicken recipes you will find is barbeque. Since the best BBQ you find is slow cooked to begin with, you can imagine how the meat will be falling from the bone and creating a delicious dish that will have your entire family enchanted by the smell it is giving off and when the final dish is created, there won't be anyone disappointed sitting around the dinner table as they discuss their day over this warm meal.

Crockpot

What you may want to consider is that you can also take this recipe and use your favorite sauces if you already have one you really like or you can create your own. The choice is up to you, of course, you will find a homemade option below that might leave your mouth watering, as it tastes great as well. This recipe will work with other cuts of meats as well, so keep an open mind to the different options that you have and decide on the one that ends up satisfying you.

It is important that you do keep moisture in this mixture for as long as possible as it can burn easily if the liquid gets too low. During the final hour, you can certainly remove the lid and turn up the heat if you choose to create a thicker sauce for your family to enjoy with you. This will, of course, be based on your overall preference. With all this in mind, you can then move forward and create one of the most delicious Crockpot chicken recipes around.

Moist Barbeque Crockpot Chicken

What You Will Need

2 pounds chicken pieces 1 cup brown sugar 1 diced onion 1 cup tomato sauce 1 cup sugar

Take your chicken pieces and wash and dry them. Chicken pieces with bones work better in this recipe, so keep that in mind. Combine all the ingredients inside the crock pot and then add a little water to ensure all the pieces are covered. Save Time and Eat Healthy With the Crockpot

The crockpot can be the perfect tool to use for saving time in the kitchen while still eating healthy, delicious meals. Simply add the ingredients of your choice, turn on the crockpot, leave the house for the whole day if necessary, and then return to a home filled with the most delectable aromas.

Most everyone enjoys a tasty chicken dinner and there are so many different ways to prepare this type of meat, and especially when using crockpot recipes.

Salsa crockpot chicken is one incredibly easy recipe to make and uses only two inexpensive ingredients; the chicken and the salsa. Use three pounds of boneless, skinless chicken thighs and a 16-ounce jar of the salsa of your choice. Combine both together in your crockpot and cook on the low setting for six to eight hours or until the chicken is tender and cooked thoroughly.

Alternatively, if you want to use boneless chicken breasts instead of thighs, adjust the cooking time to five to six hours on the low setting or until the meat is cooked completely.

If you want a thicker salsa chicken dish, take the lid off the crockpot and turn the setting to high for the last half hour or so. Adding in a few tablespoons of cornstarch and a quarter cup of water to the mixture will also help to thicken the dish.

For a low fat and low sodium dish, try combining chicken, apples, chicken broth, and seasonings in the crockpot for a delicious creation.

How to Make Chicken and Apples in the Crockpot

What You Need

6 ounce can frozen apple juice concentrate, thawed
2 teaspoons curry powder
1/8 teaspoon ground nutmeg
2 tablespoons butter
1 onion, finely chopped
2 garlic cloves, minced
Salt and pepper to taste
6 boneless, skinless chicken breasts
3 Granny Smith apples, peeled, cored, and thickly sliced
1/3 cup chicken broth
2 tablespoons cornstarch

How to Make It

Combine the thawed apple juice, the curry powder, and the nutmeg in a small bowl.

In a small saucepan, melt the butter, onions, and garlic and heat until the onions are soft and nearly translucent. Put the onion mixture in the bottom of the crockpot.

Add each piece of chicken to the juice mixture, coating each piece thoroughly before adding to the crockpot. Next, add a few pinches of salt and pepper to taste.

Put your crockpot on the low setting and cook the chicken for five to six hours, or until almost cooked through.

Add the apples and cook all ingredients on low for another 45 minutes to an hour or until the chicken is thoroughly cooked and the apples are nice and tender.

In another small bowl, mix the chicken broth and cornstarch together and stir the mixture into the ingredients in the crockpot. Cover the crockpot and cook on the high setting until the sauce is thicker, usually about 10 to 15 minutes. You will have to stir the mixture occasionally so do not worry about removing the crockpot's lid.

The very best crockpot recipes are simple to make and include easy to find ingredients that cook well together complementing each other's unique flavors. Crockpot recipes that include different cuts of chicken are typically inexpensive and can be tailored to your family's exact taste.

Healthy Vegetarian Crockpot Lasagna

Lasagna is many people's favorite Italian recipe. There are various kinds of lasagna, so whether you enjoy a classic beef lasagna, a salmon, and ricotta one or even a vegetarian lasagna, there is a recipe for you.

The main ingredient in this dish is noodles, which are several inches in diameter and rectangular; you layer these with your chosen filling in between them. This recipe is served hot, cut into squares or rectangles, and you might like to serve some parmesan cheese on the side, to sprinkle over the top.

Not only can you choose from lots of different varieties of this dish but you can also choose your preferred cooking method. This Italian recipe does not have to be baked. You can make it in your slow cooker if you want to and it comes out really nice.

Crockpot lasagna is just as good as the oven-baked kind, perhaps even better because the flavors have plenty of time to blend perfectly. The following recipe, which serves six people, is vegan, vegetarian and low calorie as well as low fat since tofu is used instead of cheese.

What You Need:

1 package silken tofu
2 tablespoons lemon juice
1 box lasagna noodles
4 cups tomato sauce
20 oz frozen spinach
1/4 cup soy milk
3 tablespoons chopped fresh basil
1 package firm tofu
1 teaspoon salt
1/2 teaspoon garlic powder

How To Make It:

Thaw the spinach and pat it dry. Add both types of tofu to a blender or food processor, as well as the salt, basil, garlic powder, lemon juice and soy milk and process the mixture until it is smooth. Stir in the spinach.

Add a cup of tomato sauce to the slow cooker, and then add a third of the noodles and then a third of the tofu mixture. Repeat these layers a couple of times, finishing with tomato sauce. Cook for six to eight hours on low or until the noodles are soft.

What To Serve With Lasagna

Technically this is a meal in itself and in Italy, where this dish is from, it is served alone or perhaps with a basic green salad. A couple of types of lettuce leaves and perhaps some sliced tomato or cherry tomatoes is nice, then you can have a vinaigrette dressing on top or maybe some lemon juice and extra virgin olive oil. Keep the salad simple so the main focus is on the tasty entree itself.

In the United States, the United Kingdom and some other countries, this meal is commonly served with garlic bread or fries on the side, which makes it really filling but if you do not want to eat that many carbohydrates forget the fries and bread and opt for the salad instead. The pasta used in this recipe makes it satisfying enough on its own and the vegetables and herbs give plenty of nutrition.

Lasagna has to be one of the best crockpot recipes because the pasta comes out tender and the filling ingredients blend well. The overall flavor really is amazing. There are also lots of classic dishes you can make, such as crockpot beef stew.

Healthy Crock Pot Recipes With Easy Preparation

The other day I was looking through my grocer's weekly sale flyer and I found myself thinking, "The easier the preparation, the worse it is for you." Think about fast food. No preparation, but completely unhealthy.

I continued my thoughts through meal preparations - frozen TV dinners, frozen pizza, frozen "meal in a bag", boxed dinners, the list goes on and on. We are so concerned with doing things quickly we are hindering our health by jamming our bodies full of preservatives and things with names too long to state and too difficult to pronounce.

I pictured my grocery store, which wasn't difficult since I'm usually there at least twice a week. I love my grocer's produce section, seeing all the fresh fruits and vegetables; I usually spend most of my time there. However, thinking of all the isles that follow, my thoughts were once again confirmed. Packaged food after packaged food - even in the organic isle! I know that cooking with natural ingredients is the best way to go, but how are we to do it if we're bombarded with packaged, boxed, preserved food?

Thinking about my own cooking, I know that I use more "pre-packaged" items than I probably should. For convenience sake, I often used frozen vegetables and canned tomatoes. I feed my kids boxed macaroni and cheese. However, they don't eat frozen dinners, ready-made frozen chicken, and we never eat at fast food restaurants.

These thoughts drove me to research my own recipes; were there a handful of crock pot recipes with extremely easy preparation that are healthy? I did find a bunch, and although the recipes with canned soups tend to be higher in sodium, I believe I found a nice balance between easy preparation and health. Plus, every recipe on the list has 10 ingredients or less. You can view these recipes at http://www.natalies-recipes.com/website/easy-healthy-recipes.aspx.

When it comes right down to it, we want to be healthy and feed our families healthy meals. However, our busy lives often take over and prevent us from doing so. I hope that I have offered you some options to avoid the frozen dinners and fast food restaurants and create healthy meals with ease.

Make a Simply Healthy Stew in the Crockpot

With America in an obesity epidemic, many people are looking at healthier dishes. Another thing to consider is how digestible foods are, how low in fat they are, and what they provide nutritionally. Rabbit stew is one of those recipes that has fallen by the wayside, only to be brought back because it is simple and nutritious. This handy recipe for rabbit stew is simple, full of flavor, and the stew is a perfect meal anytime. Toss in a few potatoes and carrots and you can serve it all on its own without any side dishes as a one pot meal.

Rabbit actually provides the lowest cholesterol levels of any meat on the market. It is also lower in fat than chicken, beef, pork, or turkey. At the same time, it provides more protein per mouthful than any of the others. According to the US Department of Agriculture, rabbit is the most nutritious meat known to humankind. It is especially well suited to those on special diets because it is very easily digested. Rabbit has only 795 calories per pound; much lower than chicken's 810, turkey's 1190, beef's 1440 and pork's 2050 calories. Domestic rabbit is also 100% white meat. It has a finer grain than chicken, though you can substitute rabbit in most chicken recipes. Some grocery stores carry rabbit; otherwise, you can get it from specialty markets or direct from the farmer.

Rabbits have been used for food since man first learned to hunt. In ancient Rome, they were kept inside walled gardens so they would be available for meals whenever they were needed. They lend themselves well to moist cooking methods like the crockpot because they are so low in fat. They tend to dry out too much when roasted. The crockpot is perfect as it keeps the moisture all around the meat. A stew brings out the most nutrition through the long, slow cooking process. It is a nourishing comfort food that goes well with crusty bread, potatoes, or rice. Cornbread makes a nice side for stew, also. This simple recipe takes minutes to put together; all you have to do is turn on the crockpot and come home to dinner. You could just eat it as is with some bread to sop up the sauce and a fresh salad.
