Crockpot Recipes For Your Low-Glycemic Diet - Hearty, healthy Meals

About the second week into a low-glycemic diet, you may find yourself finding for something other than low-fat cheese, a handful of nuts, and celery sticks, grilled chicken breasts, and steamed broccoli. You may start missing your crockpot and all those wonderful, hearty meals you love to come home to; not to mention the savory aromas of a slow cooked meal simmering away all day.

But this dilemma has a solution. You still can enjoy many yummy meals cooked in your crockpot, even if you are on a low glycemic diet. No need to break this year's resolution. Here are a few easy recipes that I've tried out on my family with great results, and with my diet intact!

Crockpot

Asian Cuisine Inspired Beef and Snow Peas

You'll need:  2 1/2 pounds round steak;  1 cup soy sauce;  2 teaspoons freshly grated ginger;  2 cloves garlic, grated or minced;  2 tablespoons cooking oil;  2 cups snow peas

Cut a round steak into 4 equal pieces. Place the steak in your crockpot. In a detach bowl, whisk together next 4 ingredients and pour this composition over the meat. Cover the crockpot and cook on Low for about 6 hours or until the meat is nice and tender. In last 15 minutes of cooking, mix in the snow peas. Serve over cooked rice.

Split Pea Soup with Ham

You'll need:  1 pound bag split peas;  2 pounds cooked ham, diced;  3 cloves garlic, minced or grated;  1 medium yellow onion, diced;  3 ribs celery, diced;  1/8 teaspoon black pepper;  7 cups fresh cold water;  5 chicken bouillon cubes

Put all ingredients into your crockpot. Turn your crockpot on Low and cook for 6 to 7 hours. Lift the lid briefly through the cooking time some times and give a quick stir so the peas don't just stay on the lowest of the crockpot.

Triple Bean and Beef Chili

You'll need:  2 pounds lean ground beef;  2 medium yellow onions, diced;  1 green bell pepper, diced;  2 ribs celery, diced;  3 cloves garlic, minced;  2 (16 ounce) cans diced tomatoes;  2 (16 ounce) cans garbanzo beans;  1 (16 ounce) can butter beans;  1 (16 ounce) can black beans;  1 (15 ounce) can chicken broth;  3 teaspoons chili powder;  1/2 teaspoon ground cumin;  1 teaspoon black pepper;  1 teaspoon salt

Brown ground beef, and drain any excess fat. Put all the ingredients into your crockpot and stir to combine. Cover the crockpot and let cook on Low for about 6 hours. I serve this in big bowls with a dollop of low fat yogurt and a sprinkle of chives. You can decoration with whatever your diet allows!

When you are cooking dinner in your crockpot, you are most likely cooking for the whole family, right? Will the whole family like these "diet" crockpot meals? The fact is, my family doesn't even know these meals are part of a diet! No one is disappointed and my diet stays on track.

These crockpot recipes may be just the start you need to get on that diet and stick to it. Rich And Hearty Crockpot Beef Stew

There are a number of different ways that you can make a Crockpot beef stew and there is nothing wrong with any route you choose to go with it. You can go with a traditional meat and potatoes approach or go with a cultural explosion focusing on the foods from another country. No matter which direction you take it in, there is little doubt that you will end up with a tasty treat that leaves the entire family feeling both warm and full. There are some very basic ideas you need to keep in mind to help you create this tasty dish.

The meat in your Crockpot beef stew should be fatty for the best flavor. It is generally a good idea to focus on thicker cuts and meat as well as tougher ones since they will take longer to breakdown and then you end up with a tender and hearty meal. Using lean meat does not typically give your dish a lot of flavor, which is part of the reason for making it.

Crockpot

Another thing to take into consideration is that it is possible to over spice your dish as well. Many people will make the mistake of spicing too much to taste when they are first starting the dish. You need to understand that as the mixture cooks, the flavors will continue to build up in it. What might seem like a small amount will increase in flavor over the course of 8 hours, so be sure you do not go heavy on the spices. It is possible to add in additional flavor during the last hour if you feel there is not enough flavor at that time.

Your vegetables should generally be placed into your stew during the last hour of cooking. What often happens is that these are placed into the mixture in the morning and then forgotten. This will typically turn your vegetables into a mushy mess. To help them keep their natural flavor and texture, you might consider placing them in during the last hour of cooking your Crockpot beef stew.

Crockpot Cooking Ideas For Cold Weather - Plan A Week Of Hearty Meals To Stay Cozy And Warm

If getting from your car to your door seems like a march through the tundra during cold winter days, a trip to the grocery store may be excruciating to think about. You may be entertaining thoughts of staying in your nice warm car and driving through a fast food place for dinner instead. But, that sort of impulse can really defeat a grocery budget, even though the nice warm car is tempting.

How can you feed your family a nice hot meal without suffering those icy cold trips? By planning one shopping day with one goal in mind - creating enough crockpot meals for a week. Let's see how this can be accomplished.

Crockpot

Start by gathering together your favorite crockpot recipes, picking a variety of dishes so your family doesn't get tired of the same old food. Make a grocery list that includes everything you need for the week based on the recipes you've chosen. Check your pantry for the standard supplies, too. Now do all your shopping for the week.

When you get home, carefully wrap and freeze the meat for the meals later in the week, chop up all your veggies for each meal and seal in containers. You are well on your way to a week of cozy meals without having to venture out in the cold. Here we go.

Sunday - Begin the week with a wonderfully aromatic Rotisserie Chicken. Your crockpot will produce a nice, crispy and juicy chicken just like a deli rotisserie. Make it a Sunday dinner by including your garlic mashed potatoes and steamed broccoli.

Monday - A Crockpot French Dip Roast is an easy way to serve a hot and satisfying sandwich for dinner. It may be just a sandwich, but it sure seems more like a meal when you use a good, hearty hard roll and add mozzarella cheese on top.

Tuesday - Time to spice things up a bit with a hearty White Chicken Chili. You control the spice, so this meal will satisfy everyone's tastes. Serve with a nice crusty bread and no one walks away hungry. You may have enough leftover chicken from Sunday for this dish.

Wednesday - This is your night to go meatless with a fabulously rich Minestrone Soup. You could replace the beef broth with chicken broth if you choose, but, as is, this is a frugal meal that will please even your staunchest meat eater.

Thursday - Time to surprise your family with Homemade Calico Beans for dinner. This dish is wonderfully satisfying and relatively inexpensive to make using dried cooked beans and ground beef. Save the leftovers for next week's lunches.

Friday - It's Smorgasbord time! One day of the week is always busier than the rest. You'll be glad to have a refrigerator full of leftovers for that day. You can use your creative nature to re-invent some of the leftovers into new dishes or you can simply arrange your leftovers on the counter with plates, bowls, and silverware, and have your family dig in.

Saturday - The races are on TV and we're not budging. So, when it comes time to eat, putting a platter of Pulled Pork Sandwiches on the table and having everyone help themselves, is a great way to enjoy the races and fill our tummies without missing a moment of the action.

Stocking up and preparing for a week's worth of meals ensures that you have a house full of food for your family. But, equally as important, when your family finally gets home in out of the cold, they will walk into a house fragrant with the savory aromas of a delicious dinner ready to enjoy. Give this plan a try for one week and I guarantee you won't miss those stops at the drive-thru for a moment!

Making Hearty Chili in the Crockpot

If you are looking for new and simple ideas for a tasty meal, or you simply do not have a lot of time to spend preparing dinner, cooking in the crockpot can be the ideal solution.

There are many delicious recipes using a crockpot including countless varieties of chili, a classic dish that can be made in numerous, interesting ways. Also, other recipes for stovetop chili can easily be adapted to work with crockpots.

When it comes to making chili inside of the crockpot, very little preparation is needed and most of the ingredients are usually added in together all at once. Meats such as beef, chicken, and turkey can be browned quickly in a saucepan and then drained of all the grease before adding to the crockpot.

For a complete meal, cook your chili in the crockpot and then serve over rice, potatoes, or along with a salad and rolls or bread topped with butter and garlic. Or, if you are having a party or having some friends over for a casual get together, make a few different types of chili, in different crockpots, of course.

Have fun with your chili recipes and remember that the traditional, red tomato sauce does not always have to be used to create a delicious meal. With some boneless chicken and chicken bouillon or broth, your favorite white beans, seasonings, and extras such as cheese, rice, and vegetables you can make a hearty chicken chili right in the crockpot.

Crockpot White Chicken Chili Recipe

What You Need

2 cups chicken, cooked and diced or shredded
1/4 cup onion, finely chopped
2 cloves garlic, minced
1 can or 1-1/2 cups chicken broth
1 cup frozen corn
2 cans cannellini beans (white kidney beans), drained
1/2 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon lemon juice
1/2 teaspoon Italian seasoning
1/4 teaspoon ground cumin
1 cup shredded sharp cheddar cheese

How to Make It

Add all of the ingredients to the crockpot and cook on the low setting for 6 to 8 hours.

Serve alone, with your favorite tortilla chips, over white rice, or mashed potatoes. Top each serving with some shredded cheddar cheese and add condiments such as sour cream and salsa.

Other cheeses you may want to consider for your white chili are Monterey, spicy pepper jack, or Swiss.

This white chili recipe, like many others meant for the crockpot, is quite versatile. You can substitute ingredients you do not really care for while adding your own favorites to the list. For instance, you may prefer other types of beans instead of the cannellini variety such as great northern white beans, or you may want to add some extra flavor using green chili peppers, jalapenos, or different seasonings.

Even vegetarians will enjoy this white chili recipe by substituting the chicken and chicken broth with another protein such as soy or tofu or perhaps extra vegetables. On the other hand, simply omit the meat products as the beans offer both texture and protein.

When looking for the best crockpot recipes choose those that ask for simple items or those that you know your family enjoys. But, don't be afraid to experiment with different ingredients as recipes for crockpot white chicken chili are about as versatile as the crockpot itself.
